ITALIAN PEAR ALMOND CAKE



Italian Pear Almond Cake image

A delicious and easy pear cake, that's more pears than cake. Moist and lightly sweet, it is perfect for any time of day. Best enjoyed on the day it's baked.

Number Of Ingredients 9

9 Tbsp butter (salted or unsalted, at room temperature. If using unsalted, add a small pinch of salt to the batter )
9 Tbsp white granulated sugar
2 large eggs
6 Tbsp + 1 tsp all purpose flour
1 1/4 cups ground almonds (not almond flour)
1/2 tsp baking powder
3 medium pears (ripe, but still firm, peeled, cored and halved lengthwise)
1/3 cup flaked almonds
Icing sugar (for garnish)

Steps:

  • Pre-heat oven to 375° F.
  • Grease an 8-inch springform pan and line the bottom with a round of parchment paper. Set aside.
  • In a large bowl with an electric mixer, or in the bowl of a stand mixer fitted with the paddle attachment, beat the butter and white sugar together at medium speed until pale in colour and fluffy.
  • Add the eggs, one at a time, beating well after each addition and scraping down the bowl between eggs (be sure to get all the way to the bottom of the bowl, where unincorporated butter can hide.. With the mixer on low, mix in the all purpose flour, ground almonds and baking powder. Spoon the batter into the prepared springform pan and use a spatula to even out the mixture. (Batter will be thick and fill the pan only to about an inch thick).
  • Prepare pears, by peeling, then cutting in half from the stem end to the bottom. Use a small spoon to remove the core and also scrape away the thick spine that runs up to the stem end. Set aside.
  • Arrange the pear halves in a circle on the top, cut side down and with the thin end towards the centre of the cake. Sprinkle flaked almonds over-top. Bake in pre-heated 375° oven for about 35 minutes, or until the cake tests clean when a skewer inserted into the centre of the cake.
  • Leave the cake to cool completely in the tin, then run a knife around the outside and carefully remove the ring and base. Dust with icing/confectioners' sugar before serving.

1 cup flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
2 large eggs
1 egg white
4 ounces unsalted butter, melted (1 stick)
2 large pears, peeled and cored and sliced thin
1/2 cup semisweet chocolate chunk
1/2 cup blanched almond, sliced
confectioners' sugar, for dusting

Steps:

  • Preheat oven to 375 degrees F.
  • Grease and flour a 9 inch cakepan or springform pan.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a larger bowl, whisk together 3/4 cup sugar and 2 eggs until pale yellow, about 2 minutes.
  • Whisk in butter.
  • Stir flour mixture in until just combined, don't over-mix.
  • Pour half of the mixture in pan, top with half the pear slices and half the chocolate; then pour the rest of the mixture and top with remaining pears and chocolate.
  • In a food processor, grind 1/4 cup almonds with the remaining 1/4 cup sugar; add egg white and process until smooth.
  • Drizzle almond mixture over cake, then sprinkle with remaining almond slices.
  • Bake until a toothpick inserted in center comes out clean, 45 to 50 minutes.
  • Let cool slightly, then dust with Confectioners' sugar.

250g pack butter , melted, plus a little extra for the tin
250g caster sugar
200g self-raising flour
50g wholemeal flour
100g ground almond
1 tsp baking powder
2 tsp mixed spice
1 tsp ground cinnamon
good grating nutmeg
50g whole hazelnut , finely chopped
50g whole almond with skins on, finely chopped
50g pistachio , finely chopped
50g macadamia nut , finely chopped
100g dark chocolate , finely chopped, or dark chocolate chips
3 large eggs , beaten
1 tsp almond extract
2 pears , peeled, cored and diced
300ml pot soured cream
100g dark chocolate , broken into chunks
100g milk chocolate , broken into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line the base and sides of a deep, 20cm loose-bottomed round cake tin. Mix the sugar, flours, ground almonds, baking powder and spices in a big bowl. Mix together the chopped nuts. Set aside 2 heaped tbsp of them for decoration and stir the rest into the dry ingredients with the chopped chocolate or chips. Whisk together the melted butter, eggs and almond extract.
  • Tip the butter mixture into the dry ingredients and stir thoroughly to combine, then fold in the diced pear. Scrape the mixture into the tin and bake for 45 mins, then cover with foil and bake for 20 mins more until a skewer poked in comes out clean. Cool in the tin overnight.
  • For the icing, put the soured cream and chocolate chunks in a small pan. Heat very gently, stirring, until melted. Chill until spreadable (overnight is fine).
  • Remove the cake from the tin, spread over the icing and scatter with the reserved nuts.

100g blanched hazelnuts
140g self-raising flour
175g butter , cut into small pieces
140g golden caster sugar
2 large eggs , beaten
5 small, ripe Conference pears
50g dark chocolate , chopped into small chunks
2 tbsp apricot jam

Steps:

  • Preheat the oven to fan 140C/ conventional 160C/gas 3. Butter and line the base of a 20cm round cake tin. Grind the hazelnuts in a food processor until fairly fine. Add the flour and mix briefly. Add the butter and pulse until it forms crumbs. Add the sugar and eggs and mix briefly. Peel, core and chop two of the pears. Stir the pears and chocolate lightly into the cake mixture.
  • Spoon the mixture into the prepared tin and smooth the top. Peel, core and slice the remaining pears and scatter over the top of the cake. Press down lightly and bake for 50-60 minutes, until firm to the touch. Cool in the tin for 10 minutes, then turn out and cool on wire rack. Warm the jam and brush over the top. Serve warm or cold.
