2 large bananas (mashed)
1 cup peanut butter (can sub for another nut butter or nut free alternative)
1/4 cup coconut oil
1 tablespoon Cinnamon (optional)

Steps:

  • Line a 12 count muffin tray with muffin liners and set aside.
  • In a large mixing bowl, add your mashed bananas and set aside.
  • In a microwave safe bowl or stovetop, melt your coconut oil with your nut butter. Pour into the mixing bowl and stir through the mashed banana until fully incorporated.
  • Divide mixture amongst muffin tins and refrigerate or freeze until firm.v

These easy no bake oatmeal cookies are just 3 ingredients and make a healthy snack. They don't require any cooking or baking and don't contain flour, oil, eggs or added sugar.

1/2 cup (128 g) unsweetened natural creamy peanut butter
6 tbsp (88 g) banana puree
1 cup (88 g) quick oats

Steps:

  • Line a large cookie sheet with parchment paper.
  • Add all three ingredients to a large mixing bowl. Stir and mix with a spatula until ingredients are thoroughly combined, oats are fully coated, and mixture turns into a thick dough. The mixture will initially be liquidy but as you continue to stir and incorporate the banana and oats, the mixture will thicken. Continue to mix until it forms a thick dough. If using any mix-ins, fold them in now.
  • Using a 1.5 tbsp cookie scoop, scoop cookie dough. Release dough ball into your hand and press dough ball between the palms of your hands to compress the ball further. Roll ball between hands to form a round ball. Place round ball onto prepared baking pan. Press down on dough ball with hand to form a thick round disk. If dough cracks around the edges you can smooth and reshape as needed. Cookies should be about 1/2 inch thick. Do not spread cookie dough out too thin because it will make the cookies less sturdy.
  • Cookies can be enjoyed right away but I recommend placing them in the fridge for about 30-60 minutes. This will firm up the cookies further and will also give the oats time to soften. Store uneaten cookies in the fridge in an airtight container.

¾ cup butter
¾ cup milk
½ teaspoon vanilla extract
1 ½ cups peanut butter

  • In a saucepan over medium heat, combine sugar, butter and milk. Bring to a rapid boil and boil for one full minute. Remove from heat and stir in the vanilla and peanut butter. Mix in the oats, stirring until the mixture begins to cool. Transfer to a large bowl if it does not fit into the pan well. Drop batter by teaspoonfuls onto waxed paper. Let cool until set.

2 cups white sugar
1/2 cup milk

3 cups quick cooking oats

Steps:

  • In a medium saucepan, bring the cocoa, sugar, milk and butter to a boil over medium heat. It's important to bring these to a boil verrrrry slowly. Once they reach a rolling boil, boil for 60 seconds. Use a timer!
  • Pull the saucepan off the heat after boiling. Add in the oats, peanut butter and vanilla. Mix well.
  • Allow the mixture to cool for 1 minute and then drop by teaspoonfuls onto wax paper. Once cookies are placed on wax paper, allow them to cool until hardened.
  • Enjoy!

Hi, I think this is the easiest and best peanut butter fudge ever! It is smooth and it is kinda on the softer side, but it is wonderful. I prefer to spread it out onto a greased cookie sheet for easier cutting.

  • Remove from heat.
  • Add the vanilla.
  • Beat in the powdered sugar until smooth.

I had made chocolate no-bake cookies for YEARS but had never heard of peanut butter no bake cookies. So delicious that my choco-holic daughter likes them better than the chocolate variety! No. of servings depends on how big you make the cookies. Prep time depends on how fast you are scooping the cookies onto the wax paper covered newspaper! (You get better w/ practice! :D )

1 large ripe banana
2/3 cup butter or 2/3 cup margarine
2 teaspoons vanilla extract
2 1/2 cups rolled oats
1/2 cup packed brown sugar
1 cup semi-sweet chocolate chips
1/2 cup peanut butter

Steps:

  • Finely chopped banana (1-1/4 cups).
  • Melt butter in large skillet over medium heat; stir in vanilla.
  • Add oats and brown sugar.
  • Heat and stir 5 minutes.
  • Set aside 3/4 cup oat mixture.
  • Press remaining oat mixture into greased 9-inch square baking pan.
  • Sprinkle banana over crust.
  • Melt chocolate chips and peanut butter together over low heat.
  • Pour and spread over banana.
  • Sprinkle with reserved oat mixture; press down lightly.
  • Chill 2 hours before cutting.
  • Store in refrigerator.
