PEANUT BUTTER GRANOLA BARS

Steps:
- Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
- Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
- In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
- Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
- *Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly browned, about 8 to 10 minutes.

Steps:
- Preheat oven to 350°F.
- Spray a 9-inch square pan with vegetable spray.
- Put rolled oats, raisins, bran flakes, coconut, chocolate chips, pecans, and baking soda in bowl.
- Combine until well mixed.
- In small saucepan, whisk together peanut butter, brown sugar, margarine, honey and vanilla over medium heat for approximately 30 seconds or just until sugar dissolves and mixture is smooth.
- Pour over dry ingredients and stir to combine.
- Press into prepared pan and bake for 15-20 minutes or until browned.
- Let cool completely before cutting into bars.

CRISPY PEANUT BUTTER GRANOLA BARS
I made these in the hopes of appeasing my picky 2-year old, but I'm the one who eats them! They are so good, and are a great go-to when I am craving something sweet.

Steps:
- Lightly grease a 12x8 inch baking dish. If you don't have this size, 11x7 or 13x9 will work.
- Put half of the oats in a food processor and process until it forms a powder. This is optional, but I like the texture it creates.
- Add processed oats, remaining oats, and cereal to a large bowl.
- Put dates and craisins in a food processor and process until finely chopped. Add to dry ingredients.
- In a small saucepan, heat honey until it starts to bubble. Remove from heat and whisk in the peanut butter and vanilla until well combined.
- Pour liquid over the dry mixture and stir to combine.
- Stir in chocolate chips. Be aware the chips will melt into the mix. You can freeze them ahead of time if you want them to stay whole.
- Dump mixture into the greased baking dish. Lay a sheet of waxed or parchment paper over top, then press down the mixture until smooth and even. Throw out paper.
- Allow to cool for about 15 minutes, then slice into bars while still in the dish. Chill dish for about an hour to firm up, then remove bars and place in an airtight container.

I have made this with whatever cereal that is sitting in the cupboard and it turns out great. Just be sure to use a LARGE saucepan because you need to add all the ingredients into it at the end. I didn't..ended up with it everywhere except on the cereal!

- Grease a 9-inch-square pan and set aside.
- Measure out granola into a bowl so that it is ready to go when the marshmallow mixture is ready.
- In a large saucepan: melt butter and marshmallows, stir until melted. Remove from heat.
- Add peanut butter, then granola. Stir til well combined. Put into your prepared pan. With damp hands, press mixture to even out. Cool.
- Store in an airtight container for up to 3 days.

- Beat first 5 ingredients until well blended.
- Combine oats, sugar & salt; add to peanut butter mixture and mix until sticky batter forms (about 1 minute).
- Stir in chocolate chips.

- Melt peanut butter and honey together in a saucepan over medium heat. Dissolve brown sugar into the peanut butter mixture; bring to a simmer for 2 minutes.
- Mix granola, oats, rice cereal, chocolate chips, and fruit together in a large bowl; pour peanut butter mixture over the granola mixture and fold to coat.
- Grease a cake pan. Pour the granola mixture into the prepared pan and press into a flat layer. Cool at room temperature until set, about 15 minutes before cutting into bars.

Steps:
- Preheat oven to 300 degrees.
- Line an 8 inch square baking pan with two criss-crossed rectangles of parchment paper, leaving a 2-inch overhang at opposite ends.
- In a large bowl, combine oats, almonds and cranberries.
- In a small saucepan, whisk together oil, brown sugar, peanut butter, cinnamon, salt and water over low heat until the sugar has dissolved, about 5 minutes.
- Let cool slightly; whisk in egg white.
- Pour over oat mixture; stir until moistened.
- Spread evenly in bottom of pan; smooth top.
- Bake until top is firm, about 30 minutes. Note: The firm top is your best indicator that it's ready - if it's too soft the granola will be crumbly, if it's too hard it will be too brittle.
- Let cool 10 minutes.
- Lift out of pan, using paper as handles.
- Let cool completely, cut into bars with a serrated knife.

Steps:
- Place peanut butter and nutella in microwave safe bowl and heat till melted (about 1 minute to 1 1/2 minutes).
- Pour all other ingredients in large bowl.
- Mix PB & Nutella with other ingredients and stir until well combined.
- Line a 9x13 pan with aluminum foil and then spray with cooking spray. Dump granola into 9x13 pan and spread until even and packed down.
- Chill for at least an hour. Cut into bar size portions and individually wrap in saran wrap and store in ziploc bag in fridge!
