MOROCCAN CHICKEN THIGHS

8 bone-in chicken thighs
kosher salt and ground black pepper to taste
1 ½ cups chicken broth
3 tablespoons paprika
3 tablespoons ground cumin
3 teaspoons minced fresh ginger root
3 teaspoons ground turmeric
2 teaspoons ground cinnamon
1 lemon, zested and juiced
olive oil, or to taste
1 tablespoon canola oil, or to taste
½ white onion, chopped
1 cup pimento-stuffed green olives
2 tablespoons chopped fresh parsley

Steps:

  • Season chicken thighs with salt and pepper. Let come to room temperature, about 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine chicken broth, paprika, cumin, ginger, turmeric, cinnamon, and 2 teaspoons lemon zest in a bowl.
  • Heat oils in a cast iron skillet until they begin to smoke. Add chicken thighs, skin-side down, and cook for 4 minutes. Flip thighs and continue cooking until skin is crispy, about 4 minutes more. Transfer to a plate. Saute onion in the skillet until softened, 3 to 5 minutes. Pour chicken broth mixture carefully over onion; scrape up any browned bits off the bottom of the skillet.
  • Return chicken thighs to the skillet. Spoon some of the liquid over the thighs.
  • Transfer skillet to the preheated oven; bake until chicken thighs are no longer pink in the center, 25 to 30 minutes.
  • Add olives to the skillet. Drizzle lemon juice over the thighs and garnish the whole dish with parsley.

1 pound skinless, boneless chicken breast meat - cubed
2 teaspoons salt
1 onion, chopped
2 cloves garlic, chopped
2 carrots, sliced
2 stalks celery, sliced
1 tablespoon minced fresh ginger root
½ teaspoon paprika
¾ teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon ground cayenne pepper
¼ teaspoon ground turmeric
1 ½ cups chicken broth
1 cup crushed tomatoes
1 cup canned chickpeas, drained
1 zucchini, sliced
1 tablespoon lemon juice

Steps:

  • Season chicken with salt and brown in a large saucepan over medium heat until almost cooked through. Remove chicken from pan and set aside.
  • Saute onion, garlic, carrots and celery in same pan. When tender, stir in ginger, paprika, cumin, oregano, cayenne pepper and turmeric; stir fry for about 1 minute, then mix in broth and tomatoes. Return chicken to pan, reduce heat to low and simmer for about 10 minutes.
  • Add chickpeas and zucchini to pan and bring to simmering once again; cover pan and cook for about 15 minutes, or until zucchini is cooked through and tender. Stir in lemon juice and serve.

This is a popular dish made with preserved lemons in all Moroccan homes and is also served at weddings. Each home makes slight changes in the recipe. This one I learned from a cook in my mother-in-law's home. Moroccans eat off a communal plate. This chicken is served on a single plate in the center of the table (at weddings you will see four chickens on one large platter), eaten with crusty bread and no utensils. You, of course, can use your knife and fork!

1 (6.75 ounce) package rice vermicelli
2 tablespoons raisins
4 tablespoons chopped fresh cilantro, divided
3 cloves garlic, grated, divided
1 teaspoon finely chopped preserved lemon rind
¾ teaspoon ground ginger, divided
1 dash ground turmeric
1 pinch salt and ground black pepper to taste
1 (2 1/2 to 3 pound) whole chicken
¼ preserved lemon
¼ cup vegetable oil
1 onion, grated
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cinnamon
¼ teaspoon ground turmeric
4 cups water, or as needed
4 threads saffron threads, or more to taste
1 cup large pitted green olives, rinsed

Steps:

  • Soak vermicelli noodles in hot water until softened, about 15 minutes. Drain and add raisins, 1 tablespoon cilantro, 1 clove grated garlic, 1 teaspoon chopped preserved lemon, 1/4 teaspoon ginger, 1 dash turmeric, salt, and pepper.
  • Clean the chicken, keeping the skin intact. Stuff with the prepared vermicelli. Tie legs closed with kitchen string. Remove seeds from preserved lemon and cut into 2 or 3 pieces.
  • Heat oil in a stock pot over medium heat. Add grated onion, preserved lemon, remaining 3 tablespoons cilantro, remaining 3 cloves garlic, 1 teaspoon salt, 1/2 teaspoon black pepper, remaining 1/2 teaspoon ginger, cinnamon, and 1/4 teaspoon turmeric. Stir together over medium heat. Add chicken and fry, being sure it doesn't stick and break the skin, about 2 minutes on each side.
  • Add enough water that the chicken is about half immersed. Add saffron. Cook until chicken is no longer pink in the center, 30 to 40 minutes, checking water level occasionally. Add olives about 15 minutes before the chicken is finished. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove the chicken to a plate and reduce the sauce until it is thick, 10 to 15 minutes.
  • Pat the chicken dry and remove kitchen string; place in a baking dish. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil chicken in the preheated oven, turning as needed, until skin is darkened and crisp, about 5 minutes total.
  • Spread the sauce on a platter and place chicken on top.

4 tablespoons olive oil
6 whole chicken legs, (about 12 ounces each), drumsticks and thighs attached, skin removed
Coarse salt and ground pepper
1 large onion, halved and thinly sliced
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups large pitted prunes, (dried plums)

Steps:

  • In a large (5-quart) heavy pot, heat 2 tablespoons oil over medium-high. Season chicken generously on all sides with salt and pepper. Place 3 chicken legs in pot; cook, turning once, until browned, about 10 minutes total. Transfer to a plate. Repeat with remaining chicken and oil.
  • Add onion and 1/4 cup water to pot; cook, stirring to loosen browned bits on bottom. Add turmeric, ginger, and cinnamon; cook, stirring occasionally, until onion has softened, about 5 minutes. Return chicken to pot. Add 2 cups water and half the prunes; bring to a boil. Reduce heat; partially cover, and simmer until chicken is cooked through and very tender, about 45 minutes.
  • Transfer chicken to a platter; cover tightly with aluminum foil to keep warm. Add remaining prunes to pot; raise heat to high. Continue to cook, stirring occasionally, until sauce has thickened, about 10 minutes more. If not serving immediately, top chicken with sauce, cover and refrigerate up to 1 day in an airtight container. Otherwise, divide chicken among serving plates, and top with sauce.

1/2 cup dried apricot
1 cup water, boiling
1 tablespoon olive oil
4 boneless skinless chicken breast halves
1 large onion, finely chopped
6 garlic cloves, minced
2 celery ribs, thinly sliced
1 cup chickpeas, canned, drained and rinsed
1 (540 ml) can stewed tomatoes
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
1 1/2 teaspoons ground coriander
1/2 teaspoon black pepper
1/2 cup fresh cilantro, chopped

Steps:

  • In a small bowl combine the apricots and the boiling water, let stand 10 minutes. Strain the apricots, reserving the the water, then dice the apricots. Set aside both the water and apricots until needed.
  • In a large skillet, heat the oil over medium heat, add the chicken and saute for 3 minutes per side or until golden brown. Transfer the chicken to a plate.
  • Add the onion and garlic to the skillet and cook 7 minutes, then add the celery and cook for 3 more minutes.
  • Stir in the apricots and the reserved liquid, the chickpeas, tomatoes, lemon zest, lemon juice, coriander and pepper.
  • Bring to a boil and return the chicken to the pan, reduce to a simmer, cover and cook for 15 minutes or until the chicken is cooked through.
  • Stir in the cilantro and serve.

Banana leaves offer an amazing and stunning way to grill food. As a girl, I lived in Hawaii and experienced the beauty and ease of banana leaf cooking for the first time. I created this recipe to combine my love of the banana leaf with my mom's North African style of cooking at home.

One 28-ounce can crushed tomatoes with liquid
1 cup chicken broth
1/4 cup green olives, pitted
1/8 teaspoon crushed cardamon
3 cloves garlic, minced
2 carrots, peeled, and diced
1 red bell pepper, diced
1 white onion, diced
2 tablespoons granulated garlic
1/2 teaspoon cayenne
Kosher salt
4 boneless, skinless chicken breasts, quartered
1 tablespoon extra-virgin olive oil
2 tablespoons ras el hanout or any Moroccan spice seasoning
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
6 trimmed banana leaves, each 12 inches square
2 tablespoons lemon zest
2 tablespoons fresh cilantro, chopped

Steps:

  • Prepare a grill for medium heat.
  • In a large bowl, mix together the crushed tomatoes, chicken broth, olives, cardamon, garlic, carrots, bell pepper, onion, 1 tablespoon of the granulated garlic, 1/4 teaspoon of the cayenne and 1 teaspoon salt. Add to a cast-iron pan and put on the grill over direct heat. Bring to a rapid boil, close the lid and boil for 2 to 3 minutes. Remove from the heat and let cool to room temperature.
  • Toss the chicken pieces in a bowl with the olive oil, then add the ras el hanout, cumin, cinnamon, remaining 1 tablespoon granulated garlic, remaining 1/4 teaspoon cayenne and 1 teaspoon salt and mix until uniformly covered.
  • Arrange the banana leaves on a baking sheet. Place 2 to 3 pieces of chicken on each leaf. With a slotted spoon or fork, cover the chicken with the sauce. Sprinkle a teaspoon each of the lemon zest and cilantro on top of each portion. Fold each banana leaf like an envelope and secure with cook's twine or toothpicks.
  • Place the baking sheet with the banana envelopes on the grill over direct heat and cook until the chicken is cooked through but still juicy, 30 to 35 minutes. Serve immediately.

  • Sprinkle chicken pieces with salt, pepper, and flour. Heat olive oil in heavy large pot over medium-high heat. Add half of chicken pieces to pot and cook until browned on all sides, turning occasionally, about 15 minutes. Transfer chicken to baking sheet or platter; repeat with remaining chicken. Pour off all but 2 tablespoons fat from pot and discard. Reduce heat to medium. Add shallots to pot; sauté until golden, about 6 minutes. Add cinnamon sticks, ginger, cumin, turmeric, and cayenne. 1 onion, sliced into wedges

  • Pour broth into a large, wide saucepan and set over medium-high heat. Stir in seasonings and garlic. Add onions and carrots to broth. Cover and reduce heat to medium-low. Boil gently until carrots begin to soften slightly, about 5 minute.

This fine Cooking recipe was really easy. I used California dates as Medjool dates were unavailable. I served it with couscous cooked in chicken stock. The Moroccan flavors were absolutely delicious. This was a very inexpensive dish. Yet it was elegant in presentation. Hope you enjoy.

4 medium bone-in skin-on, chicken thighs, trimmed of excess skin and fat
4 medium skin-on chicken drumsticks, trimmed of excess skin and fat
kosker salt
freshly ground pepper
2 tablespoons vegetable oil
1 large red onion, thinly sliced
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1 1/4 cups carrot juice
3/4 cup chicken broth, homemade or 3/4 cup canned low salt
10 -12 medjool dates, pitted and halved
2 tablespoons fresh lemon juice
2 tablespoons chopped cilantro

Steps:

  • Position a rack in the center of the oven and heat the oven to 350 degrees.
  • Season the chicken pieces generously with salt and pepper. Using a 10-11" straight side ovenproof saute pan with a lid, heat the oil over medium-high heat until very hot. Arrange the chicken skin side down in the pan (it'll be crowded), and cook until deeply brown, about 5 minutes. Use a splatter screen if you have one). Turn the pieces over and cook until the other sides are deeply browned, 3 to 5 minutes more. Transfer to plate.
  • Pour out and discard all but 1 tablespoon of the fat in the pan. Put the pan over medium heat. Add the onion and cook, stirring frequestly, until it's soft and begins to color, 6 to 8 minutes.
  • Add the ginger, cinnamon, and cumin and stir into the onions for about 1 minute.
  • Pour in the carrot juice and broth and bring to a boil, scraping the browned bits from the bottom of the pan with a wooden spoon.
  • return the chicken to the pan. Cover, transfer to the oven and braise for 15 minutes.
  • Add the dates and continue to braise until the chicken is fork-tender and the drumstick meatstarts to come away from the bone, 30 to 35 minutes more.
  • With a slotted spoon, transfer the chicken and the dates to a serving dish and keep warm by loosely covering the dish with foil.
  • Tilt the saute pan and skim off as much fat as possible from the sauce.
  • Bring the sauce to a boil over medium-high heat, reduce the heat to medium low, and simmer until the sauce is slightly thickened, abouth 5 minutes.
  • Add the lemon juice and season to taste.
  • Pour the sauce over the chicken, sprinkle with the chopped cilantro and serve.

1 tablespoon olive oil
4 chicken thighs
1 large onion, halved lengthwise and cut into thick slices
1 tablespoon minced garlic
½ cup unsulfured apricots, halved
½ teaspoon ground ginger
½ teaspoon ground cumin
½ teaspoon ground allspice
1 cup beer (preferably lager)
salt and pepper to taste

Steps:

  • Heat olive oil in a deep skillet over medium-high heat. Brown chicken thighs on both sides until golden, about 3 minutes per side. Set chicken aside, then stir in onion and garlic; cook for 1 to 2 minutes until the onion has softened. Stir in apricots and season with ginger, cumin, and allspice. Cook for 1 minute until spices are fragrant.
  • Pour beer into pan, scraping the bottom of the pan to dissolve the browned bits. Add chicken, cover, and reduce heat to medium-low. Simmer gently until the chicken begins to fall away from the bone, about 30 minutes.

4 tablespoons olive oil
6 whole skinless chicken legs (drumsticks and thighs attatched)
salt and pepper
1 large onion, halved and thinly sliced
2 1/4 cups water
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups large pitted prunes

Steps:

  • In a 5 qt pot, heat 2 tbs oil over med-high heat.
  • Season chicken on all sides with salt and pepper.
  • Place 3 chicken legs in pot and cook, turning once, until browned; about 10 minutes total.
  • Transfer to plate and repeat with remaining chicken and oil. Set chicken aside.
  • Add onion and 1/4 cup water to pot and cook, stirring to loosen browned bits on bottom.
  • Add turmeric, ginger and cinnamon and cook, stirring occasionally until onion has softened, about 5 minutes.
  • Return chicken to pot. Add 2 cups water and half the prunes and bring to a boil.
  • Reduce heat, partially cover and simmer until chicken is cooked through and very tender, about 45 minutes.
  • Tranfer chicken to platter and cover tightly with foil to keep warm.
  • Add remaining prunes to pot and raise heat to high.
  • Continue to cook, stirring occasionally, until sauce has thickened, about 10 minutes more.
  • Top chicken with sauce to serve.
