PEAR BUTTER (FRENCH)
This is the best preserve ever!!! It is a golden translucent color and melts in your mouth like butter. We love it on fresh bread the best but is good on all things.

Steps:
- In a roasting pan mix the sugar and the pear. Cook in a 350 to 400 degree oven stiring frequently until it becomes a golden translucent color. Cooking time could vary because of heat and how small the pieces. sometimes half way I take my imersion blender to it to speed things up. When it is done place into jelly or pint jars that have been warmed in hot water. Clean off the lip of jars and place boiled canning lids and srew on the rings and let seal. If lid of jar isn't cleaned off properly the jars won't seal. Enjoy!

PEAR CLAFOUTIS
This French pear clafoutis combines tender, sweet pears with a custard-like base. It is so comforting and delicious. Perfect fall baking!

- Preheat oven to 375F. Lightly grease an 8 inch, cast iron skillet or similar sized baking dish with some butter.
- Put the eggs and sugar in a bowl or mixer and whisk well until well broken up and combined. Add the milk, flour, vanilla, lemon zest and salt and mix/whisk until smooth.
- Peel the pears, cut in half and remove the core. Cut into slices and arrange in the bottom of the skillet/baking dish - you can fan them out slightly as I did or arrange any other way you choose.
- Carefully pour the batter into the skillet/baking dish over the pears.
- Bake in the oven for roughly 35 minutes, until lightly browned around the edges and set.
- Remove from the oven and allow to cool for a couple of minutes before serving. It will probably be puffed up when you take it out the oven and collapse slightly after a minute.
- Sprinkle with a little confectioner's sugar to serve, if desired.

SPICED PEAR BUTTER

- Combine pears, wine and lemon juice in heavy large saucepan. Cover and simmer until pears are soft, pushing unsubmerged pears into liquid occasionally, about 25 minutes. Force through food mill or coarse sieve to remove pear peel. Transfer to processor and puree.
- Return puree to heavy large sauce-pan. Add remaining ingredients. Stir over low heat until sugar dissolves. Increase heat to medium and boil gently until mixture thickens and mounds slightly on spoon stirring often, about 50 minutes.
- Discard fruit slices, cloves, vanilla and cinnamon. Spoon butter into hot canning jar, filling only to 1/4 inch form top. Immediately wipe rim, using towel dipped into hot water. Place lid on jar; seal tightly. Repeat with remaining jars.
- Arrange jars in large pot. Add boiling water to pot so that at least 1 inch of water covers tops of jars. Cover pot and boil rapidly 15 minutes. Remove jars from pot. Cool to room temperature. Press center of each lid. If lid stays down, jar is sealed. (If lid pops up, store butter in refrigerator.) Store in cool dry place up to 1 year. Refrigerate after opening.
PERFECT PEAR BUTTER
If you like the old fashion "Apple Butter", you will love Pear Butter. I made this for christmas gifts and it has been a hit. I found a recipe then tweaked it a little.

- Combine the pears with apple juice and pear nectar in a large pot and cook for about an hour. Put the pears through a food mill or a large hole strainer,.
- Put your smoothed pears with apple juice mixture and the remaining ingredients in a large crock pot. Cook for 2 to 3 hours, stir every 20 minutes and make sure that it doesn't scorch, until it reduces to a nice thick consistancy Can it or store in the refridgerator.
- This is great spread on a english muffin.

PEAR BUTTER
Pear butter is lightly scented with orange and nutmeg. This is an old recipe from a dear friend. Its taste is so good in toast or even on top of steak or chicken.

- Place pears into a large pot over medium heat, and add just enough water to cover the bottom of the pot and keep them from sticking, about 1/2 cup. Cook until the pears are soft, about 30 minutes. Press pears through a sieve or food mill, and measure out 2 quarts of the pulp.
- Pour the pear pulp and sugar into a large saucepan and stir to dissolve sugar. Stir in the orange zest, nutmeg and orange juice. Cook over medium heat until the mixture is thick enough to mound in a spoon. When the mixture begins to thicken, stir frequently to prevent scorching on the bottom. This will take about 1 hour.
- Ladle the pear butter into hot sterile jars, leaving 1/4 inch of headspace. Remove air bubbles by sliding a metal spatula around where the pear butter touches the glass. Wipe jar rims clean, and seal with lids and rings. Process for 10 minutes in a boiling water bath. The water should cover the jars by 1 inch. Check with your local extension for exact processing times for your area.

- Place pears in a food processor or blender; puree until smooth.
- Measure 3 cups pureed pears into a saucepan. Add sugar. Cook, stirring occasionally, until bubbling, about 15 minutes. Stir in cinnamon. Cook, stirring frequently, until thick, about 15 minutes more.
- Immerse a 1-pint jar in simmering water for 5 minutes. Wash lid and ring in warm soapy water. Fill hot jar with pear mixture. Seal and store in the refrigerator.

PEAR BUTTER
This recipe I found in Ball recipe book Tweaked a lot.I used my vita mix so I didn't need to cook, peel or seed my pears.I just pureed them then cooked with rest of ingredients. If you need to you can peel, seed and cook to soften the pears then puree in food processor. I just like the idea of all the vitamins and fiber I get to have because of this method. The prep time is what it took me from start(fruit) to finish(butter). This can be used on bread, waffles,pour it on a layer of cream cheese for a cracker spread,serve with a pork roast or turkey. Try it straight out of the jar.

- Wash 8-10 pint jars in hot soapy water or in dish washer.
- Keep hot until needed.
- Prepare lids as manufacturer directs.
- Place in a 6-quart pot.
- Pour orange juice over fruit.
- Stir in orange peel, sugar, spices and seed of vanilla bean.
- Use a hand blender if need be to get a nice smooth puree.
- Stirring constantly over medium heat, bring to a boil.
- Ladle into hot jars 1 at a time, leaving 1/4 inch headspace.
- Release trapped air.
- Wipe rim of jars with a clean damp cloth.
- Attach lid.
- Place in canner.
- Process in a boiling-water bath.
- For 15 minutes.
