"PEANUT BUTTER & JELLY" BREAKFAST BANANA SPLITS

Number Of Ingredients 6

2 bananas sliced through, lengthwise
1/2 cup plain Greek yogurt
1/2-1 cup raspberries (or your favorite berries or fruit)
1/2 cup granola
1/4 cup plain peanut butter
Optional: whipped topping and candy sprinkles

Steps:

  • Add each sliced banana to a bowl or dish, so each half is slightly turned out (as if to fill the sliced banana).
  • Divide the remaining ingredients, and dollop about 1/4 cup of the yogurt over each banana in two scoops.
  • Sprinkle the raspberries and granola over the bananas.
  • Warm the peanut butter in the microwave in 20-second increments, stirring until smooth and runny, then drizzle over the tops of each banana.
  • Add the whipped topping and candy sprinkles over the tops.

Number Of Ingredients 5

8 slices good quality white bread
2 tablespoons unsalted butter, room temperature
1 cup peanut butter, smooth or crunchy
1/2 cup grape jelly
2 ripe bananas, sliced

Steps:

  • Butter the bread slices on 1 side with butter and place them butter side down. Spread 4 slices with peanut butter and top with the banana slices. Spread the remaining slices with jelly and put them, jelly side down, on top of the bananas. Press them gently to flatten them slightly.
  • Place each sandwich on a preheated panini press and grill until the bread is toasted, about 5 minutes. Alternately, preheat a dry cast iron or non stick pan. Place the sandwich in the pan and weight it down with another pan or a clean brick wrapped in foil. Grill 5 minutes, turn the sandwich over, re-weight it, and grill for another 5 minutes. Serve immediately.

2 tablespoons peanut butter, preferably natural
1 banana, unpeeled
1/4 cup sugar-free vanilla ice cream (or regular low fat)
1/4 cup low-fat coffee ice cream
2 teaspoons sugar-free chocolate syrup (or regular)
1 teaspoon caramel sauce (optional)
1/4 cup fat-free whipped topping (ie. whipped cream in a can)

Steps:

  • Preheat oven to 450 degrees F.
  • Make a deep lengthwise slit in the unpeeled banana, without cutting all the way through. Use your fingers to make an opening where you cut, filling the banana with peanut butter.
  • Wrap in foil, sealing the top to form a sort of "boat". Bake for 10-15 minutes.
  • Carefully open the foil. Use a knife to cut one of the ends of the peel off. Lift whole banana out in one piece (you will probably need two utensils for this), and place in a serving bowl.
  • Scoop ice creams next to the banana and top all three with syrups and whipped cream. Serve immediately.

1 teaspoon butter, softened
1 tablespoon creamy peanut butter
2 teaspoons honey
1/2 teaspoon mini chocolate chip
1 large strawberry, thinly sliced
1/2 banana, sliced lengthwise into 3 slices
1 tablespoon pineapple jam

Steps:

  • Spread one side of each white bread slice with 1/2 tsp butter. Combine creamy peanut butter and 2 tsp honey; spread over plain side of 1 bread slice. Sprinkle with chocolate chips; tope evenly with strawberry slices and banana slices.
  • Spread pineapple jam over plain side of remaining bread slice. Carefully assemble sandwich.

A fruit wrap infused with all the great flavor of a PB&J sandwich. A favorite of mine that I made to have as a quick lunch in college. I'm thinking of trying other fruits like kiwi or blackberries in place of strawberries to see if they're just as great as this combination. Or if you're feeling more adventurous, you could try changing the type of jam.

1 Sandwich wrap
2 -4 fresh strawberries
1 banana
1 tablespoon creamy peanut butter
1 tablespoon strawberry jam
granola cereal (optional)

Steps:

  • Lay out the wrap and all the ingredients.
  • Spread the peanut butter as the first layer on the wrap, the thickness depending on your preference. Leave about a centimeter or two around the outside edges not covered.
  • Next spread the jelly on top, leaving spaces to place the strawberries.
  • Clean and slice the strawberries and place them in the gaps of jelly.
  • Sprinkle the granola over the PB&J layers on the wrap.
  • Peel the banana and place it whole near one edge of the wrap.
  • Roll the wrap up tightly around the banana and enjoy!
