Years ago, I took a business trip to Spokane, Wa. I had dinner at the home of my client and his wife served a creamed onion side dish that I absolutely fell in love with it. This sounds like it might be very close to that dish. From the American Heart Association Cookbook.

- Melt butter in a saucepan over medium heat.
- Add flour and stir until well blended.
- Add milk gradually.
- Reduce heat to low and cook, stirring constantly, until mixture has thickened.

- 1. 1. In 3-quart sauce pan, boil 4 cups water. 2. Add onion to boiling water. 3. Partially cook onion on Max/Sear for 3- 5 minutes or until outer skin has shrunk. 4. Place onions in ice bath to stop cooking process. 5. Cut onions at tip and base and peel off skin. Set aside. 6. In 9.5-inch fry pan, cook bacon on High (425 degrees) for 2 minutes or until slightly crispy. 7. Add onions and saute, stirring occasionally, for 5 minutes or until golden brown.

- Preheat oven to 425°F with rack in middle or lower third.
- Blanch unpeeled pearl onions in boiling water 2 minutes. Drain and transfer to an ice bath to stop cooking. Peel onions and trim off root ends.
- Bring onions, vinegar, and water to a simmer in an ovenproof 12-inch heavy skillet with sugar, butter, bay leaf, 1/2 teaspoon salt, and 1/4 teaspoon pepper, stirring until sugar has dissolved. Cover and simmer 3 minutes.
- Uncover skillet and transfer to oven. Roast, stirring once or twice, until most of liquid has evaporated, 15 to 18 minutes. Stir in grapes and roast, stirring once or twice, until liquid glazes onions and grapes, 5 to 8 minutes. Discard bay leaf.

- Combine 1 pound frozen pearl onions, 1 cup chicken broth and 2 tablespoons each molasses, cider vinegar and butter in a skillet; season with salt and pepper. Simmer, stirring occasionally, until reduced to a glaze, about 20 minutes. Sprinkle with chopped parsley.

- Using a paring knife, trim off the ends of each onion and score a light "X" into one cut side. Bring a medium pot of water to a boil over high heat. Add onions and cook until outer layers are soft, about 1 1/2 minutes. Drain onions and run under cool water until cold enough to handle. Peel onions with your fingers and discard peels.
- Transfer onions to a large saucepan or high-sided sauté pan and cover with water. Add butter and sugar. Bring to a boil over high heat, reduce to a simmer, and cook, stirring and shaking pan occasionally, until onions are completely tender and sauce water has reduced and emulsified with the butter into a glossy glaze, about 25 minutes (if butter looks greasy or broken, add 2 tablespoons of water and shake pan to bring glaze back together). - Preheat the oven to 350°. Bring a large pot of water to a boil. Add the onions and cook for 5 minutes. Drain and rinse under cold water. Use a sharp knife to trim off the root ends, then pinch the onions to remove the skins.
