2 lbs. (1 kg) boneless and skinless chicken thigh and leg meat
Bamboo skewers, soaked in cold water for 2 hours
1 cucumber, cut into small pieces
1 small onion, quartered
oil, for basting
3 tablespoons oil
2 stalks lemongrass, white parts only
2 cloves garlic, peeled
6 small shallots or pearl onions, peeled
2 teaspoons turmeric powder
1 teaspoon coriander powder
1 teaspoon chili powder
1/2 tablespoon salt or more to taste
2 tablespoons sugar or honey

Steps:

  • Cut the chicken meat into small cubes. Set aside.
  • Blend all the he Marinade ingredients in a food processor. Add a little water if needed.

  • Combine the chicken and the Marinade together, stir to mix well. Marinate the chicken for 6 hours in the fridge, or best overnight. When ready, thread 3-4 pieces of the chicken meat onto the bamboo skewers.
  • Grill the chicken satay skewers for 2-3 minutes on each side until the meat is fully cooked and the surface is nicely charred, on both sides. Baste and brush with some oil while grilling. Serve hot with peanut sauce the fresh cucumber pieces and onions.

1 cup plain yogurt
1 teaspoon freshly grated ginger
1 teaspoon minced garlic
1 tablespoon curry powder
1 1/2 pounds skinless, boneless chicken breasts, cut into strips
Vegetable oil, for grilling
Butter lettuce leaves
Fresh cilantro leaves
Peanut sauce, recipe follows
1 cup smooth peanut butter
1/4 cup low-sodium soy sauce
2 teaspoons red chili paste, such as sambal
2 tablespoons dark brown sugar
2 limes, juiced
1/2 cup hot water
1/4 cup chopped peanuts, for garnish

Steps:

  • Combine the yogurt, ginger, garlic, and curry powder in a shallow mixing bowl, stir to combine. Place the chicken strips in the yogurt marinade and gently toss until well coated. Cover and let the chicken marinate in the refrigerator for at up to 2 hours.
  • Thread the chicken pieces onto the soaked skewers working the skewer in and out of the meat, down the middle of the piece, so that it stays in place during grilling. Place a grill pan over medium heat and brush it with oil to prevent the meat from sticking. Grill the chicken satays for 3 to 5 minutes on each side, until nicely seared and cooked through. Serve the satays on a platter lined with lettuce leaves and cilantro; accompanied by a small bowl of peanut sauce on the side.
  • Combine the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice in a food processor or blender. Puree to combine. While the motor is running, drizzle in the hot water to thin out the sauce, you may not need all of it. Pour the sauce into a nice serving bowl and garnish with the chopped peanuts. Serve with chicken satay.

1 1/2 tbsp fish sauce ((Note 2))
1 1/2 tbsp dark soy sauce ((Note 3))
2 tsp sugar
2 tsp cornflour / cornstarch
2 garlic clove (, minced)

1 1/2 tsp curry powder ((any type))
1/4 cup / 65 ml water
180 g/ 6 oz thinly sliced chicken breast
1 tsp bicarb / baking soda ((optional, Note 4))
100 g/3.5 oz dried rice noodles ((Note 5))
2 tbsp oil
1 garlic (, finely chopped)
1/2 onion (, sliced)
1 cup shredded carrot
1 1/2 cups shredded cabbage
1 cup beansprouts

Steps:

  • Tenderise Chicken (optional, Note 4): Place chicken and bicarb in a bowl and mix with your fingers. Set aside for 20 minutes. Rinse well in a colander then shake off excess water. Roughly pat dry with a paper towel.
  • Sauce: Place all ingredients except water in a bowl and mix (microwave if needed to melt the peanut butter). Add water and mix.
  • Prepare noodles per packet directions (usually soak in boiled water). Drain, set aside.
  • Heat oil in a large skillet or wok over high heat. Add garlic and onion, stir for 30 seconds.
  • Add chicken and cook until the outside changes from pink to white. Add carrot and cabbage, cook until it starts to wilt.
  • Add noodles, bean sprouts and Sauce. Toss for 1 1/2 - 2 minutes or until the Sauce thickens and coats the noodles.
  • Serve immediately, garnished with coriander and peanuts.

A fast, old-school street food, this dish can be found all over Malaysia and Indonesia. Its origins seem to point back to Java in Indonesia, where the concept of kebabs was brought by Muslim traders from India and Arab countries. Peanuts were introduced by Spanish and Portuguese explorers and they thrived in the tropical climate, which is why you see them used in so many garnishes and sauces there today.

1 level teaspoon medium curry powder
½ level teaspoon ground cumin
1 heaped teaspoon turmeric
3-4 fresh chillies
2 cloves of garlic
5 cm piece of ginger
1 bunch of fresh coriander (30g)
6 tablespoons crunchy peanut butter
2 tablespoons low-salt soy sauce
6 spring onions
4 limes
8 free-range chicken thighs, skin off, bone out
1 handful of shelled peanuts
groundnut oil
¼ of a watermelon (1.5kg), or 1 ripe pineapple

Steps:

  • Gently heat the curry powder, cumin and turmeric for 1 minute in a dry pan on a medium heat.
  • Deseed 2 chillies and peel the garlic and ginger. Place in a blender with the toasted spices and coriander (reserving a few nice leaves in a bowl of cold water for later).
  • Add the peanut butter, soy sauce, the green parts of the spring onions, the zest of 2 limes and the juice of 3. Blitz until almost smooth, loosening with a few splashes of water, if needed, then taste and season to perfection.
  • Cut each chicken thigh into 4 pieces and toss with half the satay sauce. Divide and thread onto 4 skewers and marinate in the fridge for at least 2 hours, but preferably overnight.
  • If you're using a barbecue, get it going 1 hour before you want to cook. If you're using a griddle pan, cut your wooden skewers to fit and preheat the pan.
  • Get a garnish plate together - drain the coriander leaves, finely slice the whites of the spring onions, finely slice the remaining chillies and wedge up the remaining lime. Toast the peanuts in a dry pan until golden, then crush and add to the plate.
  • When you're ready to cook, oil and lightly season the chicken on both sides, then place on your medium-hot barbecue or griddle pan. Cook for around 15 minutes, or until beautifully gnarly and golden, turning regularly.
  • Serve on a platter with the rest of the sauce on the side. Sprinkle over the garnishes and slice up some nice ripe wedges of watermelon or pineapple to serve on the side - heavenly.

2 tablespoons reduced sodium soy sauce
2 1/2 teaspoons yellow curry powder
1 1/2 teaspoons turmeric
3 cloves garlic, minced
1 tablespoon freshly grated ginger

1 tablespoon fish sauce
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 tablespoon canola oil
Kosher salt and freshly ground black pepper, to taste
3 tablespoons creamy peanut butter
1 tablespoon reduced sodium soy sauce
1 tablespoon freshly squeezed lime juice
2 teaspoons brown sugar
2 teaspoons chili garlic sauce, or more, to taste

Steps:

  • To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste. 1 clove garlic ((peeled and diced))

1 big handful snow peas ((or sugar snap peas))
6-8 baby corns

1 handful peanuts
2 tbsp peanut butter ((crunchy would be nice))
2 tbsp soy sauce ((light or dark are both great))
2 tbsp sweet chili sauce
¼ cup water
1 tbsp maple syrup
1 stick lemongrass

Steps:

  • Get all ingredients ready and in one place. Thaw the frozen veggies (with a microwave or by taking them out of the freezer early enough).
  • Chop the snow peas, baby corn and onion. Dice the garlic and ginger.
  • Cook the noodles so you have them at hand when the stir-fry comes together. When ready, drain and rinse under cold water (they'll stick together less).
  • Grab a large bowl and chuck in the peanut butter, soy sauce, sweet chilli sauce, water, syrup. Mix well with a spoon 'til it's a nice and creamy sauce. Optionally, throw in the lemon grass.
  • In a wok or large pan heat the oil until it starts smoking.
  • Add the garlic, ginger, onion, sugar snaps and baby corn.
  • Around 40 seconds later add the thawed veggies. (If you just use fresh veg, throw in everything at once).
  • Stir it well for about 4-5 minutes.
  • Reduce the heat a little and add the sauce and noodles. It'll quickly begin to boil.
  • Make sure it's all nice and creamy. Add a little more water, if not!
  • Add some peanuts.
  • Let it simmer for another 3-5 minutes.
  • Fish out the lemon grass before serving (it's only for the flavour, not for eating!!)
  • Done!

Chicken satay is the perfect addition to any appetizer spread. It's great for parties and casual dining. Serve with a green salad to make a full meal of it.

1 cantaloupe, cubed
1 lb boneless chicken breasts
¼ cup soy sauce, prepared
¼ cup sherry, dry
1 lemon, grated rind and juice
2 tbsp vegetable oil
½ cup peanut butter, chunky
¼ cup milk
2 tbsp soy sauce
2 tbsp lemon juice
2 tbsp sherry
2 tbsp brown sugar
½ tsp curry powder
5 drops hot pepper sauce
1 clove garlic, crushed

Steps:

  • In a medium-sized shallow bowl, combine soy sauce, sherry, lemon rind and juice, and whisk in oil.
  • Cut chicken into strips (4 inches x ½ inch / 10 cm x 1 cm).
  • Add chicken to soy mixture and marinate covered in refrigerator for 4 hours.
  • To make the peanut sauce combine peanut, milk, soy sauce, lemon juice, sherry, brown sugar, curry powder, hot pepper sauce and garlic in a small saucepan. Heat until warm.
  • Thread chicken onto wooden skewers (8 inch / 20 cm)*, 2 strips per skewer. Cook on barbecue 4 minutes, turning once.
  • Add 1 piece cantaloupe to each skewer and cook 1 minute longer or until a thermometer inserted into the chicken reads 165°F (74°C).

Sate (or Satay) is originated in Indonesia and has become a worldwide known name for a grilled dish which's put on a bamboo skewers, quickly grilled over a wood or charcoal fire, then served with various spicy seasonings.There are many different varieties of Indonesian Satay, a famous variant among them is "Sate ala Madura" which originated on the island of Madura, near Java Island. This dish represents an authentic style of indonesian food-art and listed among "30 Indonesian Culinary Icons".You can make this satay either with lamb or chicken. Eventhough most of indonesian satay sauce are made from peanut paste as basic ingredient, however seasonings will vary slightly by region. The main characteristic of Sate Madura is the brown sauce made from indonesian sweet soy sauce or kecap manis, brown sugar and candlenut/kemiri. What about the taste??? Hmmmmm yummy ;-). 500 g chicken fillet, cut into 2 x 1 x 0.5 cm
1 pc lime
15 pc bamboo skewers
1 pc large red chillies , de-seeded, boiled
2 pc small red chillies (optional)
4 pc shallots
1 gloves garlic
5 pc candlenuts, roughly chopped or crashed
2 tsp palm sugar or brown sugar
1 tsp salt
2 tsp oil
3 tsp peanut oil or vegetable oil
150 g roasted peanut, blended or Pindakaas
2 tsp Indonesian sweet soya sauce / kecap manis
150 g water

Steps:

  • For Satay: Put about 4 - 5 cubes of chicken meat on each bamboo skewer. Put aside.
  • For Peanut Sauce: Blend all ingredients for the spice paste in a food processor until smooth. (If necessery add a little bit oil to help the blending process).
  • Heat 2 tbsp oil in a saucepan, stir-fry the paste all the time until fragrant. (Don't add oil if it's already added in a blender during the blending process).
  • Take 2 tbsp of the paste for the satay seasoning. Keep aside.
  • Add the peanut powder or pindakaas and water to the saucepan.
  • Simmer until the sauce becomes thick. Stir occationally. Remove from heat.
  • For Sate Seasoning: Mix 2 tbsp fried paste and 2 tbsp kecap manis then rub it on the satays evenly.
  • Grill the satays on charcoal or under electric / gas grill.
  • Turn them over to grill the other side until both sides half / well cooked as you prefer. Lift.
  • Serve with peanut sauce, kecap manis and lime slice. Garnish with chopped bird chillies and shallots if you like it SPICY!!
