1 stick unsalted butter, cut into pieces
4 ounces unsweetened chocolate, chopped
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 large eggs
1/2 cup all-purpose flour
1/2 cup creamy peanut butter
1/4 cup plus 2 tablespoons confectioners' sugar
1/4 cup plus 2 tablespoons heavy cream
4 ounces semisweet chocolate, chopped
Coarse gold sugar, for decorating (optional)

Steps:

  • Preheat the oven to 350 degrees F. Line a 24-cup mini muffin pan with paper liners; coat with cooking spray. Melt the butter and unsweetened chocolate in a heatproof bowl set over a pot of simmering water, stirring, until smooth. Whisk in the granulated sugar, vanilla and salt until combined; remove the bowl from the pan. Stir in the eggs, one at a time. Add the flour and beat with a wooden spoon until the batter is shiny, about 1 minute.
  • Divide the batter among the prepared muffin cups. Bake until a toothpick inserted into the center comes out clean, about 17 minutes.
  • Meanwhile, make the filling: Whisk the peanut butter, 1/4 cup confectioners' sugar and 2 tablespoons heavy cream in another heatproof bowl set over the pot of simmering water until smooth, about 2 minutes. Transfer to a pastry bag fitted with a small round tip.
  • Let the brownies cool 5 minutes in the pan; make an indentation in the center of each with a teaspoon. Pipe the filling into the indentations.
  • Make the glaze: Combine the semisweet chocolate and 2 tablespoons cream in a heatproof bowl set over the simmering water. Let sit 3 minutes, then stir until smooth. Stir in the remaining 2 tablespoons confectioners' sugar. Slowly stir in the remaining 2 tablespoons cream until pourable. Spoon over the brownies; top with the coarse sugar. Chill until set, 30 minutes.

4 tbsps. Crisco® Butter Flavor All-Vegetable Shortening, divided
or 4 tbsps. Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening, divided
3/4 cup graham cracker crumbs
1/4 cup powdered sugar
1 cup milk chocolate chips

Steps:

  • LINE 9-inch pie plate with foil.
  • COMBINE peanut butter, 2 tablespoons shortening, graham cracker crumbs and powdered sugar. Mix well. Mixture will be stiff.
  • MELT chocolate chips and 2 tablespoons shortening in small saucepan over very low heat, stirring constantly or microwave in microwave-safe bowl for 30 seconds. Stir and repeat until smooth. Pour half the melted chocolate mixture into prepared pie plate. Spread chocolate about 1/2-inch up sides. Place in freezer for 10 minutes or until set.
  • REMOVE from freezer. Spread peanut butter mixture over chilled chocolate layer. Pour remaining melted chocolate over peanut butter layer, spreading to edges. Place in freezer or refrigerator until set. Cut into bite-size pieces. Store in refrigerator.

2 cups milk chocolate chips
2 tablespoons shortening
½ cup butter
½ cup crunchy peanut butter
1 cup confectioners' sugar
⅔ cup graham cracker crumbs

Steps:

  • In 1-quart saucepan combine chocolate chips and shortening. Cook over low heat, stirring occasionally, until melted and smooth (3 to 5 minutes).
  • Loosen top paper cup from stack, but leave in stack for greater stability while being coated. With small paint brush, coat inside top cup evenly with about 1 teaspoon melted chocolate to about 1/8-inch thickness, bringing coating almost to top of cup, but not over edge. Repeat until 30 cups are coated; refrigerate cups.
  • In 2-quart saucepan combine butter or margarine and peanut butter. Cook over medium heat, stirring occasionally, until melted (4 to 6 minutes). Stir in confectioners' sugar and graham cracker crumbs. Press about 1/2 tablespoon filling into each chocolate cup.
  • Spoon about 1/2 teaspoon melted chocolate on top of filling; spread to cover. Freeze until firm (about 2 hours) carefully peel off paper cups. Store refrigerated.

2 cups cookie crumbs
2 1/2 cups confectioners' sugar
1 cup chunky peanut butter
8 ounces milk chocolate

Steps:

  • Line an 8 inch square pan as follows: Turn the pan over, cover with a 12 inch square of aluminum foil shiny side down, fold down the sides and corners to shape the foil, remove the foil, turn the pan over again and place the foil into the pan, pressing it carefully to fit smooth.
  • Set aside.
  • In the large bowl of an electric mixture (or any large bowl with a wooden spatula), mix the butter with the cookie crumbs, sugar and peanut butter.
  • Turn into the lined pan.
  • With the bottom of a teaspoon, smooth the mixture to make an even layer.
  • Let stand at room temperature.
  • Break up the chocolate and melt in the microwave or on top of a double boiler.
  • Stir until completely melted and smooth.
  • Pour the chocolate on to the peanut butter layer.
  • With the bottom of a teaspoon smooth all the chocolate over the bottom layer, touching the sides of the foil.
  • Refrigerate for an hour (or longer), until firm.
  • Lift the candy from the pan by lifting the aluminum foil.
  • Place the candy, still on the foil, on a cutting board.
  • Fold down the sides of the foil and let stand.
  • If you cut this into squares while cold it will crumble.
  • Let it stand for about an hour, then cut into 32 small squares.
  • Serve at room temperature.
