GINGER PEAR MASCARPONE STUFFED FRENCH TOAST
Breakfast or Brunch! Do we need to say more? What we do need more of is our Ginger Pear Mascarpone Stuffed French Toast. Filled with tender pears sautéed in ginger and butter, then mixed with creamy mascarpone cheese. You will never want to go back to plain French Toast again.

- Instructions Ginger Pear Mascarpone Filling Melt 1 Tbsp butter in a sauce pan. Place thinly sliced pears (red pear and bartlett pear) in the melted butter Add ground ginger and raw sugar to pears Cook pears on medium heat till soft Remove from heat and let cool, once cooled mix with mascarpone cheese. Egg Mixture Mix together eggs, milk, vanilla and cinnamon Mix till smooth Assembly of Stuffed French Toast Dunk only one side of Texas Toast (thick cut bread) in egg mixture. Place the side of the bread dunked in the egg mixture onto hot griddle. Scoop ginger pear mascarpone filling on top of the Texas Toast that is face up. Dunk another slice (just one side) of Texas Toast into egg mixture and place the Texas Toast on top of the pear mascarpone filling with the egg side facing up. Cook till golden brown on each side Repeat Serve with pure maple syrup and powdered sugar!

DRUNKEN FRENCH TOAST
Steps:
- Mix the mascarpone, honey and cardamom in a bowl with a rubber spatula until well combined; do not overmix. Set aside.
- Preheat the oven to 400 degrees F.
- Combine the milk, cream, granulated sugar and eggs in a mixing bowl, and whisk until smooth. Add 1 tablespoon of the pear brandy and the cinnamon and vanilla; whisk to combine. Pour the rice cereal onto a cookie sheet or large plate.
- Dip a slice of challah into the egg mixture and let soak for 1 minute, turning to coat evenly. Let the excess drip off, then place the challah onto the bed of rice cereal; turn to coat completely. Repeat with the remaining slices.
- Heat a skillet or griddle over medium-high heat. When hot, spoon 1 tablespoon of the melted butter onto the skillet and place a slice of coated bread on the butter. Cook until golden, about 3 minutes. Flip, add another tablespoon of melted butter and cook until golden, another 3 minutes. Repeat with the remaining slices.
- Transfer the cooked slices to a baking sheet and bake for 5 to 7 minutes. The center of the French toast should remain somewhat soft inside.
- Cut each slice into 1 inch pieces and stack on a serving plate. Drizzle with the remaining pear brandy (1 1/2 teaspoons per portion), dust with confectioners' sugar and top with a scoop of the mascarpone mixture. Serve with maple syrup on the side.

- VANILLA-BOURBON BRIOCHE: In bowl of stand mixer fitted with paddle attachment, add flour and sugar. Mix in vanilla and bourbon. In separate bowl, whisk yeast into eggs and milk. Add to flour mixture. Mix for 3 to 4 minutes on low speed, adding butter in thirds (at beginning, middle, and end). After each addition, allow butter to incorporate evenly before adding more. Pour batter into 9×5-inch buttered loaf pan. Let proof at room temperature for 1 hour, then cover and refrigerate overnight. Bake at 300˚F for 20 minutes. BOURBON SYRUP: Mix slowly and reserve. BRANDIED PEACHES: Combine brandy, sugar, and water in small pot. Bring to gentle boil. Stack peach halves in Mason jar. Pour hot liquid over peaches. Cover tightly with lid. Place in large pot and cover with water. Bring to boil and can for 20 minutes. Let cool and store in cool, dry place. MASCARPONE FILLING: Let mascarpone come to room temperature in mixing bowl. Whip mascarpone until slightly fluffy, then add diced peaches. EGG WASH: Combine eggs, milk, and buttermilk in mixing bowl then whisk thoroughly. Season with salt, cinnamon, and turbinado sugar. SMOKED BUTTER: Place chips in metal bowl. Set chips on fire with torch and let burn until coals begin to appear. Fill deep casserole dish ¼ full with ice. Place butter in shallow dish that will fit in casserole dish. Place it over ice. Pour smoldering chips onto exposed ice, then cover both pans with aluminum foil to trap smoke. Smoke 5 minutes, uncover, and whip butter in mixer until smooth. TO ASSEMBLE: Cut brioche into 8 ½-inch sandwich slices. Dredge slices in egg wash. Heat skillet over medium or medium-high heat and slowly cook slices with plenty of butter until toasted, about 4 minutes per side. Remove to a cutting board. Spread 4 slices evenly with whipped mascarpone and peaches. Top with other 4 slices. Remove to plate and top with smoked butter and drizzle with maple bourbon syrup.
CARAMELIZED PEARS WITH MASCARPONE
This is very good autumn recipe; really surprising in taste. You may replace honey with sugar, because I have heard from a friend of mine that honey is not recommended to be heated (something with intestines). Anyway, I am submitting the original recipe.

- First mix mascarpone and sugar 2 ours before serving so sugar san join with mascarpone. Put it in cold place.
- Roughly ground almonds and dry fry them until brownish.
- Take a 24cm large heavy pan (preferably Teflon) and add honey, butter cardamom, cinnamon and inside "flesh" from vanilla (or package of bourbon vanilla sugar) and let it melt and join.
- Peal the pears, cut in half and remove seeds.
- Sauté the pears 8-10 minutes, turning them from time to time.
- When ready, put some mascarpone on a plate, put half a pear on it, cover with caramelized spiced honey and cover with roughly grounded fried almonds (or pistachio).

OVERNIGHT PEAR FRENCH TOAST

- If the brioche is not stale then you need to cook it to get rid of some of the moisture- otherwise, you will end up with a soggy french toast recipe. To dry the bread heat the oven to 300F/149C and place the slices in a single layer on a baking sheet, bake for 10 minutes then flip to the other side and bake for another 5 minutes. Let bread cool.
- In a large bowl mix together the milk, cream, butter, eggs, brown sugar, cinnamon, salt, and vanilla extract. Make sure to mix until no trace of the egg is left behind. Lightly butter a deep-dish 9" pie dish or 9" square pan and set aside. Take each piece of bread and dip it in the milk mixture then place it in the prepared dish.
- Add slices of pears and little chunks of mascarpone in between the layers I use a small cookie scoop to make balls of mascarpone. Pour the remaining custard mixture evenly over the whole french toast bake. Cover with plastic wrap and refrigerate overnight.
- In the morning take the French toast bake out of the fridge and sit on the counter for 30 minutes to take off the chill. Preheat the oven to 350F/ 180C. Remove the plastic wrap from the dish and lightly cover with foil and bake for 30 minutes, remove foil and bake for an additional 20-30 minutes. The bread will puff up and be a rich golden brown when finished. You are looking for an internal temperature the internal temperature should be a minimum of 170F/77C, the inside of the pudding should be set but still have a slow wobble.
- Let cool for 10 minutes then serve. Store leftovers covered in the fridge for up to 5 days. Delicious served warm or cold, with maple syrup or confectioners sugar.
FRENCH TOAST WITH MAPLE MASCARPONE
I love ... I mean REALLY love this breakfast. It is decadent. It looks very special but so easy to put together. It is a great for guests or for any occasion. It is versatile too. Use a different kind of bread, or any fruit or jam that you like. Either way it is very impressive looking and tastes every bit as good as it looks. Mascarpone is very rich yet surprisingly very low in fat. I like to serve this with turkey sausage for a out of this world breakfast.

- To Make the French Toast:.
- Place cookie sheet in the oven and preheat to 275. Whisk the eggs, cream, vanilla and warmed honey together until well blended.
- Melt the butter in a large saute pan. Add the baguette slices to the egg mixture and soak for 3 minutes on each side. cook slices in butter until brown and place on cookie sheet in the oven to keep warm.
- To Make the Berry Mixture:.
- In a small saucepan add the Jam until melted. Next add the fruit until heated through.
- To Make the Maple Mascarpone:.
- Stir Mascarpone until softened. Add maple Syrup until well blended.
- To Assemble:.
- Place 2 slices of french toast on plate, drizzle with berry mixture and top with the Maple Mascarpone.

- The night before (if you can! if not, that’s okay, too), place the butter and onion in a small saucepan and saute for several minutes until soft. Add all the other chutney ingredients and bring to a boil. Turn the heat down and simmer for 30-45 minutes, until the mixture is soft, sweet, and thickened into a texture like applesauce. If making ahead, store in the fridge.
- Heat a nonstick pan or griddle over medium high heat. Cut the slices of bread in half so you have a total of 12 bread pieces. Whisk the egg yolks, half and half, milk, vanilla, and flour until smooth. Dip the bread in the egg mixture and transfer to the hot skillet. Fry for a few minutes on each side until golden brown (I don’t recommend using butter – try to use a skillet or griddle that has a very smooth nonstick surface that makes flipping really easy). When the pieces are golden brown, arrange on four plates.
- If your chutney was made the night before, heat it back up again. Shmear the French toast with a little mascarpone, top with chutney, and sprinkle with pecans. For extra fun, scoop little spoonfuls of mascarpone over the French toast – the heat of the chutney will melt the mascarpone into pretty little pools of creamy and you will be in heaven.
