1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter
3/4 cup milk
2 medium comice pears, peeled and sliced 1/8 inch
1 teaspoon ground cinnamon
1 cup brown sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 8x8-inch pan.
  • Sift together flour, baking powder, salt.
  • In a bowl, combine pears, cinnamon, and 1/4 cup of sugar, toss lightly.
  • Cream butter and remaining sugar together, add egg and vanilla and mix till the batter is pale and smooth.
  • Add milk alternatively with the dry ingredients, starting and ending with flour.
  • Pour half of the batter into baking pan.
  • Cover with pears, then pour the remaining half of the batter, covering the pears completely.
  • Bake for 35-40 minutes, or until toothpick inserted comes out clean.
  • Let cool completely.

Gluten-Free Pear and Almond Cake image

Here's a cake worth adding to your repertoire: It's super fast to put together, it's gluten- and dairy-free and it can be dressed up or down. The almond meal and pureed pears give the cake a frangipane-like texture. Vanilla, maple syrup and coconut oil add to the irresistible flavor. For dessert, top the cake with some soft-whipped cream, ice cream or warm chocolate sauce. For afternoon or morning tea, the cake is delicious plain, served warm or straight from the fridge.

3 tablespoons melted coconut oil, plus more for oiling the parchment paper
1 1/2 cups almond meal
1/2 cup gluten-free rolled oats
1/4 cup gluten-free oat flour
3 tablespoons brown rice flour
1/2 teaspoon baking powder
1 large egg
2 large ripe Anjou pears
5 tablespoons maple syrup, plus more for drizzling
1/4 cup maple sugar
1 tablespoon pure vanilla extract
1/4 teaspoon pure almond extract
Pinch sea salt
Chopped almonds

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil a 12-inch square piece of parchment paper, and press it into a 9-inch round cake pan. (Don't worry about the sides overlapping-this is what creates a rustic edge.) Set aside.
  • Process the almond meal, oats, oat flour, rice flour and baking powder in a food processor until the oats are ground. Transfer the mixture to a medium bowl; set aside.
  • Beat the egg in another medium bowl; set aside. Peel and roughly chop 1 of the pears. Process the chopped pears, coconut oil, maple syrup, maple sugar, vanilla, almond extract and salt in a food processor until smooth; add the mixture to the bowl with the egg, and whisk to combine. Pour the pear-egg mixture into the flour mixture, and stir to combine. Transfer the batter to the prepared cake pan, and lightly spread it out.
  • Working quickly, peel, quarter and core the remaining pear. Cut each quarter into 4 long slices, arrange them in a circle on top of the batter and sprinkle with chopped almonds. Bake the cake until the edges are deep golden and a toothpick comes out clean, 50 minutes. Set aside to cool.
  • Drizzle the cake with maple syrup, and serve warm or cool. Leftover cake can be stored in an airtight container in the fridge for up to 3 days.

12 pounds Anjou pears, peeled, cored, and cut into eighths
1 1/3 cup sugar
2/3 cup poire William or pear brandy

Steps:

  • Place all ingredients along with 1 cup water in a large saucepan. Place over medium-high heat and bring to a boil, immediately reduce to a simmer. Cook until pears are tender, about 1 hour. Strain mixture through a fine mesh sieve and place solids into the bowl of a food processor; discard liquid. Process pear mixture until pureed. Let cool completely before using.

PEAR AND GINGER QUICK BREAD

I found the ginger in the recipe to be a bit too much so I cut it to 1/2 tsp, but have posted the recipe here as created by King Arthur Flour. This makes a nicely different quick bread than the usual apple or banana.

3/4 cup sugar
1/4 cup butter
1 egg
1 cup bosc pear, pureed (about 1 1/2 pears)
1 cup unbleached all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
3 ounces crystallized ginger, cubed
1 cup finely chopped walnuts

Steps:

  • Core the pears (there's no need to peel the fruit) and purée it well in a blender or food processor.
  • In a large mixing bowl, cream together the sugar and butter, then add the egg, beating till smooth.
  • Add the pear purée, flour, ground ginger, baking soda, baking powder, salt and vanilla. Beat till smooth.
  • Stir in the candied ginger and nuts.
  • Spoon the batter into an 8 1/2 x 4 1/2-inch loaf pan.
  • Bake in a preheated 350°F oven for 55 minutes to 1 hour, or until a cake tester inserted into the center of the loaf comes out clean.
  • Remove the pan from the oven, and cool the loaf in the pan for 15 minutes. Gently remove the loaf from the pan and cool it completely on a wire rack.
