This is a method more than a recipe. It is hard to fix prime rib for two, but this method allows the meat to brown nicely, and remain rare in the center when you carve it. You also have the added bonus of Baked Potatoes for your side dish! This recipe came from Sunset Books "Cooking for Two... or Just for You."

2 1/2 lbs standing rib roast (one rib)
1 tablespoon olive oil
1 small garlic clove
black pepper, freshly ground
2 large baking potatoes

Steps:

  • Wrap meat well and freeze until solid. Give it a good 24 hours or more.
  • Combine oil and garlic and rub evenly over the frozen roast. Generously sprinkle with pepper. Stand bone side down on a rimmed baking sheet or broiler pan between the two potatoes, placed like bookends. ROAST FROZEN; DO NOT THAW.
  • Roast uncovered in a 400F oven for 1 hour 15 minutes for medium rare, or 1 hour 35 to 40 minutes for medium well. You may insert a meat thermometer through the fat layer, into center of roast, not touching bone after it has cooked for about an hour. Cook to your liking (130F to 135F for rare).
  • Let stand 5 minutes before carving.
  • Serve with the baked potatoes and your favorite potato toppings.

Juicy, ultra-tender prime rib is the ultimate roast beef. To cut its size to suit two, I opted for a 1 1/2-pound, 1 1/2-inch-thick bone-in rib-eye steak. I seared our steak in a hot skillet to develop a crust and then finished cooking it gently in a low 200-degree oven to ensure a perfect medium-rare. While the steak roasted away, we used the fond in the skillet to build a flavorful pan sauce with red wine and beef broth, adding a touch of ketchup.

Salt and pepper
1 tablespoon vegetable oil
2 tablespoons minced shallot
1 teaspoon ketchup

  • 1. Adjust oven rack to lowest position and heat oven to 200 degrees. Pat steak dry with paper towels and season with salt and pepper. 2. 1 4-bone prime rib, bones and excess fat removed and reserved
4 teaspoons kosher salt
Freshly ground black pepper
4 sprigs fresh rosemary
4 cloves garlic, unpeeled, smashed
4 ounces arugula (optional)
2 teaspoons extra-virgin olive oil (optional)

Steps:

  • Liberally season the prime rib with the salt and some pepper and refrigerate overnight.
  • An hour before cooking, remove the roast from the refrigerator to allow it to come to room temperature.
  • Meanwhile, preheat the oven to 400 degrees F.
  • Put the reserved ribs in a roasting pan bowed-side up (the ribs will be acting as the roasting rack). Scatter any fat and meat trimmings in the pan around the bones. Roast the bones and trimmings for about 30 minutes, or until the fat starts to render.
  • Remove the pan from the oven, put the rosemary sprigs on top of the bones, then top with the prime rib. Put the smashed garlic in the bottom of the pan with the trimmings. Baste the beef with the fat drippings and return the pan to the oven.
  • Cook for 30 minutes and then baste the roast again.
  • Reduce the heat to 350 degrees F and cook until the meat is medium rare (an internal temperature of 125 degrees F to 130 degrees F), about 1 hour, 15 minutes, basting the roast every 30 minutes until it is done. Keep in mind that the roast will continue to cook while resting.
  • Remove the roast from the oven and put it on a cutting board to rest, uncovered, for 20 minutes. Slice the prime rib to the desired thickness and garnish with the arugula and olive oil.

7 lb prime rib roast (3-bone)
4 oz (half cup) olive oil, extra virgin
1 1/4 c horseradish, drained (to taste)
4 oz (half cup) kosher salt
black pepper
Onion, carrot, celery, thyme
4 oz (half cup) red wine, full bodied
1 c beef stock, unsalted

Steps:

  • 1. This cut of meat usually needs to be ordered from a butcher, so the order should be placed well in advance (especially during the holidays).
  • 2. Take meat from the refrigerator, remove all packaging, and pat dry with paper towels. Let stand at room temperature for one hour. After one hour, preheat oven to 500 degrees and allow oven to heat for 10-15 minutes after it reaches its mark.
  • 3. While oven is preheating, rub the meat with the oil, and sprinkle generously with fresh cracked pepper. Mix horseradish and kosher salt (to taste) together and pack on top of the roast (bones should be curved downward).
  • 4. When oven has been hot for 10-15 minutes, place roast in pan with a v-rack (again, bone side down). Place some coarsely chopped onion, celery, carrot, and thyme in the pan if you'd like to serve it au jus. Add some water or stock to the pan to keep the vegetables from burning.
  • 5. After twenty minutes, turn the oven to 350 degrees, and allow to roast for 75-90 minutes more (one hour and a quarter). Begin taking the temperature of the roast, in the middle and not touching any bone. You'll need to let the roast rest before carving, when the temperature will rise, so look for 120-125 degrees for rare to medium rare; from 130-155 for medium to medium well. Note: A good idea is to cook it to medium rare and then place a carved piece in the hot roasting pan for those who like it more well done.
  • 6. Tent the roast with foil on a cutting board and allow to rest for 15 minutes. If you're serving the roast au jus, reserve two tablespoons of drippings in the pan and add the wine, reducing it to a glaze; add the stock and reduce until it is well flavored. Drain and skim any fat or vegetable bits.
  • 7. Carve the beef quickly through the crust, plate and serve with the au jus, or with a horseradish cream.

2 1/2 lb rib of standing rib roast
1 Tbsp olive oil
1 small garlic clove, minced
2 large baking potatoes
SEASONING: (OPTIONAL)
1/4 c kosher salt
1/8 c rosemary
1/8 c horseradish powder
1/8 c garlic powder
1/16 c cracked black pepper

Steps:

  • 1. NOTE: I would recommend putting this on a rack in your pan. Since there isn't any liquid in the recipe it did stick and harden a bit on the bottom of the roast.
  • 2. Wrap meat well and freeze until solid.
  • 3. When ready to cook, preheat oven to 400F.
  • 4. Combine oil and garlic; rub evenly over frozen meat. If you're adding the seasoning (optional), add that now rubbing it into the oil and garlic.
  • 5. Stand roast, rib bone down, on a rimmed baking sheet or broiler pan between the 2 potatoes, placed like book ends. Roast frozen; do not thaw.
  • 6. Roast, uncovered, in a 400F oven for 1 hour and 15 minutes for rare meat, 1 hour and 25 minutes for medium rare, 1 hour and 35 to 40 minutes for well done.
  • 7. If you wish, insert a meat thermometer through fat layer into center of roast, not touching bone, after it has cooked for about 1 hour, and continue cooking until meat is done to your liking (130F to 135F for rare).
  • 8. Let stand for about 5 minutes before carving.

  • Remove the meat from the oven. Pour off all but a few tablespoons of the fat, and place the roasting pan over a burner set to high. Add the liquid and cook, stirring and scraping up any brown bits, until it is reduced by half. Slice and serve the roast, splashing a little of the sauce on the meat platter and passing the rest at the table.
