- In a small saucepan, melt chocolate chips over low heat. Stir in crushed cookies until coated. Spread on waxed paper to cool. Coarsely chop., Spread vanilla ice cream into a 9-in. springform pan; sprinkle with 2 cups cookie mixture. Freeze for 30 minutes. Spread with chocolate ice cream. Cover and freeze for 4 hours or until firm., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form. Carefully run a knife around edge of pan to loosen. Remove sides of pan., Spread whipped cream over top and sides of dessert; press remaining cookie mixture into sides. Freeze for 1 hour or until whipped cream is set. Remove from the freezer 15 minutes before serving.

- In a large bowl, beat the eggs, sugar and vanilla until thick and lemon-colored, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture. Beat on low speed just until combined. Beat in milk and butter. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. Cover and freeze overnight., For frosting, in a small bowl, beat the confectioners' sugar, milk, vanilla and salt until smooth. Frost the top and sides of frozen cake squares; roll in peanuts. Place on wire racks to set.

- Add cake mix, peanut butter, and brown sugar to a mixing bowl.
- Beat on low speed until crumbly.
- Set aside 1/2 cup crumb mixture.
- Add water, eggs, and oil to remaining crumb mixture; beat on low speed until moistened.
- Beat on high speed for 2 minutes.
- Add in 1/4 cup each of the chocolate chips and peanut butter chips; stir to combine.
- Pour batter into a greased 13 x 9 inch baking dish.
- Mix together the peanuts, reserved crumb mixture, and remaining chips; sprinkle evenly over the batter.

- Line an 8-inch square baking pan with parchment paper and set aside. In a medium bowl, whisk together the cocoa powder, maple sugar and 1/2 teaspoon salt. Whisk in the warm melted cacao butter and vanilla until smooth. Gently stir in the cereal and peanuts; pour into the lined pan and, using an offset spatula, spread evenly. Scatter some peanuts over the top and let set overnight at room temperature or refrigerate until firm, at least 2 hours. Cut into squares and serve.

- Blend on low speed, (about 30 seconds) cake mix, peanut butter and brown sugar until crumbly.
- Reserve 1/2 cup peanut butter mixture; set aside.
- To remaining peanut butter mixture add water, butter and eggs.
- Mix at low speed until moistened; beat 2 minutes on medium speed.
- Fold 1/4 cup peanut butter chips and 1/4 cup chocolate chips into batter.
- Pour into a greased and floured 9 X 13 inch baking pan.
- In a small bowl, combine reserved 1/2 cup peanut butter mixture, remaining chocolate chips and peanuts.
- Sprinkle evenly over batter.
- Bake at 350 degrees for 40-45 minutes.
- Immediately sprinkle remaining peanut butter chips.
- Gently press into top of cake.
- Cool completely in pan on wire rack.

- Combine the peanut butter, brittle, feuilletine, confectioners' sugar, and salt in the bowl of a stand mixer fitted with the paddle attachment and paddle on medium-low speed for about 1 minute, until homogenous. The crunch can be stored in an airtight container at room temperature for 5 days or in the fridge for up to 2 weeks.

AMAZING TOFFEE PEANUT CRUNCH ICE CREAM CAKE
This is one of the best ice cream cakes ---if you can't find Skor bars then use any toffee bar for this. This cake is perfect for a summertime birthday party, you may use all half and half cream to make the sauce, but I find that it is better with half whip cream and half and half --- this is *so* good! :)

Steps:
- Grease a 13 x 9-inch baking pan or a 10-inch springform pan.
- To make the cake: In a bowl, combine the wafer crumbs and melted butter.
- Press into bottom of prepared baking dish.
- Place in freezer for 20 minutes.
- Remove from freezer and spread 1 quart of ice cream over the crumb crust.
- Sprinkle the crushed Skor bars over the ice cream, and press in slightly with a back of a spoon.
- Carefully spread remaining 1 quart of ice cream over the crushed bars.
- Sprinkle with chopped peanuts.
- Freeze for 3-4 hours.
- To make the Sauce: In a small saucepan, melt butter over low heat.
- Stir in the brown sugar, the half and half cream and whipping cream; cook, stirring constantly over low heat until sugar has dissolved.
- Remove from heat and add/mix in vanilla.
- TO SERVE: Remove cake from freezer and pan (if you are using a springform pan) if not just cut into squares if you are using a 13 x 9-inch pan.
- Pour the slightly cooled or cold toffee sauce over the cake.
- DELICIOUS!
