KETO RASPBERRY CHEESECAKE
An easy keto raspberry cheesecake recipe, topped with raspberry puree. Eight ingredients are all you need to make this low-carb dessert.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan with cooking spray and line the bottom with parchment paper.
- Combine almond flour, butter, sweetener, and vanilla extract in the bowl of a food processor. Pulse until crust mixture has turned into pea-sized crumbs that stick together when squeezed. Transfer mixture to the prepared springform pan and press into a crust covering the entire bottom of the pan in an even layer.
- Bake crust in the preheated oven until edges start to crisp, about 10 minutes. Remove from oven and allow to cool.
- Reduce oven temperature to 325 degrees F (165 degrees C).
- Combine cream cheese and powdered sweetener in the bowl of a stand mixer. Beat on medium speed until smooth and completely combined. Scrape down sides of the bowl as needed.
- Add eggs one at a time to the bowl while mixer is running and beat for 1 minute after each addition until the mixture is light and resembles a thick batter. Beat in lemon juice, lemon zest, and 1 teaspoon vanilla extract. Pour batter onto the prebaked crust in the springform pan and smooth out the top. Wrap the bottom of the pan with aluminum foil to prevent leaks.
- Set aside a handful of raspberries for garnish. Clean food processor and combine remaining raspberries and sweetener in the clean bowl. Pulse until mixture is smooth. Strain raspberry mixture through a mesh strainer into a bowl to filter out seeds. Discard seeds. Using a spoon add dollops of raspberry puree onto the cheesecake batter in the pan. Lightly drag a knife or a toothpick through the puree to create a decorative pattern.
- Bake cake on the center rack of the hot oven until sides of the cheesecake are firm and only 2 to 3 inches in the center remain slightly jiggly if you shake the pan, about 75 minutes.
- Remove cheesecake from oven and run a knife around the inside edge of the pan. Leave cheesecake in the pan and cool on a wire rack until room temperature. Lightly wrap cheesecake, still in pan, and chill in the refrigerator until firm, 4 to 6 hours or overnight.
- To remove from pan, gently run a sharp knife between cheesecake and ring of springform pan. Unlatch pan and lift ring off cheesecake, leaving pan bottom in place to serve. Top with reserved berries and any remaining puree.

NO-BAKE CHOCOLATE AMARETTO CHEESECAKE
My mother gave me this recipe several years ago and I have made it many times to rave reviews. I have no idea where she got the recipe; perhaps from an Amaretto pamphlet. It has a wonderful smooth, creamy texture and is very rich and decadent; certainly not for those who are watching their waistlines. Worth every sinful bite! I hope you enjoy!

- If you cannot find the waffle cookies already pre-dipped in chocolate, then melt 2 squares of semi-sweet or bittersweet chocolate with 2 T of butter. Pour the chocolate mixture into a tall thin glass and dip the rolled waffle cookies in the chocolate. Place on a waxed paper-lined pan. Chill until set.
- Beat the cream cheese and brown sugar together until smooth.
- Sprinkle the gelatin over the Amaretto, in a small saucepan, and let stand for 5 minutes. Stir over low heat until the gelatine dissolves.
- Blend the warm gelatin into the cheese mixture.
- Beat the whipping cream until soft peaks form. Fold into the gelatin and cheese mixture. Reserve 1 cup of this mixture.
- Melt the 6 squares of chocolate and let cool. Fold the chocolate into the remaining cheese mixture. Reserve 1/2 cup of this mixture.
- Use small dabs of the chocolate cheese mixture to aid in standing the prepared waffle cookies, dipped ends up, in a ring around the rim of a 8 1/2 inch springform pan.
- Spread the remaining chocolate cheese mixture into the prepared pan. Spread reserved plain cheese mixture evenly on top. Top with dabs of the reserved 1/2 cup of the chocolate cheese mixture. Swirl with a knife to create marbled effect.
- Chill for at least 4 hours.
- Garnish, if desired, with chocolate curls or whole blanched almonds. Let your imagination take you away!

- For crust: Mix together in small bowl. Press mixture evenly onto bottom of greased 9" springform pan.
- For Cheesecake: In mixing bowl, combine cream cheese, 2/3 cup sugar, sour cream, and cornstarch. Add eggs, one at a time, beating well after each. Beat in vanilla extract. Remove 3/4 cup of mixture to separate bowl and stir in cocoa powder and 3 tablespoons sugar. Set aside. Stir amaretto and almond extract into the remaining mixture.
- Pour half the amaretto mixture over the crust. Spoon half of the cocoa mixture over the amaretto mixture. Pour remaining amaretto mixture over the cocoa mixture. Top with remaining cocoa mixture. Using a knife and without disturbing the crust, swirl the blade through the batter to create the marble effect.
- Bake at 425 F for 10 minutes. Lower temperature to 225 F and bake for 1 hour or till the center no longer looks wet or shiny. Remove the cake from the over and run a knife around the inside edge of the pan. Chill, uncovered, overnight.
- For Topping: In small bowl beat whipping cream and amaretto with mixer until stiff peaks form. Pipe whipped cream around the edge of cheesecake. Garnish with chocolate covered almonds.
- Chill till serving time.

- 1. Bring cream cheese and eggs to room temperature.
- 2. Preheat oven to 400 degrees.
- 3. Beat cream cheese with hand mixer in large bowl till fluffy.
- 4. Beat in the eggs one at a time, mixing thoroughly and scraping sides between.
- 5. Beat in the sour cream, mixing thoroughly.
- 6. Blend powdered cocoa, splenda and stevia.

- Preheat oven to 325 degrees F.
- Tightly wrap bottom of 9-inch springform pan with heavy-duty aluminum foil.
- Place chocolate in microwave safe bowl.
- Microwave on med. power for 1 min. Stir.
- Microwave at 30 sec. intervals until chocolate is smooth. Let cool.
- Meanwhile, beat cream cheese in mixing bowl until fluffy, using electric mixer at low speed.
- Gradually add splenda and beat until blended (be careful, it's feather light and will fly out of the bowl if you're too agressive with the beaters).
- Add eggs, one at a time, beating after each addition.
- Dissolve salt in hot coffee.
- Beat in vanilla and melted chocolate until blended.
- Pour mixture into pan and place in a roasting pan
- Pour hot water into roasting pan until the water comes up to about half way up the side of the springform pan.
- Bake for 55 to 60 min. or until center is firm.
- Leave cheesecake in oven (turn off) prop oven door open and let cool in oven for 1 hour.
- Remove cheesecake from roasting pan.
- Cool cheesecake in the pan on wire rack.
- When cheesecake is cooled, cover with aluminum foil and chill at least 6 hours or overnight.
- Then remove sides of springform and cut into 12 wedges.

- Sprinkle chocolate wafer crumbs in bottom of a 7-inch springform pan. Set aside.
