Pear and Rocket Salad image

This pear and rocket salad with blue cheese is easy to prepare. Use ripe pears pair with a mature white wine. Use candied walnuts or plain ones if you can.

120g (4 oz) rocket/arugula leaves, washed and dried
2 pears, washed and thinly sliced
120g (4 oz) blue cheese, crumbled
16 walnut halves, crumbled
2.5cm (1in) fresh ginger, peeled
60ml (4 tbsp) olive oil
1 lemon, juiced
20ml (4 tsp) honey
salt and pepper, to taste

Steps:

  • Toss the rocket, pear, blue cheese and walnuts together in a large salad bowl.
  • Place the ginger, olive oil, lemon juice, honey, salt and pepper in a small blender and process until the sauce is smooth.
  • Drizzle the dressing over the salad and serve immediately. Enjoy!

Sweet Pear and Gorgonzola Salad with Rocket, Watercress, Walnuts, and Orange Flower Honey image

This salad first appeared in Robin Leach's Lifestyles of the Rich and Famous (1986) cookbook and became an instant hit in my restaurants because the intense flavor of pears is concentrated by long and slow heating. Whenever a recipe calls for fruit to accompany meat, game or poultry (as in duck with pears), this is the best way I know to bring out the flavors of the fruit, giving a commercial product a new lease on life, as if it were ripe fruit fresh from a farm in Oregon or Long Island. The process is oven drying, slowly evaporating all that Colorado River irrigation water from the fruit without cooking it. Do the same thing with halved apples, peeled slice pineapple, quinces, plums, apricots (especially since they tend to be the most ruined by growers), peaches and figs. If you can find Zante or Champagne grapes, they are the perfect garnish for this dish, but Concords would not be bad either. I also like to make this salad with ripe white peach and rose peppercorns sprinkled over the peaches and cheese.

4 ripe Comice pears
1 tablespoon salt, plus pinch
1 cup sugar
1 tablespoon freshly squeezed lemon juice
Pinch freshly ground black pepper
1/4 cup walnut oil
1 bunch watercress, washed, spin dried, stemmed
1 bunch rocket, washed, spin dried, stemmed
1/4 cup fresh basil leaves
1/4 pound Gorgonzola, rind removed, crumbled
1/2 cup walnuts, toasted, coarsely chopped
2 tablespoons orange flower honey
1/2 cup edible flowers, such as sage, rocket blossoms, rose petals, or nasturtiums
Champagne grapes, as needed for garnish

Steps:

  • Preheat the oven to 300 degrees F.
  • Slice the pears in half lengthwise. Rub each half with a pinch of salt. Put parchment paper on a tray just large enough to hold the pears, and spread the sugar on the paper. There should be a 1/8-inch layer. Put the pear halves cut side down on the sugar and bake for 1 hour. When the pears are cool enough to handle, remove the cores and slice them crosswise into 1/8-inch sections.
  • Put the lemon juice in a salad bowl with salt and pepper and mix to dissolve the salt, then whisk in the oil. Arrange the slices of pear 1 pear per plate, in 1 layer in the center of the plate, leaving a 3-inch gap in the center for the watercress and the rocket. Scatter the cheese and then the walnuts over the pears, and then drizzle the honey on top of the walnuts and cheese.
  • Put the watercress, rocket, and basil in the salad bowl and toss together. Then place the salad in the center of the pears.
  • Garnish with the flowers.

  • What a pukka combination, simple and classy. Don't try to make this when you feel like it, make it when you can buy perfect pears, otherwise it will taste naff. For 1 person I normally use around 1/2 a pear, 2 big handfuls of watercress and 2 big handfuls of rocket. If the pear skins are nice I just give them a wash, if not I remove them with a peeler. Then cut them in 1/2 and deseed. It doesn't really matter how you cut them up. Sometimes in big rough chunks, maybe sliced up or even grated. Then place into a bowl with the watercress and rocket. The pepperiness of the leaves works so well with the sweetness of the pear. Drizzle with good extra-virgin olive oil just to coat, a small squeeze of lemon juice (because the pear juice is slightly acidic but very tasty), and season well with salt and freshly ground black pepper. Toss all this together and serve. Shave over Parmesan or pecornio, crumble your nuts over and tuck in. I love this salad with roasted meat or as a starter on its own.

For one person I normally use around half a pear 2 big handfuls of watercress and 2 big handfuls of rocket. Quantities can be adjusted easily. I love this salad with roasted meat

1 sweet pear
1/4 cup walnuts
2 cups rocket
1/4 cup parmesan cheese

1 bunch rocket (Aguilar)
2 pears, finely sliced
2 tablespoons lemon juice
1/2 cup goat cheese, crumbled (or shaved Parmesan or crumbled feta if you prefer)
balsamic vinegar
black pepper

Steps:

  • Sprinkle pear slices with a little lemon juice and arrange over rocket on a medium sized platter.
  • Sprinkle with cheese and drizzle with the caramelized balsamic vinegar.
  • Serve immediately with ground black pepper.
  • To caramelize balsamic vinegar, simply reduce a 500 ml bottle of Balsamic Vinegar down to about 150 ml (2/3 cup) over high heat for approx 15 minutes - it will keep for several weeks in the pantry or you can caramelize less to use for this salad only.

30 cm thin baguette, cut into 1cm slices
1 1/2 tablespoons olive oil
2 teaspoons crushed garlic
1 tablespoon butter
2 teaspoons brown sugar
2 pears, cut into thick wedges
100 g baby rocket

1/3 cup jl kraft* provincial french vinaigrette

Steps:

  • Place the bread onto a lined baking tray and brush with half the combined oil and garlic. Cook under a grill for 2-3 minutes until golden. Turn and brush with remaining oil mixture and grill until golden.
  • Heat butter and sugar in a small non-stick frying pan over medium heat. Add pears and sauté for 2-3 minutes until light golden.
  • Arrange rocket, camembert, toasts and pears onto a serving platter. Drizzle with dressing and serve immediately.

water
1/2 teaspoon cinnamon
1 garlic clove, crushed
4 cups baby rocket
1 firm pear, skin on sliced thinly (beurre bosc is good)
1/2 red onion, sliced thinly lengthways
120 g walnuts, roughly chopped
1/2 cup shaved parmesan cheese (I use more)

3 tablespoons white wine vinegar
1 tablespoon palm sugar (can use brown sugar)
2 firm brown pears (quartered and cored)
1/2 cup walnuts
100 g rocket (arugula)
150 g soft blue cheese, sliced

Steps:

  • Place the butter, vinegar and sugar in a frying pan over medium heat.
  • When butter is melted add the pear and walnuts and cook for 4-6 minutes until the pear is just soft.
  • Place the rocket on serving plates and top with the pear and walnuts.
  • Spoon over the pan juices and top with the blue cheese.
