AUTUMN PEAR BREAD

Steps:
- In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and nutmeg; cut in butter until mixture resembles coarse crumbs. Combine the eggs, buttermilk and vanilla; stir into the flour mixture just until moistened. Fold in pears., Spoon into 2 greased 5-3/4x3x2-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

FRESH PEAR BREAD

Steps:
- In a bowl, combine the eggs, sugar, oil and vanilla; mix well. Combine flour, baking powder, cinnamon, baking soda and salt; stir into the egg mixture just until moistened. Toss pears with lemon juice. Stir pears and walnuts into batter (batter will be thick). , Spoon into 2 greased 9x5-in. loaf pans. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

SPICED PEAR BREAKFAST BREAD
For the naturally sweetest breakfast bread results, use Bartlett pears. If not available, ripe Anjou pears are a good option. The results are still just gently sweet; if you prefer a sweeter pear breakfast bread, add ¼ cup brown sugar or coconut sugar with the liquid sweetener in the recipe.

Steps:
- Preheat your oven to 350ºF.
- Grease an 8x4-inch or 9.5x3.5-inch loaf pan (I use this one), and flour the bottom.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, baking soda, salt, and cloves.
- In a large mixing bowl, blend the oil, liquid sweetener, egg, and vanilla until just combined. Stir in the pear followed by the flour mixture. Stir just until combined; do not over mix (a few little lumps are okay).
- Spoon the batter into your prepared loaf pan and even out.
- Bake for 45 to 55 minutes (I'm at 4500 feet / dry climate and 50 minutes is spot on), or until a toothpick inserted into the center of the loaf comes out clean.
- Let the loaf cool in the pan for 15 minutes or until cool enough to pick up. Gently remove the loaf from the pan and cool it completely on a wire rack before slicing. Tightly wrap and store any leftovers at room temperature for up to 2 days, but chill in the refrigerator or freezer if you want it to keep longer.
PEAR BREAD
As Bosc pears ripen the texture is as soft as a ripe banana, so I got the idea of making my banana bread recipe with chunks of pear. I added a bit of homemade granola, instead of the toasted coconut I usually put in the banana bread. It is essentially the same recipe, but the result is completely and wonderfully different, with a sweet spice flavor. Note: The trick to this recipe is using the pears when they are very ripe. This means they are at their sweetest and will breakdown when baking.

- Making the bread: Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan with butter.
- In a large bowl, whisk together the flour, granola, baking powder, sugar, salt, and spices.
- Cream together the butter and brown sugar, until light and fluffy. Add the eggs one at a time, scraping down the bowl after each one. Alternate adding the flour and milk, in 3 additions, mixing just to incorporate after each addition. Fold in the pears and nuts, if using.
- Spread the batter evenly into the prepared pan.
- Bake for about 1 hour 15 minutes, or until a tester comes out clean.
- Remove from pan and cool to room temperature.
- Make the icing: In a small bowl combine all the ingredients until smooth.
- Spread over the top of the cooled bread.
- Enjoy. Makes a great breakfast.
PEAR BUTTER NUT BREAD
Last fall, I made several half-pints of Pear Butter. It's similar to apple butter, but with the emphasis on nutmeg instead of cinnamon in the spices. I came up with this recipe, based on a pumpkin bread recipe, to use my pear butter. I've made a test batch, and it is delicious! I'll be serving it at a baby shower tomorrow, so...

- 1. Preheat oven to 350°F.
- 2. Stir together the dry ingredients (except sugar) in a medium bowl.
- 3. In a large bowl, beat the sugar, shortening, and eggs until light and fluffy. Add the pear butter and beat in.
- 4. Add the dry ingredients in 3 additions to the liquid ingredients, alternately with the pear nectar (or milk). Stir in the vanilla.
- 5. Fold in the nuts and raisins or dates (if used).
- 6. Place batter into 3 greased mini-loaf pans and bake about 25-30 minutes or until bread tests done with toothpick.
- 7. This can also be made in one large 9 x 5 loaf pan. It will take about 35-40 minutes to bake.

PEAR BANANA BREAD
A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).
