BASIC BUTTERED PEAS



Basic Buttered Peas image

Number Of Ingredients 6

1 quart water, for boiling
1 pound peas
1 tablespoon salt (for boiling peas)
1 tablespoon butter
Salt and freshly ground black pepper
Optional additions: pearl onions and lettuce, freshly chopped tarragon, chives, mint, parsley, soaked and chopped dried wild mushrooms or chopped prosciutto.

Steps:

  • Shell the peas if using fresh peas, if using frozen defrost fully before cooking. Bring the water to a rapid boil. Stir in the salt and add the peas. Boil the peas for 1 minute or until they are cooked. Drain the peas when done and add peas to a wide skillet over high heat. Toss in pan until fully dry. Add butter and salt and pepper to taste. Add any optional additions if you choose, and combine.

5 large garlic cloves, thinly sliced
1 pound frozen peas, thawed
1/4 cup canned vegetable broth
1/3 cup chopped fresh parsley

Steps:

  • Melt butter in heavy large saucepan over medium-low heat. Add garlic and sauté until very fragrant, about 3 minutes. Add peas and broth. Increase heat to medium-high and cook until peas are tender, about 4 minutes. Mix in parsley. Season to taste with salt and pepper and serve.

  • Cook 2 sliced garlic cloves in 3 tablespoons vegetable oil in a skillet over medium heat until golden, 5 minutes. Remove from the heat and add 1/4 teaspoon red pepper flakes. Cook 1 pound thawed frozen peas in a separate skillet, tossing, until heated through, 3 minutes. Stir in the garlic oil and top with chopped basil and flaky sea salt.

4 -5 garlic cloves, peeled and thinly sliced
1 lb frozen green pea, thawed
1/4 cup vegetable broth, unsalted (homemade is best)
1/3 cup fresh curly-leaf parsley, chopped
salt, to taste
black pepper, to taste

Steps:

  • Melt the butter in a pan over medium-low heat and saute the garlic until highly fragrant, about 3 minutes.
  • Add the green peas and vegetable broth. Increase the heat to medium-high and cook the mixture until the peas are tender but not shriveled, about 4 minutes total.
  • Stir in the parsley. Season with salt and pepper to taste.

3 tablespoons butter or 3 tablespoons margarine
1/4 cup chopped onion
1 (10 ounce) package frozen peas (do not thaw)
1 tablespoon fresh parsley, chopped
1/2 teaspoon salt
1 -1 1/2 cup lettuce, chopped
3 tablespoons chicken stock

Steps:

  • Melt butter in small saucepan over low heat.
  • Increase heat to medium-high and add onion, cooking 10 minutes or until tender.
  • Add peas, parsley and salt. Reduce heat to medium-low, cover pan and cook, stirring frequently for 5 minutes.
  • Stir in lettuce and chicken stock.
  • Reduce heat to low and simmer until heated (2-5 minutes).

3 tablespoons butter, softened
3 tablespoons whipped butter, softened
1 teaspoon orange rind, grated
4 cups English peas, fresh (see intro for frozen)

Steps:

  • Combine the first 4 ingredients in a small bowl, stirring until blended. Set aside.
  • Arrange the fresh peas in a vegetable steamer over boiling water. Cover and steam for 10 to 15 minutes or until the peas are tender. (If using frozen peas, follow package directions!). Remove the peas from the steamer and spread the butter over the peas. Let it melt evenly and stir. Serve immediately.
