Using two of falls greatest fruits, this salad is a winner in my book. Cooking time is refrigeration time.

Steps:
- In a medium bowl, combine all salad ingredients.
- Sprinkle with lemon juice and toss lightly.
- In a small bowl, combine all dressings ingredients and blend well.
- Pour over fruit, tossing lightly to coat.
- Refrigerate to blend flavors.

PEAR APPLE SALAD DRESSING

- Wash and dry fruits. Do not peel your fruit. Divide your apple and pear in half and chop into small pieces. It's important to weigh the fruit so that you get the correct ratios. I use my Perfect Blend Pro Scale and Application but any kitchen scale will work. Just remember to zero the scale after you put your container or dish on it to weigh the fruits.
- Place your chopped fruit, tarragon, water and selected sweetener in a small sauce pan. Cover and bring to a simmer. Keep heat low and simmer for approximately 8-10 minutes until the fruit is very soft. Cool to room temperature.
- Place your cooked fruit into the blender container and blend until very smooth. Vitamix speed is 10, 20 seconds of blending time.
- Add the vinegar and lemon juice to the blended fruit, pulse 2-3 times on variable speed 1. Can be served immediately or stored in the refrigerator for up to a one week.
- Notes:
- This recipe can be doubled with the same results as long as your blending container can handle the volume.
- You can substitute 1 teaspoon THM Super Sweet or 2 teaspoons THM Gentle Sweet for the Stevia Extract Powder.

- Add the apples, pears and pieces to a large bowl. Squeeze the juice from the limes over fruit. Add the honey and mint leaves, and toss it all together to coat. Serve immediately or chill until ready.

- In a large bowl whisk together vinegar, orange juice, zest, and raisins. Core and cube apples and pears. Add fruit and walnuts to a bowl and drizzle with oil. Toss well to combine. Season, to taste, with salt and pepper. Refrigerate 1 hour before serving.

- Mix together the mustard, dill, vinegar, sugar and olive oil. Set aside.
- For the Salad:.
- Core and slice apples and pears into thin slices, leaving skin on for color and flavor.
- Slice cucumber into rounds (if using cucumber with seeds, cut in half lengthwise, scrape out seeds, and cut into half moon slices).
- If cucumber is waxed, peel it; otherwise leave skin on.
