PECAN AND WILD BOAR BACON WAFFLES WITH SYRUP

Pecan And Wild Boar Bacon Waffles With Syrup image

For Mark Miller, the former owner of the Coyote Cafe in Santa Fe, the ranch breakfast ''was the central meal of the working day. People went out before dawn, worked a few hours, and came together around a huge breakfast table.'' These waffles, which he served at home to weekend guests, are a Southwestern rendition of traditional American fare.

Time 20m

Yield Four waffles

Number Of Ingredients 15

1 cup water
12 ounces piloncillo sugar, or dark brown sugar
3/4 cup toasted whole pecans
1/3 cup sour mash Bourbon whisky
1 tablespoon vanilla extract
1/2 cup wild boar bacon (regular bacon may be substituted)
4 ounces butter (1 stick)
1 cup milk
3 egg yolks
3/4 cup toasted pecans
1 cup cornmeal
3/4 cup all purpose flour
1 teaspoon salt
1 teaspoon baking powder
4 egg white

Steps:

  • To make the syrup, bring the sugar and water to a boil in a saucepan and stir until all the sugar is dissolved. Continue to boil, without stirring, until the syrup thickens slightly and its surface becomes shiny. Pour the syrup into a stainless steel bowl and stir in the pecans. Carefully add the whisky and the vanilla. Keep warm to be served over the waffles.
  • Chop the bacon into small pieces and cook in a frying pan with the butter. Beat the egg yolks with the milk and add the cooked bacon and butter from the frying pan. Chop the pecans to a medium-coarse consistency. Mix together with the cornmeal, flour, salt and baking powder and stir into the egg yolk mixture. Beat the egg whites until they form soft peaks, then gradually fold them into the batter. Cook in a hot waffle iron until brown, but still moist inside.

BACON AND POTATO WAFFLES

Bacon and Potato Waffles image

These fully loaded waffles are studded with bacon bits and potatoes. Cooking the hash browns in a waffle iron makes them extra light and crispy.

Provided by Food Network

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 13

8 ounces thick-sliced bacon
2 large eggs
1 3/4 cups milk
1 1/2 sticks (12 tablespoons) unsalted butter, melted and cooled, plus more butter for serving
2 cups all-purpose flour (see Cook's Note)
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon smoked paprika
1/2 teaspoon baking soda
1 teaspoon kosher salt
20 ounces refrigerated shredded hash browns
Vegetable oil, for brushing the waffle iron
Maple syrup, for serving

Steps:

  • Preheat the oven to 250 degrees F and place a rimmed baking sheet in the oven to keep the cooked waffles warm.
  • Preheat a square waffle iron. Cook the bacon in a large skillet over medium heat until crisp, about 5 minutes. Drain on paper towels, crumble and reserve.
  • Whisk together the eggs, milk and melted butter in a large bowl. In a second bowl, sift together the flour, sugar, baking powder, smoked paprika, baking soda and 1/2 teaspoon salt. Stir the dry ingredients into the wet ingredients, taking care not to overmix (it's okay if there are some lumps). Stir in the crumbled bacon.
  • Put the hash browns in a large bowl and sprinkle with 1/2 teaspoon salt. Brush the preheated waffle iron with vegetable oil. Sprinkle a quarter of the hash brown mixture evenly across the surface of the waffle iron, making sure it reaches the edges. Close the waffle iron and cook until potatoes are crisp, 3 to 4 minutes.
  • Spread one quarter of the batter over the potatoes, close and cook until the waffle is golden and crisp, 3 to 4 minutes more. Remove the waffle to the preheated sheet pan in the oven to keep warm. Repeat with the remaining potatoes and batter. Serve the waffles with butter and maple syrup.

CHICKEN AND BACON WAFFLES

Chicken and Bacon Waffles image

Provided by Food Network Kitchen

Time 1h

Yield 6 servings

Number Of Ingredients 17

16 slices bacon
4 cups all-purpose flour
2 tablespoons baking powder
1 tablespoon sugar
Kosher salt
3 large eggs plus 1 egg white
3 cups buttermilk, plus more if needed
1 stick unsalted butter, melted and cooled slightly
Cooking spray
3 cups peanut or vegetable oil, for frying
2 teaspoons chopped fresh thyme
1 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
2 pounds skinless, boneless chicken breasts, cut into 1 1/2-inch-wide strips
Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
Maple syrup, for serving

Steps:

  • Make the waffle batter: Dice 10 bacon slices; cook in a large cast-iron skillet over medium heat, stirring occasionally, until golden brown and crisp, about 8 minutes. Drain on paper towels. Add the remaining 6 bacon slices to the skillet and cook, turning occasionally, until golden brown and crisp, 9 to 11 minutes. Remove to the paper towels; reserve the drippings in the skillet.
  • Combine the flour, baking powder, sugar and 1/2 teaspoon salt in a large bowl. Whisk the whole eggs, buttermilk and melted butter in a separate bowl, then whisk into the flour mixture until smooth. Stir in the cooked diced bacon. Transfer 2 cups of the batter to a separate large bowl for the chicken; reserve the remaining batter for the waffles.
  • Make the chicken: Preheat the oven to 325 degrees F. Add the peanut oil to the skillet with the reserved bacon drippings; heat over medium-high heat until a deep-fry thermometer registers 350 degrees F. Add the thyme, paprika and cayenne to the 2 cups waffle batter; add up to 2 tablespoons buttermilk if the batter is too thick. Season the chicken with salt and black pepper, then toss with the flour. Add the chicken to the batter and set aside until ready to fry.
  • Set a rack on a baking sheet. Working in batches, remove the chicken from the batter, letting the excess drip off, then fry until golden brown, 2 minutes per side; transfer to the rack and season with salt. Transfer to the oven and bake until no longer pink in the middle, about 8 minutes.
  • Meanwhile, cook the waffles: Spray a waffle iron with cooking spray and preheat. Whisk the egg white in a bowl until soft peaks form; fold into the reserved waffle batter. Ladle 1/2 to 1 cup batter into the waffle iron for each waffle and cook according to the manufacturer's instructions. Serve with the fried chicken, bacon slices and maple syrup.

Provided by Emeril Lagasse

Categories     main-dish

Time 25m

Yield 16 (4-inch) Belgian waffles, 8 servings

Number Of Ingredients 13

2 cups all-purpose flour
1/2 cup ground lightly toasted pecans
1 1/2 teaspoons baking powder
1/4 teaspoon salt
4 eggs, separated
1/4 cup sugar
1 teaspoon vanilla extract
1/2 cup melted butter plus 1/2 cup cold butter, cut into pieces
2 1/2 cups milk
Vegetable oil or nonstick cooking spray, for coating the waffle iron
1 cup pecan pieces
1/2 cup cane syrup
4 medium bananas, peeled and cut into 1/2-inch slices

Steps:

  • Preheat the waffle iron according to manufacturer's instructions and preheat the oven to 200 degrees F.
  • Combine the flour, pecans, baking powder and salt in a medium mixing bowl and whisk to combine. In another bowl, combine the egg yolks and sugar and whisk until pale yellow. Add the vanilla extract, 1/2 cup melted butter, and milk, and whisk to blend. Combine the egg and milk mixture with the flour mixture and whisk until just combined. Do not overmix.
  • In the bowl of an electric mixer, beat the egg whites until soft peaks form, about 1 minute. Using a rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix.
  • Using a pastry brush, lightly coat the waffle iron with some of the vegetable oil. Pour enough batter into the iron to just barely cover the waffle grid. Close the waffle iron and cook according to manufacturer's instructions, or until golden brown, 4 to 6 minutes. Transfer to a baking sheet and keep warm in the oven while you prepare the remaining waffles.
  • In a saute pan, add the remaining 1/2 cup of butter and the pecan pieces. Cook, stirring occasionally, until pecan pieces are light golden and fragrant, 2 to 3 minutes. Add the banana slices and cook until light golden and soft, 2 to 3 minutes. Add the syrup and bring to a simmer. Serve with the warm waffles.
