GLAZED CARROTS WITH PEAS

Steps:
- Place the carrots in a medium-size saucepan with 125ml water, 50g butter, 1 tsp sugar and ½ tsp sea salt. Bring the liquid to a simmer, cover, then cook over a low heat for 10-12 mins, stirring occasionally. Turn the heat up, then cook, uncovered, for 10-12 mins, stirring occasionally until all the liquid evaporates and they are glossy and coated,.
- Towards the end of this time, place the peas in a medium-size saucepan with remaining butter and sugar, ½ tsp salt and 50ml water. Bring this to a simmer over a high heat, then cook for several mins, stirring or tossing the peas frequently until they are tender and have turned a beautiful luscious green. Drain and combine these in a serving dish with the carrots. Tuck in a few mint leaves, if you like.

- In a heavy bottomed saute pan over medium-high heat, heat the olive oil, then add the beef, season with 7 Spice, salt and pepper. Sear for 5-7 minutes until the meat is browned on the outside. Remove and set aside, keep any oil and juices in the pan.
- In the same pot, add the onions, garlic and cilantro cook for about 2-3 minutes until fragrant.
- Add the tomato sauce and deglaze the pot. Then add fresh tomatoes and 4 cups of boiling water to the pot and bring to a boil. Return the cooked beef to the pot along with peas and carrots. Lower heat and simmer for 30-45 minutes until sauce thickens.
- Serve over traditional Arabic rice pilaf and sprinkle fresh cilantro for garnish.

- Place the rice in a thick bottomed pot
- Add the onion and the peas and carrots
- Add 1-2 TBL water
- Stir in the turmeric and optional cilantro and cayenne powder
- Cook over medium high heat until the onions start to soften (about 5 minutes)
- Add more water as necessary to keep it from scorching or sticking.
- Add the coconut cream/milk. Pour in 2 ½ cups of water and stir to mix well
- Add salt and bring to simmer
- Turn heat to low, cover pot and let cook until rice is done (15-30 minutes depending on the type of rice you use)
- Check and stir after 10 minutes. Add more water if needed
- Cover and cook until rice is tender.

ORZO WITH PEAS AND CARROTS
I came up with this recipe when my son was a toddler. He was a very picky eater and this was one of the few things he would actually eat. To this day I still make it often, he still asks for it; he's 9 now. If you don't have peas and carrots on hand, just use peas!

- In a medium saucepan cook the orzo for about 8 minutes or al dente. After about 5 or 6 minutes of the orzo cooking; add to the orzo the peas and carrots to cook. PEAS AND CARROTS
Steps:
- Gather the ingredients.
- Rinse the carrots, drain them, and place in a medium saucepan.
- Cover the carrots with cold water. Bring to a boil over high heat. Boil for 2 minutes, then turn off the heat. Let the carrots stand in the hot water for another 3 minutes.
- Test a carrot. If it's tender, continue with the recipe. If not, let stand 2 to 4 minutes longer in the hot water.
- When the carrots are tender, add the frozen peas to the saucepan and put the pan back on high heat. Cook for 2 minutes.
- When the peas are hot, drain the vegetables well and return to the saucepan.
- Add the butter. Toss the vegetables in the pan over medium heat to melt and coat. Season the peas and carrots to taste with salt and pepper.
- Serve immediately and enjoy.
