CHEWY PEANUT BUTTER POPCORN BARS

Number Of Ingredients 6

Nonstick cooking spray, for the baking dish
1/2 cup creamy peanut butter
3 tablespoons unsalted butter
One 10-ounce bag marshmallows
7 to 8 cups lightly salted popcorn, freshly popped or your favorite store brand
One 7.25-ounce bottle hardening chocolate sauce, such as Magic Shell

Steps:

  • Spray a 9-by-13-inch baking dish with nonstick cooking spray. Set aside.
  • Melt the peanut butter and butter together in a medium saucepan over low heat, then stir in the marshmallows. Continue to stir until the marshmallows are melted.
  • Remove the pan from the heat and stir in the popcorn to coat evenly in the melted marshmallow mixture. Pour the popcorn mixture into the coated baking dish and spread out into an even layer. Drizzle the popcorn with the chocolate sauce. Allow the popcorn treats to cool for 30 minutes, then cut into bars.

4 cups lightly salted popcorn, either home-popped or packaged, such a SkinnyPop brand
0.5 cups (2.5 ounces) unsalted peanuts
2 tablespoons maple syrup
0.5 teaspoons fine sea salt or table salt

Steps:

  • Place the popcorn in a large bowl.
  • In a medium, nonstick skillet, stir together the peanuts and maple syrup until combined. Add the salt and set the skillet over medium-high heat. Cook, stirring frequently, until the syrup has formed a thick, deeply caramelized coating for the peanuts, 2 to 3 minutes.
  • Remove the skillet from the heat and pour the maple-glazed peanuts on top of the popcorn in the bowl. Using a large spoon, toss well to combine, then let cool completely. The popcorn will be flecked with the maple glaze and some clumps of peanuts and popcorn will form. The nuts will become crunchier as they cool.

  • Preheat a sauce pan over medium-high heat. Add vegetable oil and heat until shimmering and very hot but not smoking. Add popcorn kernels; immediately cover pan and give a good shake to the pan. Allow kernels to pop until you hear a 2-second pause between popping. Remove from heat and place popcorn in a large bowl (remove any unpopped kernels).
  • Heat honey, maple syrup and sugar in a sauce pan over medium heat (you can use the same pan, just wipe it out before using again). Stirring frequently, heat until mixture "bubbles up". Remove from heat and stir in peanut butter until very smooth. Add salt to taste.
  • Pour peanut butter mixture over popcorn and stir well to combine. Allow to cool completely then serve.
