GRILLED SALMON WITH ROSEHIP SAUCE AND SMOKED OYSTER POTATO CAKES



Grilled Salmon with Rosehip Sauce and Smoked Oyster Potato Cakes image

1 quart vegetable stock (4 cups or 32 ounces)
1 tablespoon balsamic vinegar
2 tablespoons brown sugar
1/2 orange juiced, plus zest
1/2 cups reconstituted seedless rosehips (available at most health food stores)
Pinch of salt
10 canned smoked oysters, coarsely chopped
2 cups coarsely mashed potatoes (russets cooked with skin on)
1 egg
1/2 cup scallions, thinly sliced
1 teaspoon fresh thyme, chopped
Salt and freshly ground pepper, to taste
4 (5-ounce) salmon fillets

Steps:

  • Reduce stock by about 1/3 to intensify flavor (watch saltiness if using canned stock) add remaining ingredients and cook down until the consistency of light syrup.;
  • Combine all in ingredients for the oyster cakes in large mixing bowl by hand. With lightly floured hands, shape potato cakes. Brown on grill or saute with small amount of oil in skillet.
  • TO ASSEMBLE THE DISH: Brush salmon lightly with olive or canola oil and grill to desired doneness. Serve with Rosehip Sauce spooned over salmon with Oyster Potato Cakes along side.

SALMON KEFTETHES (CAKES)

1 pound cooked and flaked salmon
3 ounces chopped fresh flat-leaf parsley
1/2 cup finely chopped celery
2 tablespoons fine breadcrumbs
1 tablespoon olive oil
1/2 teaspoon sea salt
1/2 teaspoon pepper
4 sprigs dill, chopped
4 cloves garlic, finely chopped
1/2 small onion finely chopped
1/2 cup fine breadcrumbs
1/2 cup all-purpose flour
Pinch chopped fresh parsley
1 cup Greek yogurt
1/2 teaspoon sea salt
1/2 fresh lemon
1 sprig dill, chopped

Steps:

  • For the keftethes: Line a sheet tray with wax paper and set aside. In a large mixing bowl combine the salmon, parsley, celery, breadcrumbs, oil, salt, pepper, dill, garlic and onions. Knead the mixture thoroughly and form into several round keftethes (cakes).
  • For the flour mixture: Mix together the breadcrumbs, flour and parsley, and then set aside in a shallow pan or baking sheet.
  • Coat each cake in the flour mixture and then place the formed and floured cakes on the prepared sheet tray and refrigerate for 1 hour.
  • For the sauce: Mix together the yogurt, salt, lemon juice and dill, and set aside.
  • To cook, pan fry the keftethes over medium-high heat until golden brown, 3 to 5 minutes on each side. Serve the keftethes with the yogurt dill sauce.

POTATO CAKES WITH SMOKED SALMON & CREAM CHEESE

Irish potato cakes, or farls, make a delicious base for these smoked salmon, cream cheese and caperberry canapés - simply slice into squares and serve

Number Of Ingredients 10

1kg baking potatoes
100g butter, melted
100g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
280g tub full-fat cream cheese
100ml double cream
zest and juice 1 lemon
200g pack smoked salmon slices, cut into strips
small bunch dill, fronds picked
50g caperberries, halved

Steps:

  • Heat oven to 220C/200C fan/gas 7. Prick the potatoes all over with a fork, then bake whole for 1 hr 20 mins or until crisp on the outside and fluffy inside. Set aside on a wire rack to cool. Reduce oven to 180C/160C fan/gas 4.
  • Once the potatoes are cool enough to handle, cut in half and scoop out the flesh into a large bowl, discarding the skins. Mash the potato really well, then mix in two-thirds of the melted butter, all the flour and the bicarbonate of soda. Season well.
  • Line a large (approx 35 x 25cm) baking tray with a piece of baking parchment and brush with half the remaining butter. Roll out the potato dough on a floured surface, then lay it on the lined baking tray - don't worry if it breaks, just push the pieces back together once on the tray. Brush the dough with the remaining melted butter and bake for 45 mins or until golden brown on the outside.
  • Remove from the oven and allow to cool on the tray. Meanwhile, put the cream cheese in a large bowl and whisk until smooth and light. Stir in the double cream and lemon juice, and season well with black pepper. Spread the cream cheese mixture all over the surface of the cooled potato cake. Use a large, sharp knife to cut the potato cake into 30 squares, then top with the strips of salmon, the dill fronds, caperberries and lemon zest. Transfer to a serving platter and serve.

Irish potato cakes given a modern twist with a classic New York bagel topping

3 medium potatoes , quartered
100g flour , plus extra for dusting
½ tsp baking powder
150g pack full-fat soft cheese
200g pack smoked salmon
half a small red onion , thinly sliced
1 tbsp caper , drained
zest 1 lemon

Steps:

  • Make the potato cakes. Bring a large pan of salted water to the boil. Tip in the potatoes and cook for 10-15 mins until soft. Drain well, then return to the hot pan for 1-2 mins to allow any excess moisture to evaporate. Pass the potatoes through a ricer or sieve to get a really fine mash.
  • Weigh out 250g of the mash and place in a bowl (you shouldn't have much left over). Tip in the flour, baking powder and 1 tsp salt. Mix together until the mixture forms a soft dough. Shape into a ball, then tip out onto a lightly floured surface. Roll out into a circle about 20cm across and 1cm thick. Cut into 8 triangular wedges and generously dust all over with flour. The potato cakes can be made up to this point 1 day ahead and chilled or frozen for up to 1 month.
  • Set a large, non-stick frying pan over a medium heat (no need to add oil). When hot, dry-fry the cakes for about 3-5 mins on each side until golden and cooked through. You may have to do this in batches. Stir a little water into the soft cheese until it is spoonable. Place the potato cakes on plates, top with dollops of soft cheese and a smoked salmon slice, then scatter over the red onion, capers and lemon zest to finish.

650g new potatoes , skin on, sliced lengthway
100g frozen peas
200g can salmon (we liked Glenryck's medium red salmon)
200ml tub crème fraîche
100g mature cheddar cheese, coarsely grated

Steps:

  • To cook the veg, boil the potatoes in salted water for about 10 minutes until almost tender but not breaking up. Tip in the frozen peas and simmer for another 2- 3 minutes. Drain well then tip into a mixing bowl. Turn on the grill to high.
  • Drain the salmon and flake it into chunks, then gently toss with the potatoes and peas. Season to taste with salt and pepper and spoon into a flameproof dish.
  • Dollop the crème fraîche on top, roughly spread it over, and scatter with the cheese. Grill for a few minutes until bubbly and golden.

1 1/2 lbs small red potatoes, cut into wedges
1 small red onion, cut into small wedges
salt & fresh ground pepper
2 tablespoons olive oil, divided
3/4 cup mayonnaise
3 garlic cloves, minced
1 teaspoon grated lemon peel (yellow only no white pith)
2 tablespoons fresh lemon juice
2 lbs fresh wild alaskan salmon fillets, with skin
2 tablespoons fresh snipped basil
lemon slice

Steps:

  • Lightly grease grill rack. Preheat grill to medium-high heat. Fold a 36-by-18-inch piece of heavy-duty foil in half to make an 18-inch square. Lightly coat foil with cooking spray.
  • Place potatoes and onion in center of foil. Sprinkle with salt and black pepper; drizzle with 1 tbsp oil. Bring up opposite sides of foil and seal with a double fold. Fold remaining edges together to completely enclose vegetables, leaving a space for steam to build.
  • Place packet over medium heat. Grill 35 to 40 minutes or until potatoes are tender.
  • Meanwhile, for lemon-garlic sauce, add mayonnaise, garlic, lemon peel and lemon juice to blender or food processor. Cover; blend or process until smooth. Cover and chill until serving time.
  • Rinse salmon; pat dry. Cut fillets into eight (4-oz each) pieces.
  • Brush salmon with remaining oil. Sprinkle with basil; season with salt and black pepper.
  • After potatoes have grilled for 25 minutes, place fillets, skin-side-down, on grill. Top with lemon slices.
  • Grill 8 to 12 minutes or until fish just flakes when tested with a fork. Do not turn fish during grilling.
  • Serve salmon with potatoes and lemon-garlic sauce.
  • *NOTE: Reserve 4 pieces of salmon for future use. Remove skin from salmon; break up salmon into large chunks. Place in a container. Cover and store in refrigerator up to 3 days.
