BACON AND BLUE CHEESE STUFFED DATES RECIPE

Steps:
- Preheat the oven to 425°F. Using a sharp paring knife, make a slit across the length of a date so that the pocket in the fruit is exposed. Remove the small pit inside the date and replace with an almond. Spoon about 1⁄2 tablespoon of blue cheese into the pocket, so that it's tightly stuffed but not overflowing with cheese. Place the date at the bottom of a bacon strip half and roll up as tightly as possible. Secure with a toothpick. Repeat with the remaining 7 dates. Place the dates on a nonstick baking sheet and bake for about 20 minutes, until the bacon has rendered and is brown and crispy. Top each with a bit of black pepper and serve.

Steps:
- Remove seeds from dates if necessary. Stuff each date with cream cheese. Wrap 1/2 slice of bacon, overlapping bacon ends, around stuffed date and hold together by spearing through the date with a toothpick.
- Heat oven to 350 degrees. Arrange stuffed and skewered dates on a cookie sheet or a large pan. If you have a metal rack for the pan, it's even better for keeping extra grease off dates.
- Bake until bacon is brown and crispy, about 30 minutes. You will need to turn each bacon-wrapped date a couple of times during baking, so it does not blacken where it touches the pan - dates have such a high sugar content, they may burn if left in one position.
- Drain dates on paper towels for a minute. And serve warm with a cool martini !

TAPAS: BACON WRAPPED DATES AND SWEET RED BELL PEPPER SAUCE
This recipe was inspired by one of our favorite tapas dishes. It's just like we like remember it from our first date some 13 years ago. I incorporated 2 Zaar recipes to create this clone. All of this can be made ahead and warmed in the microwave before serving. The Sweet Red Bell pepper sauce really make this dish amazing! Thanks go out to go to: Julesong's Recipe#27425 and cflethcher's Recipe#140057. UPDATE: 11/2013 The restaurant uses applewood smoked bacon and roasted red pepper "butter sauce" so I will be trying these 2 latest additions and reporting back

Steps:
- Preheat oven to 375°F.
- Soak round toothpicks in water for 15 minutes, this will prevent burning when baking.
- RED PEPPER SAUCE:.
- Place garlic cloves w/ peels on a baking dish and bake for 15 minutes.
- Rub pepper and onion with olive oil.
- After baking the garlic cloves for 15 minutes, add the red bell pepper and onion to the baking sheet and bake for an additional 15 minutes, or until tender and roasted. It may take a bit longer.
- Squeeze the roasted garlic out of it's paper into a blender along with the roasted onion and bell pepper. *use a blender or small food processor.
- Blend until smooth. Slowly add olive oil until blended. * you may use more or less.
- Add salt.
- Slowly add half and half until creamy while blending.
- Serve immediately or cover and refrigerate until ready to serve. Warm in the microwave before serving.
- BACON WRAPPED DATES:.
- Cut bacon strips in half (making them 1/2 as long approximately 3").
- Microwave the strips for 2 minutes.
- Wrap each date with a 1/2 strip of bacon and secure with a toothpick.
- Spray a 4 sided cookie sheet with nonstick spray.
- Place all prepared dates in the cookie sheet.
- NOTE: If you have mini muffin pan, suspend the bacon wrapped date over each opening and the bacon fat will drip off into the muffin pan. This is my preferred method.
- Bake for approximately 15 minutes, turning once. *Important to turn.
- After turning, continue baking for an additional 10 minutes or until bacon brown and crispy or as desired.
- BAKING TIME may vary. Just be sure to watch carefully.
- Serve with sweet red pepper sauce for dipping or puddle the sauce on a plate and place the wrapped dates in the sauce.
- Note: Everything can be prepared and baked ahead of time and served later. Just warm through in the microwave for about 30 seconds.

Time 2h
Yield 6 to 8 servings

Steps:
- For the glaze: Mix all ingredients in a small bowl; set aside.
- For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
- Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
- Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
- Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
- Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

Sauté until softened and golden, about 8 minutes. Transfer to a blender or food processor. Add parsley and stir to combine.

- Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. Cut open one side of the date and remove the seed (if needed). Stuff with the chorizo, dividing it up equally among the dates (about 1/4 an ounce each). Wrap with a piece of bacon, tucking in the ends on the bottom of the date. Place on the baking sheet and bake for 20 minutes until chorizo is cooked through and bacon is golden brown.
- While the dates cook, make the sauce. Heat a medium sized sauté pan over medium heat and add olive oil. Let it get hot, about 30 seconds. Add onion and garlic and sauté 2-3 minutes, stirring constantly. Add peppers and salt and pepper and sauté for another 8-10 minutes until soft. Add mixture to a Vitamix or high powdered blender and blend until smooth.
- When the dates are done and the sauce has cooled some, it's time to assemble. Either cover the bottom of a plate/dish/small pan with the sauce or place small dollops on a plate. Pierce dates with a toothpick and place on top of the the sauce. Enjoy!
