Peanut butter refrigerator pie, very easy to make. Originally submitted to ThanksgivingRecipe.com.

1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
½ cup creamy peanut butter
½ cup confectioners' sugar
1 (16 ounce) container frozen whipped topping, thawed
15 miniature chocolate covered peanut butter cups, unwrapped

Steps:

  • Mix the cream cheese, confectioners' sugar and peanut butter together until smooth. Fold in 1/2 of the whipped topping. Spoon the mixture into the graham cracker crust.
  • Place the remaining whipped topping over the top of the peanut butter mixture and garnish with the peanut butter cups. Chill for at least 2 hours or overnight before serving.

35 vanilla wafers, finely crushed
1/4 cup butter, melted
1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding Pudding
2 cups cold milk, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1/2 cup creamy peanut butter, divided
2 cups thawed COOL WHIP Whipped Topping, divided
1/2 oz. BAKER'S Semi-Sweet Chocolate

Steps:

  • Heat oven to 375ºF.
  • Combine wafer crumbs and butter; press onto bottom and up side of 9-inch pie plate. Bake 10 min.; cool.
  • Beat chocolate pudding mix and 1 cup milk with whisk 2 min. (Pudding will be thick.) Spread onto bottom of crust. Gradually add remaining milk to cream cheese in large bowl, beating constantly with mixer until well blended. Add dry vanilla pudding mix; beat 2 min.
  • Reserve 1 Tbsp. peanut butter. Add remaining peanut butter to vanilla pudding mixture; beat until blended. Gently stir in 1 cup COOL WHIP. Spread over chocolate pudding layer to within 1 inch of edge. Top with remaining COOL WHIP.
  • Refrigerate 3 hours. When ready to serve, microwave remaining peanut butter in microwaveable bowl on HIGH 15 sec. or until melted when stirred. Melt chocolate as directed on package. Drizzle peanut butter, then chocolate over pie.

8 chocolate wafer cookies, crushed
1/2 cup creamy peanut butter
4 ounces light cream cheese
4 ounces fat free cream cheese
1 (14 ounce) can fat-free sweetened condensed milk
2 tablespoons lemon juice
1 cup frozen light whipped dessert topping, thawed
2 teaspoons chocolate syrup

Steps:

  • Lightly coat a 9" pie plate with nonstick spray. Scatter the cookie crumbs evenly over the bottom. Set aside.
  • In a large bowl, using an electric mixer set on medium speed, beat together the peanut butter, light cream cheese, and fat-free cream cheese until smooth. Gradually beat in the milk and lemon juice. Fold in the whipped topping. Spoon into the pie plate, spreading evenly over the crumbs. Drizzle with chocolate syrup. Using the tip of a knife, decoratively swirlt the chocolate syrup. Cover with plastic wrap and chill for at least 4 hours, or until set.

  • Make the crust: Blend or pulse graham crackers in a high speed blender or food processor. Drain water from the soaked dates, add to blender, along with peanut butter powder and pulse again until a dough forms. Scraping down the sides when needed. (Dough should be crumbly, but stick together when pressed between fingers.)
  • Transfer crust mixture to a greased 9 inch springform pan, press down into an even layer and up the sides a bit (you can use your fingers or the back of a measuring cup). The crust may dry out a little if sitting on the counter, so if needed, add a few drops of water to it when pressing into pan. Place in freezer or fridge while you make the peanut butter pie filling.
  • Make the peanut butter pie filling: Rinse out your food processor. Make sure your cream cheese is very soft (if needed, pop it in a microwave-safe bowl and defrost in microwave for 20-30 seconds or until very soft). Blend cream cheese on high until very smooth. Add in the rest of the filling ingredients and blend until smooth and fluffy (about 2-3 minutes).
