2 pounds ripe Bosc pears (4 pears)
2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

3 ripe pears
juice ½ lemon
1 tbsp light muscovado sugar
4 tsp Poire William liqueur or cognac (optional)
50g icing sugar
1 tbsp cocoa powder
25g ground almond
1 egg white

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Chop the pears into small pieces and put in a pan with the lemon juice and sugar. Bring to the boil, then cover and cook for 10 mins. Uncover, then cook for 8-10 mins more until the juices thicken up. Spoon into 4 x 150ml ramekins and add a teaspoon of liqueur to each, if using.
  • For the topping, sift the icing sugar and cocoa into a bowl, then stir in the almonds. Whisk the egg white until stiff, then fold into the dry ingredients. Spoon over the pears and shake the ramekins to level the mixture. Bake for 20-25 mins until the topping is firm to the touch. Serve warm or cold.

1/2 cup sliced almonds
3 tablespoons unbleached all-purpose flour
1/2 teaspoon kosher salt

6 Bosc pears (about 2 1/2 pounds)
2 tablespoons fresh lime juice
2 tablespoons granulated sugar
1 1/2 teaspoons freshly grated ginger
1/4 cup unbleached all-purpose flour
1/4 teaspoon kosher salt
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 400 degrees with rack in center.
  • Crisp topping:Stir together oats, sugar, almonds, flour, and salt. Add butter and mix with hands until small clumps form and dry mixture is coated in butter. Cover with plastic and refrigerate.
  • Filling:Peel, halve, and core pears, then slice into 1/2-inch-thick pieces. Add to a large bowl and toss with lime juice as you work to prevent pears from browning. Toss with sugar, ginger, flour, and salt. Transfer to a 2-quart baking dish. Remove crisp topping from refrigerator and break into small pieces. Scatter evenly over the top. Transfer to oven and bake until bubbly, 50 to 60 minutes (tent top with foil if browning too quickly). Remove from oven and let cool on a wire rack 20 minutes before serving with vanilla ice cream. Crisp is best eaten the day it's made, but can be stored, covered, for up to 3 days in the refrigerator.

  • Preheat oven to 375°.
  • Combine pears (that is 6 cups after peeling, coring, and dicing) and lemon juice in a 2-quart baking dish; toss the pears to coat with the lemon juice.
  • Combine sugar, cornstarch, and cinnamon in a separate bowl.
  • Pour sugar mixture over pears in a baking dish, toss with a fork to coat.
  • Combine all-purpose flour, cinnamon, and brown sugar in a separate bowl.

Pour in the melted butter and use your hands to combine until the mixture becomes crumbly and resembles wet sand. You may need to use your hands/fingers to form into nice crumbles. Cover the bowl with plastic wrap and place it in the fridge until ready to use.

2 sweet apples, such as Honeycrisp, peeled and cut into chunks
juice and zest from 1/2 orange (about 2 tablespoons juice)
1/4 cup coconut sugar
2 tablespoons GF flour
1 tablespoon finely chopped fresh ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon allspice

Steps:

  • Preheat the oven to 375 degrees. Grease a medium baking pan.
  • Make the filling: In a medium bowl, combine the filling ingredients. Transfer the mixture to the casserole pan.
  • Make the topping: In a large bowl, combine the all of the topping ingredients. Use a pastry cutter or your hands to combine the coconut oil (or butter, if using) into the ingredients.
  • Pour the topping over the filling.
  • Bake in the preheated oven for 45 minutes, until it is starting to bubble. Allow to sit for a few times before serving. Enjoy!
