1 cup orange juice
1 cup white sugar
1 (12 ounce) package fresh cranberries
2 pears, diced
⅓ cup honey
2 cinnamon sticks

Steps:

  • Heat orange juice and sugar in a saucepan over medium heat until sugar is dissolved. Stir in cranberries, and cook until they start to pop, 5 to 10 minutes. Stir in pears, honey, and cinnamon sticks and cook for 10 minutes. Remove from heat, and transfer to a bowl. Cranberry sauce will thicken as it cools. Remove cinnamon sticks before serving.

1 750-ml bottle dry red wine
2 1/4 cups sugar
2 cups water
1/2 cup orange juice
2 teaspoons grated orange peel
1 teaspoon ground cardamom
1 cinnamon stick
4 firm but ripe pears, peeled, stems left intact
1 pint vanilla ice cream
1 plain or almond biscotti, crumbled
Orange peel strips (optional)

Steps:

  • Combine first 7 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer. Add pears and return mixture to simmer. Reduce heat and simmer slowly until pears are tender when pierced with knife, about 25 minutes. Transfer pears to plate. Boil liquid in saucepan until reduced to 3 cups, about 20 minutes. (Can be made 1 day ahead. Cover and chill pears in poaching liquid. Before serving, rewarm over medium-low heat until pears are heated through.)
  • Arrange 1 warm pear and 1 scoop of ice cream on each of 4 plates. Drizzle some poaching liquid over. Sprinkle with biscotti crumbs. Garnish with orange peel strips, if desired, and serve.

Serve this sweet sauce with breakfast breads or on top of oatmeal. If you prefer a chunkier sauce, start with slightly smaller pieces of pear, and don't use a food processor.

4 firm, ripe Bosc pears (about 2 pounds total), peeled, halved, cored, and cut into 1-inch pieces
1 teaspoon grated lemon zest, plus 1 to 2 teaspoons fresh lemon juice (from 1 lemon)
Coarse salt
1 to 2 tablespoons honey

Steps:

  • In a medium saucepan with a lid, combine pears, 1/4 cup water, lemon zest, and 1/8 teaspoon coarse salt. Bring to a simmer over medium heat. Cover, and cook until pears are soft, 10 to 12 minutes. Uncover, and coarsely mash with the back of a spoon. Continue cooking until most of the liquid has evaporated, about 5 minutes.
  • Transfer mixture to a food processor, and blend until smooth; add lemon juice and honey to taste. Serve warm, or let cool, then cover and refrigerate up to 1 week. Use as you would applesauce.

BAKED PEARS WITH ORANGE CINNAMON SAUCE

The flavours in this dish remind me of Christmas, and for that reason it would be a nice desert around the holidays, but we like it any time of year. It's easily doubled to serve more people.

3 pears, peeled
1/2 cup freshly squeezed orange juice
1 teaspoon cornstarch
1/2 teaspoon cinnamon
1/2 teaspoon clove
1 teaspoon sugar
2 tablespoons water
1/4 cup raisins
1 tablespoon brown sugar

Steps:

  • Core and halve the pears.
  • Place them face down in a greased baking dish.
  • Whisk together the orange juice, cornstarch, cinnamon, cloves, sugar and water.
  • Pour over the pears.
  • Sprinkle over the raisins.
  • Cover the baking dish with aluminium foil and bake in a 425 F or 220 C oven for 25 minutes.
  • This is the time needed to bake fairly hard pears, so if yours are soft you may be able to take them out after 10-15 minutes.
  • Take the dish out of the oven.
  • Using a spoon, scoop up any juice on the bottom of the pan and drizzle it over the pears.
  • Sprinkle over the brown sugar.
  • Turn on the top element of the oven and put the pears back in the oven for a couple minutes until they start to brown on top.
  • Remove from the oven.
  • Divide between two bowls and serve topped with a scoop of vanilla ice cream.

It makes for an amazing dinner party dessert but it is also great the next day for a breakfast parfait or just as a snack as a if you pull back on the spicy honey toping and alternate the poached pears, granola, and coconut yogurt.

½ cup brown sugar
3 tablespoons honey
1 orange, zested and juiced
3 whole cloves
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch chili flakes
1 pinch salt
1 cup walnuts, divided
¾ cup pecans, divided
½ cup brown sugar
1 ½ teaspoons ground cinnamon
1 pinch salt
2 tablespoons coconut oil
2 cups rolled oats
½ cup honey
2 teaspoons vanilla extract
8 cups water
8 chai tea bags
¼ cup brown sugar
8 large Bosc pears - peeled, halved and cored
8 cups coconut yogurt
1 tablespoon orange zest, or to taste

Steps:

  • Mix together 1/2 cup brown sugar, honey, juice and zest of 1 orange, cloves, cinnamon, nutmeg, chili flakes, and salt in a small saucepan over medium heat for the sauce. Bring to a boil, reduce heat, and bring sauce to a very low simmer. Simmer for about 5 minutes, then remove from heat and allow to cool for about 10 minutes.
  • Meanwhile, combine 3/4 cup walnuts, 3/4 cup pecans, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, and a pinch of salt in a food processor. Pulse until finely ground, 15 to 20 seconds.
  • Heat a skillet over to medium-high heat and melt coconut oil. Chop remaining 1/4 cup walnuts and pecans. Add chopped nuts and oats to the hot oil. Toast, stirring frequently, for 1 minute. Add ground nut mixture and mix until combined. Allow to toast until sugar begins to melt, 2 to 3 minutes. Stir in honey and vanilla extract. Remove from heat and allow to cool in the skillet, mixing a couple times as it cools.
  • Bring water to a boil in a large pot, add tea bags, remove from heat, cover, and brew tea for 8 minutes. Remove tea bags and discard. Stir 1/4 cup brown sugar into chai.
  • Bring tea/water to a boil again over high heat, add pears, reduce heat, and simmer over low heat for 15 minutes. Gently rotate pears with a spoon (pears will be soft - you don't want to puncture the skin) and continue to simmer another 15 minutes. For a stronger spice flavor, leave pears soaking in the chai for an additional 10 to 15 minutes with the heat off.
  • To serve, place a heaping spoonful of coconut yogurt into the hole of the pear. Top with granola and drizzle with orange sauce. Garnish with orange zest.

3/4 cup sugar
1/4 cup plus 2 tablespoons water
1/4 cup (1/2 stick) unsalted butter
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ras-el-hanout*
4 1/4- to 1/2-inch-thick orange slices
1/4 cup sliced almonds, toasted

Steps:

  • Using melon baller and starting from bottom, core each pear. Cut thin slice off bottom of each pear to make level.
  • Stir sugar and 1/4 cup water in heavy large saucepan over medium heat until sugar dissolves. Increase heat and boil until syrup is deep amber color, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 5 minutes. Remove pan from heat; whisk in butter, then 2 tablespoons water.
  • Stand pears in caramel sauce in saucepan. Sprinkle cinnamon over. Cover and cook over low heat 10 minutes. Uncover; sprinkle with ras-el-hanout. Cover and continue to cook until pears are tender, occasionally spooning caramel sauce over pears and shaking pan so pears don't stick, about 15 minutes. Arrange orange slices around pears; spoon caramel sauce over. Cover and simmer until orange slices soften, about 5 minutes.
  • Place orange slices on plates. Stand pears atop orange slices. Spoon caramel sauce over and sprinkle with almonds. Serve warm or at room temperature.

1 cup dry red wine or red grape juice
1/2 cup sugar
2 teaspoons vanilla extract

Steps:

  • Core pears from bottom, leaving stems intact. Peel pears; cut 1/4 in. from bottom to level if necessary. Place pears on their sides in a large saucepan. Add water, wine, sugar and vanilla.
