1 (16 ounce) package spaghetti
1 tablespoon olive oil
¼ pound turkey bacon, cut into small pieces
½ large onion, chopped
1 clove garlic, minced
2 (15 ounce) cans tomato sauce
1 ½ teaspoons chopped fresh parsley
¼ teaspoon dried basil
1 teaspoon garlic powder
½ teaspoon pepper
1 (15 ounce) can peas, drained
¼ cup grated Romano cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large pot over medium heat. Saute bacon, onion and garlic until lightly browned. Stir in tomato sauce. Season with parsley, basil, garlic powder and pepper. Bring to a boil, reduce heat, and simmer 20 to 30 minutes, stirring occasionally. Stir in peas. Toss with pasta until evenly coated. Sprinkle top with Romano.

There's nothing like a cold pasta shell that's coated in a luscious, silky blanket of bliss. But instead of full-on mayo, I swapped in half Greek yogurt for some subtle tang. It is so good. Perfect for a neighborhood potluck. Divine for quick lunches throughout the week.

2 cups medium pasta shells
6 strips bacon, halved
1 carrot, finely chopped
1 cup frozen peas, thawed
1/2 red onion, finely diced (about 1/2 cup)
1/4 cup mayonnaise
1/4 cup Greek yogurt
1 lemon, zested and juiced
Coarse salt
1/4 cup chopped flat-leaf parsley, for garnish, optional

Steps:

  • Boil the pasta until al dente, then drain and rinse under cold water until cool.
  • Meanwhile, cook the bacon in a nonstick skillet over medium heat until crispy, 5 to 7 minutes. Remove to a paper towel-lined plate. Then crumble or chop into small pieces.
  • Combine the pasta with the bacon, carrots, peas, onions, mayonnaise, yogurt, lemon zest and juice in a large bowl and toss until coated and fully mixed together. Season generously with a pinch of salt and give another toss.
  • Garnish with the parsley leaves if using. Cover and chill the pasta salad for about an hour.

12 ounces medium shells (or other small pasta of choice)
2 cups frozen petite peas (thawed)
8 ounces thick cut bacon (cooked and chopped)
2/3 cup mayonnaise
1/3 cup olive oil
2 tablespoon red wine vinegar
2 tablespoons lemon juice
1 tablespoon freshly grated lemon zest
1 tablespoon Dijon mustard
3/4 teaspoon salt pepper
3/4 teaspoon pepper
1/2 teaspoon granulated sugar
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/4 cup chopped fresh chives

Steps:

  • Whisk together all of the Lemon Chive Dressing Ingredients together in a medium bowl. Refrigerate until ready to use.
  • Cook pasta according to package directions just until al dente. Rinse with cold water and drain. Drizzle with a little olive oil to keep from sticking.
  • Add pasta, peas and dressing to a large bowl and toss until evenly combined. If serving immediately then add bacon and toss to combine. If not serving immediately then cover and chill in the refrigerator. When ready to serve, add bacon and toss to combine.

When the temperature soars in the summer I can't face hot meals and serve nothing but assortments of salads, cheese and cold cuts for days on end. I value "main course" salads that will keep in the fridge from one meal to the next, and this one fits the bill. Fresh peas are quite amazing, but expensive and time consuming to shell. Frozen ones are not the same, but perfectly fine. If you use frozen peas, prep time will be much quicker. I have a big crop of snow peas this year; I think I will try them in this salad.

2 cups shelled peas
8 ounces small dry pasta
8 ounces bacon
2 -3 stalks celery
1/2 cup mayonnaise (I use "light")
1/2 teaspoon celery seed
1 teaspoon dried mint
1/4 teaspoon ground black pepper
1/4 teaspoon ground cumin
lemon wedge, if desired

Steps:

  • Shell the peas.
  • One quart of peas in the pod should yield about two cups of peas.
  • Cook the pasta in plenty of boiling water until it is al dente.
  • Steam or boil the peas until tender.
  • When each of these is done, plunge them into cold water to stop them cooking and to cool them.
  • Meanwhile, chop the bacon into 1" pieces and fry it until crispy.
  • Drain it well and allow it to cool.
  • Wash and chop the celery finely.
  • Add the bacon and celery to the cold drained pasta and peas.
  • Mix the celery seed, pepper, cumin and mint into the mayonnaise and stir it into the salad.
  • Refrigerate the salad for 20 minutes to an hour to allow the flavours to blend before serving.
  • Serve garnished with a wedge of lemon, to be squeezed over if you like your salad a little tarter.

1 (15-ounce) jar salad dressing (recommended: Miracle Whip)
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 1/2 teaspoons sugar
10 ounces frozen peas, thawed
1/2 cup shredded sharp Cheddar cheese
6 slices bacon, cooked until crisp and crumbled

Steps:

  • Cook the pasta in salted boiling water as directed on box for al dente, about 8 minutes. Drain and place the cooked pasta in a large bowl filled with ice water to stop the pasta from over cooking. Stir until the pasta is cool, then drain in a colander shaking to release as much water as possible.
  • To make the dressing: In a large bowl mix the red onion, salad dressing, apple cider vinegar, Worcestershire sauce, and sugar.   • Cook the pasta in boiling water as directed on box for al dente, about 8 minutes. Drain and place the cooked pasta in a large bowl filled with ice water to stop the pasta from over cooking. 8 ounces pancetta, diced
1/2 onion, chopped
1 (10-ounce) bag frozen peas
2 cloves garlic, minced
1/4 cup grated Parmesan
Salt and freshly ground black pepper
1/2 lemon, juiced

Steps:

  • Bring a large pot of salted water to a boil over medium heat. Add pasta and cook until al dente. Drain pasta, reserving 1 cup of pasta water.
  • Meanwhile, saute pancetta in a large saucepan over medium-high heat until golden and crisp, about 6 minutes. Transfer to a paper towel-lined plate. In the same pan, saute onions until softened, about 5 minutes. Add peas and garlic and saute for 3 minutes. Stir in Parmesan, pasta and pancetta. Moisten pasta with some of the reserved pasta water. Toss to incorporate, season with salt and pepper, if necessary, and serve, sprinkled with lemon juice.

6 ounces ditalini, small elbow or small shells
1/2 onion, diced
1/4 cup olive oil
1 can peas, undrained
1 pinch dried basil, oregano,or both
1 cup water (from cooking the pasta)
salt and pepper

Steps:

  • Start the water for the pasta.
  • Meanwhile,heat a little of the oil in a sauce pan.
  • Add the onions and cook until golden.
  • (DO NOT BURN).
  • Add the herbs, peas,and 1/2 cup of water and the rest of the oil.
  • Keep warm.
  • Drain the cooked pasta and put it in a bowl.
  • Add the peas and mix.
  • Add the rest of the water, if needed.
  • I have also used Great Northern or Pork and beans--all undrained.
  • You may add a diced tomato to the onions and peas, if you like.

1/2 cup parmesan cheese, grated
2 tablespoons butter
1 dash salt, to taste

  • Add pasta and peas to the cheese mixture and toss to coat, adding more reserved water as necessary to moisten pasta. Stir in bacon bits, adjust seasoning, and serve.
