I love baking and always feel badly that my vegan daughter can't eat a lot of what I make. She and I worked together to come up with this chocolate-peanut butter skillet cookie. It's super chocolaty and rich, and is much easier to cook it in one batch in a skillet than scooping on multiple cookie sheets.

1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
¼ teaspoon salt
2 tablespoons water
1 tablespoon dry egg replacer (such as Bob's Red Mill®)
½ cup vegan butter, softened
½ cup white sugar
½ cup packed light brown sugar
1 teaspoon vanilla extract
1 (10 ounce) package vegan chocolate mini chips (such as Enjoy Life®)
¼ cup creamy peanut butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Whisk flour, cocoa, baking soda, and salt together in a medium bowl.
  • Combine water and egg replacer in a small bowl. Mix well and let sit until thickened, about 1 minute.
  • Cream vegan butter, white sugar, and brown sugar together in the bowl of a stand mixer until light and fluffy, about 3 minutes. Mix in egg replacer and vanilla. Gradually mix in dry ingredients until combined. Fold in chocolate chips.
  • Transfer 1/2 of the dough into a well seasoned 10-inch cast iron skillet. Press down with your fingers to distribute evenly over the bottom of the skillet. Spread peanut butter over the dough. Press remaining dough on top of the peanut butter; it's okay if some peanut butter is poking through.
  • Bake in the preheated oven until top is firm to the touch and dry and edges have started to pull away from the sides of the skillet, 35 to 40 minutes.
  • Remove from the oven and let cool for 15 to 20 minutes before slicing; cookie will firm up as it cools.

2 cups flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup butter, softened
½ cup sugar
¾ cup brown sugar
2 teaspoons vanilla extract
1 egg
1 cup chocolate chips
½ cup peanut butter
ice cream, for topping

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, whisk together flour, baking soda, and salt. Set aside.
  • In another bowl, beat softened butter, sugar, and brown sugar until creamy.
  • Add vanilla extract and egg, and beat until combined.
  • Add the flour mixture and stir until all of the flour is incorporated.
  • Pour in the chocolate chips, and stir.
  • Pour ½ of the cookie dough into a greased oven-proof skillet and press it into the pan.
  • Spread peanut butter over the dough and top with the other half of the cookie dough. Press the dough so it covers the peanut butter.
  • Bake for 35-40 minutes or until the edges are golden brown (baking times & temperatures may vary).
  • Cut into slices and serve warm with ice cream.
  • Enjoy!

1 cup creamy peanut butter
3/4 cup butter, softened
1-1/4 cups plus 1 tablespoon sugar, divided
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup milk chocolate chips
Vanilla ice cream, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream peanut butter, butter and 1-1/4 cups sugar until blended. Beat in egg and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Press half the dough into a well greased 10-in. cast-iron or other ovenproof skillet. Sprinkle chocolate chips over dough in skillet to within 1/2 inch of edges. Drop remaining dough over chocolate chips; spread until even. Sprinkle remaining 1 tablespoon sugar over top., Bake until a toothpick inserted in center comes out with moist crumbs, 35-40 minutes. Cool completely on a wire rack. If desired, serve with vanilla ice cream.

2 1/2 cups creamy peanut butter, divided
1 cup Reese's pieces, divided
3 1/2 cups mini marshmallows, divided
1 1/2 sheets graham crackers, broken into large pieces
8 mini Hershey chocolate candy bars, milk or dark

Steps:

  • Equipment:.
  • 12-inch cast iron skillet.
  • Kitchen torch.
  • Preheat oven to 375 degrees. In a medium bowl, whisk to combine the flour, graham cracker crumbs, salt and baking soda.
  • In a large bowl, whisk to combine the melted butter, granulated sugar, light brown sugar, eggs and 1/4 cup peanut butter. Add the flour mixture and stir to combine then fold in 1/2 cup Reese's pieces and 1/2 cup marshmallows.
  • Transfer half of the dough into a 12-inch cast iron skillet and spread to make even. Smooth over 2 cups peanut butter and top with 2 cups mini marshmallows. Top with remaining dough and sprinkle over remaining 1/4 cup Reese's pieces, 1/2 cup mini marshmallows, graham cracker pieces and mini chocolate candy bars.
  • Bake cookie for 35-38 minutes. Drizzle remaining 1/4 cup warmed peanut butter over the top and sprinkle over remaining Reese's pieces. Mound 1/2 cup marshmallows in the center of the cookie. Use a kitchen torch or broiler to toast, about 1 minute. Let the cookie sit for 10-15 minutes, then slice to serve.
