JUDY'S PUMPKIN SOUP

Judy's Pumpkin Soup image

Do you have guests you would like to impress? This is the best pumpkin soup I have ever tasted. It is so good it leaves you with a craving that lasts for weeks! Wonderful to serve for the holidays. I like to serve this soup in hollowed-out individual pumpkins for a special presentation.

Time 1h

Yield 6

Number Of Ingredients 11

¼ cup butter
1 large onion, finely chopped
1 leek, white portion only, chopped
4 cups chicken broth
1 (29 ounce) can pumpkin puree
1 teaspoon curry powder
1 teaspoon salt
¼ teaspoon ground white pepper
¼ teaspoon ground ginger
1 teaspoon bay leaf
1 cup half-and-half

Categories     appetizer

Time 1h50m

Number Of Ingredients 11

2 medium pumpkins (for recipe)
1 large pumpkin (for tureen)
2 cups chicken broth
1 cup water
1/4 cup maple syrup
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon ginger
1 cup half and half
Toasted pumpkin seeds, optional

Steps:

  • Preheat the oven to 350 degrees. Cut the 2 medium pumpkins in half, scoop out the seeds, and place skin-side down on a baking sheet. Bake for 35 to 45 minutes, or until soft. Scoop out the pumpkin flesh into food processor and puree until smooth. Pour pureed pumpkin into a saucepan and add the chicken broth, water, maple syrup and spices. Bring to a boil, then reduce to a simmer and cook for 30 minutes. Meanwhile, cut the top off the large pumpkin to create the soup tureen. The hole should be wide enough to fit a ladle. Hollow out the seeds, checking for holes and lining with plastic, if necessary. Remove the soup from heat and stir in the half and half. Pour the soup into the pumpkin tureen and serve garnished with toasted pumpkin seeds.

Transform fresh pumpkin into a silky Pumpkin Soup recipe from Food Network imbued with fresh sage, cream and apple.

Provided by Food Network

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 9

2 tablespoons butter
1 onion, diced
2 carrots, peeled and diced
1 apple, peeled and diced
2 cups fresh pumpkin, roasted and diced, see note below
1 tablespoon sage leaves
3 cups chicken stock
1 cup cream
Salt and freshly ground pepper

Steps:

  • In a stockpot over medium heat, melt butter and saute onion, carrot, apple, roasted pumpkin, and sage until all are tender, about 8 to 10 minutes. Puree the mixture in a food mill; if you do not have a food mill, then puree in a food processor or blender. Return the puree to the stockpot, add the chicken stock and simmer for 15 minutes. Then add the cream and simmer for 5 more minutes, lowering the heat if necessary so it does not boil. Season, to taste, with salt and pepper.
  • Divide soup among 4 soup bowls and serve immediately.

ROASTED PUMPKIN - CIDER SOUP

Roasted Pumpkin - Cider Soup image

I adopted this recipe after Mean Chef (IHHDRO) left the site. My original review comments stated, "I had a nice butternut squash in my pantry that begged to be made into this soup. It was heavenly. Even my hubby, who really likes "manly" foods had 2 bowls of this soup. LOL Roasting the veggies brings out their best essence. The flavors meld perfectly and provide a rich and substantial soup. I did use a bit more onion, and didn't add the creme fraiche when serving. Still, this soup was tops. It is essential to a good fall menu." Source: "The New England Cookbook"

PUMPKIN SOUP

Pumpkin soup image

Whip up this easy pumpkin soup as a starter for a dinner party or a light supper when you need a bit of comfort - it has a lovely silky texture

Provided by Barney Desmazery

Categories     Lunch, Soup, Supper

Time 45m

Number Of Ingredients 8

2 tbsp olive oil
2 onions, finely chopped
1kg pumpkin or squash (try kabocha), peeled, deseeded and chopped into chunks
700ml vegetable stock or chicken stock
150ml double cream
2 tbsp olive oil
4 slices wholemeal seeded bread, crusts removed
handful pumpkin seeds

Steps:

  • Heat 2 tbsp olive oil in a large saucepan, then gently cook 2 finely chopped onions for 5 mins, until soft but not coloured.
  • Add 1kg pumpkin or squash, cut into chunks, to the pan, then carry on cooking for 8-10 mins, stirring occasionally until it starts to soften and turn golden.
  • Pour 700ml vegetable or chicken stock into the pan and season with salt and pepper. Bring to the boil, then simmer for 10 mins until the squash is very soft.
  • Pour 150ml double cream into the pan, bring back to the boil, then purée with a hand blender. For an extra-velvety consistency you can pour the soup through a fine sieve. The soup can now be frozen for up to 2 months.
  • To make the croutons: cut 4 slices wholemeal seeded bread into small squares.
  • Heat 2 tbsp olive oil in a frying pan, then fry the bread until it starts to become crisp.
  • Add a handful of pumpkin seeds to the pan, then cook for a few mins more until they are toasted. These can be made a day ahead and stored in an airtight container.
  • Reheat the soup if needed, taste for seasoning, then serve scattered with croutons and seeds and drizzled with more olive oil, if you want.

SUPER CREAMY PUMPKIN SOUP

Super Creamy Pumpkin Soup image

Once you get the hang of chopping up a pumpkin (or the skill of using the can opener) this recipe is just super easy. The prep time is mostly just chopping the silly thing up, so don't let the time scare you. You literally just chop, boil, stir in. Came up with this on a cold, English night when I just wanted come creamy comfort food. Good luck, and let me know what you think.

Provided by MSR5055

Categories     Lunch/Snacks

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 -1 1/2 lb fresh pumpkin (fresh preferably, seeds out, skin off)
4 cups chicken stock or 4 cups vegetable broth
1 red pepper
2 carrots
1 large red onion
1 red chile, deseeded (if you want some kick) (optional)
2 garlic cloves, chopped or 2 teaspoons minced garlic
1 cup heavy cream
1 tablespoon butter
2 ounces creamed coconut
salt
pepper

Steps:

  • Set broth boiling, chop skinned pumpkin into pieces, toss into broth.
  • Skin carrots, chop, toss inches.
  • Follow with red pepper, onion, and chili.
  • Boil until very soft (usually about half an hour).
  • If veg is still floating, drain off some broth (you can't drain too much as you can always add back, but can't take more out if it's not thick enough :).
  • Either use hand blender or upright, blend til smooth.
  • Add cream, butter, coconut, and garlic.
  • Salt and pepper to taste.
  • Eat then, simmer for a while, or freeze. It all works with this one.

Wonderful. and tasty. My husband loved it. Substituted soft steamed cauliflower for leeks and unsweetened coconut milk for half and half. Did not purée as we prefer soup with texture. Used an electric mixer to blend. Made a double recipe and froze left overs. Thawed and served to our grown daughter at a later date. She loved it as well.

We really enjoyed this soup. As there are only two of us, I made a half recipe with the 15 oz. can of pumpkin we had on hand.
