When chef Michael Solomonov and his business partner Steve Cook develop recipes for their Philadelphia restaurants (including Zahav, Abe Fisher and K'Far), they often start by talking about their mothers. "Someone will say, 'Oh wait, my mom makes it like this. Let me get her recipe,' " Michael says. Steve's mom, Susan, provided the dough recipe for these hamantaschen - traditional triangular jam-filled cookies that show up on their menus for the Jewish holiday of Purim. It's a pretty classic recipe, with a few exceptions: Susan adds brown sugar and maple extract to her version. 2 sticks unsalted butter, at room temperature
1 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
3 tablespoons whole milk
1 teaspoon pure vanilla extract
1/4 teaspoon maple extract (optional)
3 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 12-ounce jar apricot preserves

Steps:

  • Make the dough: Beat the butter, both sugars, the egg, milk, vanilla and maple extract (if using) with a mixer on medium-high speed. Add the flour, baking powder and salt and beat until fully incorporated.
  • Divide the dough into thirds and wrap each portion tightly in plastic wrap. Refrigerate at least 4 hours or overnight.
  • Form the hamantaschen: Position racks in the upper and lower thirds of the oven and preheat to 375˚ F. Roll out one piece of dough on a floured surface until 1/8 inch thick. Use the rim of a juice glass to cut out 3-inch circles. Repeat with the remaining dough.
  • Spoon a teaspoon of the apricot preserves into the center of each circle of dough.
  • Fold in the edges of the dough to form a triangle, pinching at the corners to keep the filling in but leaving the center filling slightly exposed.
  • Bake the hamantaschen: Arrange the hamantaschen on 2 baking sheets (use nonstick pans or line the pans with parchment paper).
  • Bake, rotating and switching the pans halfway through, until the hamantaschen are lightly browned, 8 to 10 minutes.
  • Let cool a few minutes on the baking sheets, then remove to a wire rack and let cool completely.

Here is a twist on the classic hamentashen cookie eaten on the Jewish holiday of Purim. Instead of filling this triangular-shaped cookie with jam or poppy seeds, I used brownie batter. Absolutely delicious!

3 eggs
1 cup white sugar
¾ cup vegetable oil
⅓ cup apple juice
1 tablespoon lemon juice
1 tablespoon vanilla extract
1 tablespoon baking powder
5 cups all-purpose flour
1 (19.8 ounce) box brownie mix
2 eggs
¼ cup water
½ cup vegetable oil
1 egg
1 tablespoon water

Steps:

  • Beat the eggs and sugar until creamy. Stir in the vegetable oil, apple juice, lemon juice, and vanilla extract. Mix the baking powder into the flour and add it to the egg mixture, stirring to form a dough. Wrap the dough in plastic and refrigerate for 3 hours or overnight.
  • Prepare the filling: combine the brownie mix, eggs, water, and vegetable oil and mix well. (You can also follow the package directions and use the low-fat version, if desired). Refrigerate the brownie batter for 3 hours or overnight.
  • Remove the cookie dough from the refrigerator and let it rest at room temperature for 30 minutes. Mix the egg and tablespoon of water to make an egg wash.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Roll out half the dough on a long piece of parchment paper into a rectangle about 1/4 inch thick. Use a large round cookie cutter to cut circles in the dough. Remove the scraps of dough from around the circles.
  • Using two spoons, place 1 tablespoon of chilled brownie batter in the center of each cookie dough circle. Brush the edges of the cookie circles with egg wash.
  • Fold the cookie into a triangular shape, bringing the edges up so they partially overlap the brownie filling. Pinch the corners to seal the dough. Brush the hamentashen with egg wash. Repeat with the remaining circles and the other half of the dough.
  • Transfer the parchment paper holding the cookies onto a baking sheet. Bake in the preheated oven until the bottoms of the cookies are light golden brown, about 10 minutes.

6 ounces melted chocolate, slightly cooled
2 sticks (1 cup) butter or margarine
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla excract
1 teaspoon baking soda
1 teaspoon baking powder
¾ cup cocoa powder
2½ cups flour
for the filling:
1 stick (1/2 cup) butter or margarine
1 cup creamy peanut butter
1 cup confectioner's sugar

Steps:

  • Preheat oven to 350. Line a cookie sheet with parchment paper and set aside.
  • Melt the chocolate (preferably double boiler style) and set aside to cool slightly while starting the dough.
  • In the bowl of an electric mixer, beat together the margarine and sugars on a medium speed, until creamy.
  • Add the eggs, vanilla, baking soda, baking powder and melted chocolate and beat until combined.
  • Turn the mixer to low, and add the cocoa powder and flour, slowly, and mix until just combined. The texture will be of a stiff dough.
  • To make the filling: combine all ingredients until smooth. (It may be easiest to do this with a mixer, but you can definitely do it by hand as well.)
  • To assemble the hamantaschen: Lightly flour a work surface, and roll out the dough to about ⅛ of an inch thickness. (A little thicker is fine, but if the dough is too thick it will be hard to shape.)
  • Cut circles of the dough using a circle cookie cutter or the bottom of a glass. Place about a half a teaspoon of the peanut butter filling in the center. Do not overfill.
  • Bring the three sides of the circle together to form the hamantaschen shape. Pinch the edges together tightly.
  • Place the hamantaschen on the tray and repeat with remaining dough and filling. Leave a bit of room between the hamantaschen to allow for spreading.
  • Bake the hamantaschen at 350 for 10 minutes.

225g crunchy peanut butter
200g bar dark chocolate, broken into pieces
280g soft light brown sugar
3 medium eggs
100g self-raising flour

Steps:

  • Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C/160C fan/gas 4 and line a 20cm square baking tin with baking parchment. Gently melt remaining peanut butter, chocolate and all the sugar in a pan, stirring occasionally, until the sugar has just about melted. Transfer mix into a bowl to cool down slightly. Turn off heat and use a wooden spoon to beat in the eggs one by one. Stir in the flour and scrape into the tin.
  • Melt reserved peanut butter in the microwave on High for 45 secs, or in a pan, until runny, then drizzle over the brownie. Bake for 20-25 mins until it has a crust, but the middle still seems slightly uncooked.
  • Melt reserved chocolate, drizzle over the brownie, then cool in the tin before cutting into squares.

Hamantaschen cookies are popular treats for the feast of Purim, which joyfully celebrates the Jews' deliverance from the detested Haman. Make sure the cookie dough is well chilled before you roll it out so it won't stick to your rolling pin or counter and tear.

1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups granulated sugar
2 teaspoons grated orange zest
2 tablespoons freshly squeezed orange juice
2 teaspoons pure vanilla extract
3 large eggs
4 cups all-purpose flour, sifted
4 teaspoons baking powder
1/2 teaspoon salt
1 cup poppy seeds
1/2 cup milk
1/4 cup plus 2 tablespoons honey
1/4 cup golden raisins
1/2 teaspoon grated lemon zest

Steps:

  • In the bowl of a heavy-duty mixer fitted with the paddle attachment, cream together butter and sugar on medium speed until light in color and fluffy, 3 to 4 minutes. Add orange zest, orange juice, vanilla extract, and 2 eggs, one at a time, scraping down the sides of the bowl when necessary
  • Sift together flour, baking powder, and salt. With the mixer on low speed, slowly add to butter mixture until just combined. Divide dough into thirds. Wrap tightly in plastic, and refrigerate for at least 1 hour.
  • Heat oven to 350 degrees. Remove one-third of the dough from the refrigerator at a time. On a liberally floured surface, roll dough to a 1/8-inch thickness. With a 3-inch fluted round cutter, cut out as many circles as possible, and place on a prepared baking pan. Chill until firm, about 30 minutes.
  • Meanwhile make the poppy-seed filling: Grind poppy seeds in a food processor. Place seeds in a medium saucepan. Add milk and honey. Cook over a medium-low heat until thickened, stirring occasionally, about 20 minutes. Add raisins and lemon zest. Remove from heat. Cool completely before using.
  • Remove chilled circles from refrigerator. Place each filling into a medium pastry bag fitted with a coupler. Pipe 2 teaspoons of filling into the center of each circle. Whisk together remaining egg with 1 teaspoon of water. Brush edges with egg wash. Fold in sides to form a triangle. Pinch dough to enclose the filling.
  • Bake the cookies in the center rack of the oven until golden, 12 to 15 minutes. Cool cookies on baking sheets for 5 minutes; then transfer to wire racks to cool completely.

My most-requested dessert recipe. Moist brownie bottom topped with a thick peanut butter filling and topped off with a chocolate glaze. Please watch the brownies carefully and remove from the oven when toothpick comes out with moist crumbs clinging to it. If your toothpick comes out completely clean then they are overbaked and you will end up with a "cake-like" brownie. Glass pyrex baking pans have yielded the best results in my experience. Note: This recipe doubles beautifully!

2 ounces unsweetened high quality chocolate
1/2 cup unsalted butter
2 eggs
1 cup sugar
1/2 cup flour
1/2 teaspoon kosher salt
1 teaspoon pure vanilla extract
1/2 ounce semisweet chocolate (1/2 square)
1 1/2 cups powdered sugar
1/2 cup creamy peanut butter
1/4 cup unsalted butter, softened
2 -3 tablespoons heavy whipping cream
1 ounce semisweet baking chocolate
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Preheat oven to 350.
  • In a small saucepan, melt unsweetened and semisweet chocolates with butter over low heat, set aside to cool slightly.
  • In a mixing bowl, beat eggs and sugar until light and pale colored. Mix in 1 tsp vanilla.
  • Add flour, salt and melted chocolate.
  • Stir to combine.
  • Pour into a greased 9 in square baking pan.
  • Bake at 350 for 20 - 25 minutes or until brownies test done with toothpick coming clean but with moist crumbs clinging to it.
  • Do not overbake.
  • Cool.
  • For filling, add peanut butter and butter in a mixing bowl and mix until thoroughly combined and smooth. Note: You will get a much taller filling (as pictured) if you whip this with an electric mixture to incorporate lots of air.
  • Slowly add powdered sugar, mixture will be a bit crumbly.
  • Blend in cream until mixture is fluffy and reaches desired spreading consistency.
  • Spread over cooled brownies, cover and chill until firm.
  • For glaze, melt chocolate and butter in saucepan, stir until smooth.
  • Drizzle over the filling.
  • Chill well before cutting.
  • Let sit at room temperature for 10 - 15 minutes before serving.
  • You don't want to serve these ice cold out of the refrigerator.
