2 ripe pears (Bartlett or Anjou)
1 tablespoon fresh lemon juice
1 tablespoon fresh flat leaf parsley, minced
2 ounces blue cheese, crumbled
1 1/2 tablespoons olive oil
fresh ground black pepper
1 baguette, cut into 1/2-inch thick rounds
8 ounces mascarpone cheese
1/4 cup walnuts, toasted and finely chopped

Steps:

  • Cut pears into a small dice, and place in a small bowl.
  • Sprinkle pears with lemon juice and toss. Add the parsley, blue cheese, and oil and toss gently and thoroughly.
  • Season to taste with freshly ground black pepper. Set aside.
  • Preheat the broiler. Arrange bread slices in a single layer on a baking sheet and toast under the broiler until lightly browned and crisp, 1 to 2 minutes per side.
  • Spread each toast round with a teaspoon of mascarpone. Top with a generous tablespoon of the diced pear mixture, mounding it up high and pressing it firmly.
  • Finish each one with a sprinkling of walnuts and serve.

Yield 2 pints or 4 half-pints

Number Of Ingredients 8

3/4 cup coarsely chopped sweet red pepper
1/2 cup finely chopped onion
1 jalapeno pepper, finely chopped
3 tablespoons cider vinegar
2 tablespoons honey
1/8 tablespoon ground allspice
5 large (2 1/2 pounds) firm pears, peeled and cut into 1/2-inch pieces
1/3 cup dark seedless raisins

Steps:

  • In 2-quart saucepan, combine red pepper, onion, jalepeno, vinegar, honey, and allspice. Heat to boiling over medium heat. Reduce heat to low and cook, stirring occasionally, 5 minutes.
  • Add pears and raisins and return to boiling. Cook chutney, stirring occasionally, 5 to 8 minutes longer or until pears just start to soften.
  • Meanwhile, in large kettle, cover 2 pint or 4 half-pint canning jars with water and heat to boiling over high heat; boil 10 minutes to sterilize. Drain jars on clean towel. In small saucepan, cover the jar lids and bands with water and heat to simmering. Remove from heat and leave lids and bands in water until ready to use
  • Spoon chutney into drained, hot jars Fill to within 1/2-inch of top of jars. Wipe rims of jars with damp cloth and seal with lids and bands. Process in boiling water bath 10 minutes. Cool jars; label and store in cool, dark, dry place.

1 1/2 cups bosc pear or finely chopped peeled Anjou, Bartlett
1/2 cup pear nectar
1/4 cup dried apricots finely chopped
2 tablespoons sugar
1 1/2 tablespoons cider vinegar
1/8 teaspoon salt
1 cinnamon stick 3-inch
4 ounces French bread baguette cut diagonally into 16 thin slices and toasted
8 teaspoons chopped pecans toasted
8 teaspoons crumbled blue cheese
1 tablespoon chopped fresh chives
1 teaspoon chopped fresh thyme

Steps:

  • Heat a small saucepan over medium-high heat. Add olive oil to pan; swirl to coat. Add shallots, and sauté for 2 minutes or until soft. Add pear and next 6 ingredients (through cinnamon); bring to a boil. Reduce heat to medium; cook 20 minutes or until pear is tender and mixture is thick. Cool to room temperature. Discard cinnamon stick.
  • Spoon about 1 1/2 tablespoons chutney over each baguette slice; top each with 1/2 teaspoon pecans and 1/2 teaspoon cheese. Sprinkle evenly with chopped chives and thyme.

This is a really good simple appetizer. Great flavors and very easy to make. Room temp, quick and it travels well. A perfect fall appetizer or nice side to a roasted salad for dinner. This makes around 30 or so slices of baguettes so you can cut this in half if you want. I find that I can't make enough of these.

1 baguette, cut into 30 slices (toasted)
2 medium bartlett pears, cored and chopped fairly fine
1/4 cup red onion, chopped fine
2/3 cup crumbled gorgonzola
1/3 cup butter (unsalted)
1/4 lb prosciutto (cut into 30 pieces)
1 tablespoon white balsamic vinegar
1 tablespoon olive oil
1 tablespoon fresh thyme, chopped fine

Steps:

  • Butter -- Mix the gorgonzola cheese and butter and set to the side, room temperature.
  • Pears -- Mix the pears, red onion, balsamic, olive oil and thyme and toss well in a small bowl. Let it hang out 15-20 minutes.
  • Baguettes -- Then as the pears marinate, in a 400 degree oven toast the baguette slices on each side until golden brown.
  • Put them all Together -- After the baguettes come out of the oven, spread with the blue cheese butter, top with a thin slice of the proscuitto and top with the pear and onion mixture.
