LEMONY SAUTEED SPINACH
Sautéed spinach is a tasty, fast and nutritious dish. It's made in under 10 minutes and so simple! For extra flavor, we cook the spinach with sliced garlic and lemon zest. As the spinach quickly cooks in the pan, it wilts, turns bright green, and becomes tender.

Steps:
- Add olive oil, garlic and the lemon zest to a wide skillet over medium heat. Cook, stirring often, until the oil is bubbling around the garlic, about 30 seconds. Pile the spinach leaves into the pan and add a generous pinch of salt. Wait about 30 seconds or until the bottom layer of leaves have started to wilt, and then toss the leaves around the pan. As the spinach cooks, keep tossing so that all the leaves have a chance to hit the bottom of the skillet.
- When the spinach looks bright green and is mostly wilted, remove the pan from the heat and serve with a pinch of extra salt on top. For a little heat, add a light sprinkle of red pepper flakes (optional).

- In a large skillet, heat oil over medium. Add garlic; cook, stirring, until fragrant and beginning to brown, about 1 minute. Using a slotted spoon, remove garlic and discard.
- Raise heat to high. Add spinach to skillet gradually, waiting for one batch to wilt before adding the next. Cook, tossing, until tender, 3 to 4 minutes.
- Drain liquid from skillet; add lemon juice, salt, and pepper to taste.

SPICY LEMON SPINACH
A little red pepper and lemon juice jazz up this side dish of spinach.

- Wash spinach (tough stems removed), leaving some water clinging to leaves. In a large skillet, heat oil and pepper flakes over medium-high. Add spinach to skillet in 3 batches, stirring to partially wilt before adding next batch, and lightly sprinkling with salt and pepper. Cook briefly until completely wilted, about 4 minutes total.
- Place a colander in sink; transfer cooked spinach to colander, and press out any excess liquid. Divide spinach among 4 plates, and drizzle lemon juice over top. Serve.

Steps:
- Preheat oven to 375*F.
- Toss bread crumbs with 1 TBS oil in large bowl to coat.
- Spread evenly on rimmed baking sheet.
- Bake until breadcrumbs are golden, about 5 minutes.
- Cool.
- Sprinkle with salt.
- Cook pasta in large pot of boiling salted water until tender, but still firm to the bite, stirring occasionally.
- Drain, reserving 1/2 cup cooking liquid.
- Meanwhile, heat remaining 6 TBS oil, thinly sliced garlic, lemon juice, and dried crushed red pepper in heavy small saucepan over medium heat.
- Cook oil mixture until garlic turns golden, about 5 minutes.
- Toss pasta, oil mixture and spinach in large bowl until spinach wilts, adding reserved cooking liquid as needed to moisten.
- Sprinkle breadcrumbs over.
- Serve pasta, passing grated Parmesan cheese seperately.

- Rinse the spinach and place the leaves into a microwavable serving dish. Add the butter, garlic and lemon juice. Cover with plastic wrap. Steam in the microwave until the butter is melted and spinach is wilted, about 2 minutes. Remove the plastic wrap and toss to distribute seasoning before serving.
