1/2 cup creamy peanut butter
4 tablespoons unsalted butter, room temperature
1 cup packed light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup granulated sugar, for rolling dough
36 mini chocolate peanut butter cups, chilled and unwrapped

Steps:

  • Preheat oven to 350 degrees. Using an electric mixer, cream peanut butter and butter in a mixing bowl until smooth. Add brown sugar; beat until combined, scraping down bowl as needed. Add eggs and vanilla, and beat until incorporated.
  • In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in 2 batches.
  • Scoop off dough by the tablespoon; roll into balls. Place granulated sugar on a plate; roll balls in sugar, coating completely. Place 2 inches apart on a nonstick insulated baking sheet.
  • Bake until cookies begin to puff up slightly, about 7 minutes. Remove from oven. Press one peanut butter cup in center of each cookie. Return to oven; continue baking until cookies are golden brown and chocolate has begun to melt, about 6 minutes more. Let cool at least 10 minutes on baking sheet before transferring cookies to rack to cool completely.

Nonstick cooking spray, for the muffin tin
1 cup creamy peanut butter
2/3 cup granulated sugar
1/3 cup packed light brown sugar
1/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
1 large egg
Coarse sanding sugar, for rolling
12 full-size peanut butter cups
1/4 cup chopped honey-roasted peanuts

Steps:

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
  • Beat the peanut butter, granulated sugar, light brown sugar and salt in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the vanilla and egg on high until the dough comes together in a mass.
  • Pour some sanding sugar in a small bowl. Form the dough into 12 balls and roll to coat in the sugar. Put a dough ball in each muffin cup. Press the dough about 1/2 inch up the sides to make a shell. Fit a peanut butter cup into each dough shell. Bake until the edges of the cookies are set and golden, 10 to 12 minutes. Remove the tin to a cooling rack, then immediately top the peanut butter cups with a sprinkling of the peanuts. Cool 15 minutes, then remove the cookies to the wire rack to cool completely.

3 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
1 cup white sugar
1 cup packed brown sugar
1 cup butter, softened
1/2 peanut butter
2 teaspoons vanilla extract
2 eggs
2 tablespoons sour cream
1 1/2 cups peanut butter
1 1/2 cups powdered sugar

Steps:

  • Mix together flour, cocoa, & baking soda in small bowl.
  • In large mixing bowl, beat butter, both sugars, & 1/2 cup peanut butter until light. Blend in vanilla, eggs, & sour cream.
  • Mix dry ingredients in with wet, and set aside.
  • In separate bowl, mix together powdered sugar & 1 1/2 cups peanut butter.
  • Roll filling into 1-inch balls. Alternatively, you can chill filling slightly, roll into a long cylinder, and slice.
  • Take small amount of dough, about twice the size of a filling ball (1 1/2 - 2 tbsp), and form a little cup. Put a filling ball inside, and pinch the dough-cup shut.
  • Place filled dough-balls about 2 inches apart on non-stick cookie sheet.
  • Flatten the balls with the bottom of a glass dipped in sugar.
  • Bake in preheated 375 deg. F for 7-8 minutes.
  • Let cool on cookie sheet for 3 minutes, then cool the rest of the way on wire rack.

1 (11 ounce) bag hershey's peanut butter kisses, unwrapped
1/2 cup butter or 1/2 cup margarine, softened
1/2 cup peanut butter (creamy or crunchy)
1/2 cup sugar
2 tablespoons light corn syrup
1 egg
1 teaspoon vanilla extract
1 1/4 cups flour
1 teaspoon baking soda
1/8 teaspoon salt
granulated sugar, for rolling

Steps:

  • Beat butter and peanut butter in large bowl until light and fluffy.
  • Add sugar, corn syrup, egg and vanilla; blend well.
  • Stir together flour, baking soda and salt add to peanut butter mixture, blending well.
  • Heat oven to 350 degrees.
  • Shape dough into about 30 (about 1 1/4") balls.
  • Press a kiss into each ball, covering completely with dough; reshape into balls and roll in granulated sugar.
  • Place on ungreased cookie sheet and bake for 10-12 minutes, or until golden brown around edges.
  • Cool slightly on cookie sheet; then cool completely on wire racks.
  • Set aside 30 kisses and place remaining ones in a heavy duty resealable plastic food storage bag.
  • Microwave at 50% for 1 minute and knead. If necessary, microwave at 15 second intervals, kneading after each heating until chocolates are melted and smooth.
  • Cut small piece from corner of bag and drizzle chocolate over cookies.
  • Place a kiss in the center of each cookie.

1/2 cup butter
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon real vanilla
1 3/4 cups flour

Steps:

  • Cream butter, peanut butter & sugars.
  • Add egg and vanilla.
  • Add your dry ingredients.
  • Mix until blended.
  • Shape into 1 inch balls and place in ungreased mini muffin pans.
  • Bake at 350 degrees for 8-10 minutes or until top dents inches.
  • Take out of oven, leave in pans and press a peanut butter cup in the center of each.
  • Let cool in pan 4-5 minutes.I let them cool even longer to make sure they keep their cup-shape.
  • Remove and let finish cooling on rack or wax paper.
  • When removing from pans, use a small butter knife to pop out cookies.
  • The chocolate will melt slightly, but will keep in place by the surrounding cookie.

½ cup margarine, softened
½ cup peanut butter
½ cup white sugar
½ cup light brown sugar
1 egg
1 ¼ cups all-purpose flour
½ teaspoon baking powder
⅔ teaspoon baking soda

1 (8.75 ounce) bag chocolate covered creamy caramel candies
¼ cup white sugar for decoration

Steps:

  • In a large bowl, cream together the margarine, peanut butter, 1/2 cup white sugar and brown sugar until smooth. Beat in the egg. Combine the flour, baking powder, baking soda and salt; stir into the peanut butter mixture. Cover and chill dough until firm, about 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Roll chilled dough into 1 inch balls. Press a caramel candy into the center of each ball so that it is completely covered with dough. Roll balls in remaining sugar and place 2 inches apart onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until set. Cool on baking sheets for 2 minutes before removing to wire racks to cool completely.

2 cups all-purpose flour
1/2 cup Dutch-process cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 pound (1 stick) unsalted butter, room temperature
1/2 cup solid vegetable shortening
1/2 cup granulated sugar
1 1/4 cups firmly packed light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter

Steps:

  • Preheat oven to 350 degrees. Line 2 baking sheets with Silpats (French nonstick baking mats). Sift together flour, cocoa powder, baking powder, and baking soda, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter, vegetable shortening, granulated sugar, and 1 cup brown sugar on medium speed until light and fluffy, about 2 minutes. Add eggs, one at a time, mixing until fully combined between additions. Add vanilla; beat to combine. Gradually add dry ingredients; mix on low speed until fully combined. Add chocolate chips; mix on low just until combined. Cover bowl with plastic wrap; chill until firm, about 1 hour.
  • In a small bowl using a rubber spatula, stir together peanut butter and remaining 1/4 cup brown sugar.
  • Drop 1 tablespoon of dough at a time onto baking sheets, spacing cookies about 2 inches apart. Make a thumbprint in the center of each cookie. Fill thumbprint with 2 teaspoons peanut butter mixture. Top with a second tablespoon of flattened dough. Carefully mold dough to cover the surprise.
  • Bake until firm, about 12 minutes, rotating halfway through. Transfer baking sheets to wire racks to cool for 5 minutes. Remove cookies from baking sheets, and let cool completely on wire racks.
