PEANUT BUTTER BAKED OATMEAL
Another way to get a bit of protein into people around here! (And it never hurts to find one more reason to eat chocolate for breakfast!) Modified from tastykitchen.com. I want to try it with another nut butter, coconut oil, coconut milk, shredded coconut, a little dried papaya or pineapple, and white chocolate! I can see endless possibilities here!

- Preheat oven - 350 degrees. Spray 8x8, 9x9, or 7x11 baking pan.
- Mix all ingredients except chocolate chips; blend well. Spread evenly in pan. Sprinkle with chocolate chips, pressing down lightly. Bake 20-25 minutes - depends on pan size - til edges are golden brown. (I used a 7x11 pan and it was done in 20 minutes!).

Steps:
- Combine oats and water.
- Microwave on high for 1 minute and stir. Return to microwave and heat on high stirring every 30 seconds until desired consistency is reached. Adding the peanut butter will thicken the oatmeal a little. I do mine for about 2 minutes and 30 seconds in my 1200 watt microwave.
- Add natural peanut butter and stir until incorporated.

CHOCOLATE-PEANUT BUTTER OATMEAL MUFFINS
Steps:
- Preheat the oven to 400˚ F. Line 8 jumbo muffin cups with liners. In a medium bowl, combine the oats and milk and let soak, 20 minutes.
- In a separate medium bowl, whisk together the flours, baking powder, cinnamon and salt. In a large bowl, whisk together the butter, peanut butter, vanilla, eggs and maple syrup until smooth. Add the oat mixture and flour mixture; stir to combine. Fold in the dried fruit, chocolate and coconut. Scoop the batter into the prepared muffin cups about two-thirds of the way full. Sprinkle with seeds.
- Bake until a toothpick inserted into the center of the muffins comes out clean, 22 to 25 minutes. Let the muffins cool in the pans for a few minutes, then transfer to a rack to cool completely or enjoy warm!
OATMEAL PEANUT BUTTER BARS
Steps:
- Preheat oven to 350 degrees F. Lightly spray an 11 by 7-inch or 9 by 9-inch baking pan with cooking spray; set aside.
- In a mixing bowl, stir together baking mix and oats until well blended. Add remaining ingredients and stir until well combined.
- Press dough into prepared baking pan. Use oven mitts to place pan in oven. Bake for 20 to 25 minutes.
- Cool completely before cutting into bars.
PEANUT BUTTER OATMEAL SANDWICH COOKIES

- HEAT oven to 350 degrees F. Line baking sheets with parchment paper, if desired. Beat brown sugar and butter in large bowl with electric mixer on medium speed until creamy. Add 1/2 cup peanut butter, egg and vanilla, beating until blended.
- COMBINE flour, baking soda, salt, cinnamon and baking powder in medium bowl, stirring until well blended. Gradually add to creamed mixture, beating just until blended. Mix in oats.
- DROP by 2 level teaspoonfuls, 2 inches apart, onto prepared baking sheets to make 48 mounds. Bake 9 to 11 minutes or until golden brown. Cool on baking sheet 3 minutes. Remove to wire rack to cool completely.
- BEAT frosting and remaining 3/4 cup peanut butter in medium bowl with electric mixer on medium speed until blended. Spread in an even layer on the flat side of half the cookies. Place another cookie, flat side down, on top of filling mixture to make sandwich cookies.

This recipe came from me liking peanut butter, but peanut butter cookies don't stay chewy enough for me. Since I love oatmeal cookies, I sort of combined the 2 flavors and here's what happened. When I first met my husband, he swore he didn't like oatmeal cookies. Now around Xmas, he knows I'll start baking and he asks for these every year! I have served them with a bit of Nutella inside like a sandwich, and I also took them to an office party with peanut butter and jelly spread inside. If you do fill them, put them in the fridge until ready to serve. But I will admit, my favorite is just these cookies and a big old glass of milk. Hope you like them too!

- Preheat oven to 350 degrees F.
- Cream the butter and peanut butter together in a large mixer on high. PEANUT BUTTER NOTE: I use 1/4 cup of both creamy and chunky peanut butter in this recipe, but use what you have. My husband likes chunky, and I like creamy so we always have both :).
- Add the sugar, brown sugar and vanilla and continue to beat until the mixture is fluffy. Add the egg and beat until well combined.
- In a separate bowl, mix the dry ingredients until combined: flour, baking soda, baking powder, salt, and oats.
- Slowly add to the butter/sugar mixture and mix until well combined.
- Place the batter onto a sheet pan by the tablespoonful, leaving about 2 inches between each cookie. I use a cookie scooper to make it easier.
- Bake in the top half of the oven until the cookies are golden, about 10-12 minutes. NOTE: The cooking time will depend on the size of cookie (or scooper) that is used, so check at 10 minutes. They should be golden on the edges, but don't overcook these cookies. They should still be chewy.
- Remove and let cool.

CHOCOLATE PEANUT BUTTER OATMEAL
It's like having unbaked cookies for breakfast, without the butter and extra sugar. When I haven't had chocolate chips, I've used other chocolate. (Dove Promises are really good. I've also used Godiva cocoa.) I recommend using a large microwaveable dish (I use a 4-cup Pyrex); I discovered the hard way what a mess this can be in too small a bowl. And I always just eyeball the ingredients (except the oatmeal), so feel free to play with the measurements. It's not low fat, but it's soooo good.
