PEAR & TOFFEE MUFFINS

Pear & toffee muffins image

These gooey muffins are delicious warm when the toffee is still melty - you can reheat them in the microwave

Provided by Barney Desmazery

Time 40m

Yield Makes 12

Number Of Ingredients 10

300g self-raising flour
1 tsp baking powder
2 tsp ground cinnamon
85g golden caster sugar
250ml milk
2 eggs , beaten
100g butter , melted
2 ripe pears , peeled and cut into small chunks
100g soft toffee , chopped into pieces
25g flaked almond

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Line a 12-hole deep muffin tin with paper cases. Tip the flour, baking powder, cinnamon and a pinch of salt into a large bowl, then stir in the sugar. Mix together the milk, eggs and melted butter in a large jug and pour into the dry mix all at once, along with the pears and a third of the toffee pieces. Stir briefly until just beginning to combine - the batter should still be quite lumpy and have streaks of flour.
  • Divide the mixture between the cases, then sprinkle with the remaining toffee and the flaked almonds. Bake for 25-30 mins until the muffins are risen, golden and feel firm when pressed (the molten toffee will be extremely hot so be careful not to touch it). Remove from the tin to a wire rack to cool.

  • Combine 1 cup grated pear with melted butter, brown sugar, buttermilk, eggs, and vanilla. Whisk well to combine. In a large bowl, combine oats with either the all-purpose and whole wheat flours, or with the almond meal and gluten-free flours. Add baking soda, baking powder, salt, cardamom, nutmeg, and salt. Add 1/2 cup walnuts and chocolate chips. Mix wet ingredients into dry ingredients. If using wheat flour, mix until just combined. I didn’t worry about overmixing since I didn’t have any ingredients that would form gluten, so I stirred well for good measure.
  • Divide batter between 12-14 paper-lined muffin cups, filling nearly to the top; I used 1/3 cup per muffin. I strongly recommend paper liners as the couple that I put in oiled muffin tins didn’t release nearly so easily. Top with 1/4 cup walnuts. Bake at 375F for 15-20 minutes, until a toothpick inserted in the middle comes out clean. (The original recipe said to heat the oven to 425F but reduce upon putting in the muffins; this would likely have improved oven spring, which mine lacked.) I got 14 muffins.

PEAR-GINGER MUFFINS - WILLIAMS SONOMA
Chunks of fresh pear punctuate these flavorful muffins enlivened with the spicy zing of fresh, ground and crystallized ginger. You can use pears that are still slightly firm, as they will keep their shape nicely. Use a firm variety such as Bartlett, Bosc or Anjou. It is easy to remove the skin of fresh ginger with a vegetable peeler, and then grate the flesh on the fine rasps of a grater.
