Peanut butter and chocolate are a perfect pairing--and these sweet and salty peanut butter balls covered in bittersweet chocolate are sure to satisfy your craving. Make sure the balls are chilled and firm before rolling them in the chocolate. It will ensure that they do not fall apart and helps the chocolate set faster. If the chocolate thickens while you are dipping the balls, just pop it back in the microwave for 20 seconds and stir until smooth.

1 cup confectioners' sugar
1/2 cup creamy peanut butter (see Cook's Note)
4 tablespoons unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
6 ounces bittersweet chocolate, roughly chopped

Steps:

  • Beat the confectioners' sugar, peanut butter, 2 tablespoons of the butter, vanilla extract and salt in a large bowl with an electric mixer until combined and smooth. Roll the mixture into 24 equal-sized balls (about 1 teaspoon each) and place them on a small baking sheet or tray. Chill in the freezer until firm, about 15 minutes.
  • Meanwhile, heat the chocolate and the remaining 2 tablespoons butter in a small microwave-safe bowl in 20 second intervals, stirring between each with a rubber spatula, until melted and smooth.
  • Holding with two forks, dip each peanut butter ball into the melted chocolate to evenly coat. Tap off excess chocolate. Place the balls back on the baking sheet. Chill in the refrigerator until the chocolate is firm and set, about 1 hour. Serve chilled. Refrigerate extra balls in an airtight container.

1 lb cooked ham, cut 1/2 inch thick (center cut slice)
3 tablespoons orange marmalade
2 tablespoons peanut butter
1 tablespoon water

Steps:

  • Preheat broiler.
  • Slash edges of ham slice; place on broiler pan.
  • Broil 3 inches from heat for 5 minutes.
  • Turn ham slice; broil 4 to 5 minutes more.
  • Meanwhile, combine marmalade,peanut butter and water.
  • Spread over ham slice.
  • Broil 1/2 to 1 minute longer till lightly browned.
  • Garnish with fresh dill and orange slices, if desired.

My grandmother made this for special occasions. May sound strange, but remember how well peanut butter and bacon go together? Give this a try.

1 - picnic ham (spiral sliced or regular)
- peanut butter (creamy or crunchy)
- brown sugar
1 can(s) pineapple slices (optional)
1 jar(s) maraschino cherries (optional)

Steps:

  • Dry off the outside of the ham. Spread generously with the peanut butter you like. Pat brown sugar all over the peanut butter.
  • For special occasions, secure pineapple rings to ham with toothpicks with a cherry in the middle of each one.
  • Bake at 325 until it's hot all the way through. Time will vary on the size of the ham.

5 pounds ground Angus beef (preferred lean/fat content 80/20)
1 tablespoon sea salt
1 tablespoon seasoning salt
1/2 tablespoon cracked peppercorn
3 cloves fresh garlic, minced
8 ounces applewood smoked bacon
White burger buns
Creamy peanut butter
20 slices American cheese

Steps:

  • Combine the beef with the sea salt, seasoning salt, pepper and garlic. Create 10 beef balls. Place the balls individually between waxed paper and slightly press the center to create your patties. Place the patties on a lined cookie sheet, ready to be placed on the grill.
  • On the stove, fry the bacon to desired texture over medium-heat.
  • Turn your chargrill to medium-high and place the burgers on it once it is hot. Cook the first side until the edges are caramelized and browned, 3 to 5 minutes. Flip the burgers and cook for another 3 to 5 minutes. Be careful not to pierce the meat or overcook. Set aside and let them rest for another 3 to 5 minutes. Before you turn off the grill, lightly toast the white burger buns.
  • Dress each side of the white burger buns with creamy peanut butter and 2 slices American cheese. Place the burgers on top of the cheese and add the cooked bacon.

  • Place lettuce on mayonnaise, then ham, avocado, optional tomato, cheese, and pickle.
  • Spread other piece of bread with peanut butter. Sandwich together and enjoy.
  • Serving suggestions: Don't forget to add a healthy dose of BBQ potato chips to the sandwich. ;o).
