2 sticks butter (1 cup, melted)
1 1/2 cups powdered sugar
1 cup creamy peanut butter
2 cups graham crackers (crushed)
1/2 cup creamy peanut butter
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Spray a 9 x 13 pan with cooking spray. Set aside.Add butter, powdered sugar, 1 cup peanut butter and graham cracker in a large bowl. Mix to combine.
  • Layer into the prepared pan.
  • Add the 1/2 cup of peanut butter and chocolate chips to a small bowl. Microwave in 15 second intervals until fully melted.
  • Pour onto of the peanut butter layer and smooth with a rubber spatula.
  • Place in the refrigerator to firm up for an hour.
  • To serve, cut into squares and enjoy!

These no-bake chocolate peanut butter bars are incredibly decadent and made from only 5 ingredients.

1/2 cup (115g) salted butter, melted*
1 cup (85g) graham cracker crumbs (about 8 full sheet graham crackers)
2 cups (240g) confectioners' sugar
1 cup + 2 Tablespoons (280g) creamy peanut butter, divided
1 cup (180g) semi-sweet chocolate chips

Steps:

  • Line an 8×8 or 9×9 inch square baking pan with aluminum foil or parchment paper. Set aside.
  • Mix the melted butter, graham cracker crumbs, and confectioners' sugar together in a medium bowl. Stir in 1 cup (250g) of peanut butter, then press evenly into prepared baking pan.
  • Melt remaining 2 Tablespoons of peanut butter with the chocolate chips in the microwave or on the stove. Stir until smooth. Spread over peanut butter layer.
  • Chill in the refrigerator until completely firm, at least 2 hours. Allow to sit at room temperature for 10 minutes before cutting. Serve chilled. Setting them out for a few hours at room temperature for serving is OK.
  • Cover leftover bars tightly and refrigerate for up to 1 week.

22 Nabisco Chocolate Wafers, finely crushed (or about 1⅔ cups crumbs), from 1 box
¼ cup sugar
3 tablespoons unsalted butter, softened
2 tablespoons creamy peanut butter (I like Skippy Natural "No Need to Stir")
6 tablespoons firmly packed dark brown sugar
2 cups Confectioners' sugar
6 tablespoons unsalted butter, softened
1⅓ cups creamy peanut butter
Pinch salt
1 (11.5 ounce bag) milk chocolate chips (preferably Ghirardelli or similar quality)
6 tablespoons heavy cream

Steps:

  • Preheat the oven to 375°F and spray a 9-inch square baking pan with non-stick cooking spray.
  • Make the crust: Combine the chocolate wafers, sugar, butter and peanut butter in the bowl of a food processor fitted with the blade attachment and pulse until the cookies are finely crushed. Press the mixture firmly into the prepared baking pan (I spread it with my hands first, then use the bottom of a measuring cup to even it out). Bake for 8 minutes. Set on a rack to cool completely.
  • In the meantime, make the peanut butter filling: Combine all of the filling ingredients together in the bowl of a mixer fitted with the paddle attachment and mix at low speed until just combined (do not whip). Set the bowl in the refrigerator while you prepare the rest.
  • Make the chocolate ganache topping: Combine the milk chocolate chips and heavy cream in a microwave safe bowl and cook in the microwave at medium power (50%) for 1 minute. Stir until the bowl no longer feels warm. Continue heating at 15-30 second intervals, stirring until chocolate is smooth and melted. Do not overheat.
  • Put it all together: Spread about ¼ cup of the chocolate mixture evenly over the cooled crust; place the pan in the freezer until the chocolate is set, 5-10 minutes. Spread the peanut butter mixture into an even layer over the chocolate (if it's firm, you can use your hands; if it's soft, use a butter knife or an offset spatula). Give the chocolate ganache a quick stir to smooth any lumps, then spread it evenly over top of the peanut butter layer. Cover the pan with plastic wrap and place in the freezer for 1 hour to set (or, if you're not in a hurry, you can just leave it in the refrigerator for a few hours). When firm, use a sharp knife to cut into squares (make them small as they are very rich!). Run an offset spatula underneath the bars to release the crust so it doesn't crumble. Keep refrigerated and serve cool.
  • Freezer-Friendly Instructions: These can be frozen tightly covered for up to 3 months. Let them thaw overnight in the refrigerator before serving.

4 frozen Greek yogurt chocolate ice cream bars
One 7.25-ounce bottle peanut butter hardening ice cream sauce

Steps:

  • Line a small baking sheet with parchment paper, wax paper or aluminum foil and set aside.
  • Place the cookies and cereal in a resealable plastic bag and gently crush with a rolling pin or skillet until everything is crushed and mostly gravel-sized (or crush toppings in a food processor). Place the toppings mixture in a large, shallow plate or baking dish.
  • Working with one ice cream bar at a time, pour the hardening ice cream sauce all over a bar. Use a butter knife to spread the sauce to fully coat. 1 cup Pitted Dates
2 Tbsp Cocoa or Cacao Powder
1/2 tsp Salt
1/4 cup Peanut Butter
1/4 cup Almond Flour (Oat Flour will work too)
1 cup Semi-Sweet Chocolate Chips
1 cup chopped, lightly salted Peanuts

Steps:

  • In a small pot, bring water to a boil. Place your 1 cup of pitted dates in the pot and let them boil for 5 minutes to soften up.
  • Place the boiled dates in a food processor, along with the 2 Tbsp Cocoa or Cacao Powder, 1/2 tsp Salt, 1/4 cup Peanut Butter, and 1/4 cup Almond Flour. Mix until everything is combined and smooth. You might have to stop once or twice to wipe down the sides of the food processor.
  • Now remove your mixture from the food processor, and place it onto some wax paper. Shape it into whatever size you would like your bars to be. I put mine in a Tupperware lined with wax paper that's about 3x6 inches, and ended up getting 12 bars that were roughly 1 inch each. You might want yours smaller or bigger, this part is up to you! Don't cut yet- that will happen later. Place your shaped filling in the freezer and let it firm up for 30 or so minutes.
  • Right before you're ready to take it out, melt 1 cup of Chocolate chips and chop up 1 cup of Peanuts. Remove your filling from the freezer and cut into what size and shape you would like your bars to be in. I would recommend spraying the knife with cooking spray before cutting into it for a cleaner cut.
  • Dip each bar into your melted chocolate, then roll it into the peanuts. The great thing about this is the chocolate doesn't have to look perfect- it's covered in peanuts directly afterwards. So don't spend too much time on that. Let the bars firm up again in the fridge for 10-15 minutes, they enjoy! Store any leftovers in the fridge.
