CREAM CHEESE PEANUT BUTTER COOKIES

Cream cheese adds a lovely flavor and texture to these irresistible Cream Cheese Peanut Butter Cookies.

1 & 1/4 cups (150g) all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup (57g) unsalted butter, softened
4 ounces (113g) cream cheese, at room temperature
1/2 cup (100g) granulated sugar
1/2 cup (100g) firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup (255g) creamy or crunchy peanut butter
sanding sugar, for garnish

Steps:

  • Preheat oven to 350°F. Line baking sheets with parchment paper or silicone liners.
  • Whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Using an electric mixer on medium speed, beat the butter, cream cheese, sugar, and brown sugar until light and fluffy. Add the egg and vanilla, and mix well. Mix in the peanut butter.
  • Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined.
  • Drop the dough by tablespoonfuls onto the prepared pans. Use a fork to make a crosshatch pattern on top of the cookies.* If desired, sprinkle the top of each cookie with a pinch of sanding sugar.
  • Bake 12 to 15 minutes, or until the cookies are lightly browned. Cool on the pan for 5 minutes. Then transfer the cookies to a wire rack to cool completely.

1 (12 ounce) can seamless crescent rolls
8 ounces cream cheese, room temperature
1/3 cup sugar
2 teaspoons vanilla
3/4 cup peanut butter chips (use a mixture) or 3/4 cup chocolate chips (use a mixture)

Steps:

  • Beat sugar, cream cheese and vanilla together until smooth and creamy.
  • Unroll the crescent roll sheet onto lightly floured surface. . Stretch the dough out, I use a rolling pin to do this, then trim the edges to give it a good rectangular shape. A pizza cutter is great for trimming edges of dough. Pinch together seams on pre-cut crescents if necessary.
  • Spread the cream cheese mixture over the top of the crescent sheet, leaving a gap at the edge about 1/2 inch.
  • Sprinkle your chips on top of cream cheese - press them in lightly to aid in rolling.
  • Roll the crescent sheet up tightly and wrap in cling wrap.
  • Place in freezer for at least 2 hours it won't get really solid as the cream cheese mix won't freeze hard.
  • When chilled preheat oven to 350°.
  • Line a cookie sheet with parchment paper (prevents sticking and helps in cleanup).
  • Slice the crescent roll into 1/4" slices. They won't keep the precise round shape, but that is fine!
  • Bake on prepared cookie sheet for 12 -14 minutes until crescent roll appears golden brown.
  • Cool on the parchment paper or wire rack.

8 ounce cream cheese, room temperature
1/3 cup sugar
2 teaspoon vanilla
3/4 cup mixed peanut butter chips and chocolate chips

Steps:

1 teaspoon vanilla extract
2 ¾ cups all-purpose flour
¼ cup cornstarch
¾ teaspoon salt

½ teaspoon baking powder
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream together butter and brown sugar. Beat in eggs, peanut butter and vanilla.
  • Add flour, cornstarch, salt, baking soda and baking powder. Stir in chocolate chips.
  • Roll into balls about 1 1/2 teaspoonfuls (or use cookie scoop) and place onto ungreased cookie sheets about 2 inches apart. Flatten slightly because they do not flatten much while cooking.

I love these rich, very sweet, addictive cookies. I adapted this recipe from one I found and loved on allrecipes.com. I have altered it somewhat to suit my tastes and my preferred baking techniques but this is based on the recipe known there as Aunt Cora's World's Best Cookies. Cook time is per batch, cooking one sheet at a time.

Number Of Ingredients 8

1 cup sweet unsalted butter, at room temperature
1 cup sweet creamy peanut butter (do not use reduced fat versions - I use Jiff or Peter Pan brands)
1 cup granulated sugar
1 cup brown sugar or 1 cup light muscovado sugar, packed
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F.
  • Have ready at least 2 baking sheets lined with parchment paper.
  • Cream butter until smooth.
  • Add peanut butter and both sugars and beat until combined well.
  • Add egg and beat well.
  • Stir in flour and baking soda gradually until well combined.
  • Stir in chocolate chips by hand.
  • Using a meatball scooper or a spoon, scoop out small portions of dough and drop onto parchment lined cookie sheets, leaving 2" gap between each cookie.
  • Bake for about 15 minutes or until cookies are just firm around the edges- don't overbake- if you wait until they are brown on top, they will be too hard.
  • Slide parchment sheet, cookies and all, carefully off pan and onto your counter, set a new piece of parchment paper onto your baking sheet and repeat until all dough is baked.
  • Meanwhile, as the next batch bakes, remove baked cookies from the parchment and let cool completely on wire racks.
  • Wipe off the crumbs from the old sheet of parchment and you can reuse it for your next batch.
  • These will keep about 3 days stored in a cookie tin (for crisp cookies) or an airtight plastic container (for softer cookies).

Peanut butter and mini-chocolate chips! The filling is not cooked, so its ready fairly quickly. You could easily use a prepared graham cracker crust if you like, then it would be a no-bake recipe.

1 1/4 cups low-fat graham crackers, broken into chunks (I use one sleeve)
3 tablespoons brown sugar
3 tablespoons Splenda granular
1/4 cup butter
5 ounces reduced-fat cream cheese, room temperature
3 ounces nonfat sour cream
2/3 cup peanut butter, creamy
1/2 cup powdered sugar
1/2 teaspoon vanilla
6 -8 ounces fat-free whipped topping, thawed (Cool Whip Free)
2/3-3/4 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350.
  • To make the crust: Using a food processor, crush graham crackers into tiny crumbs.
  • Add sugars and pulse until combined.
  • Add butter and pulse until mixture begins to come together.
  • Press into bottom and up sides of a 9 inch glass pie plate.
  • Bake for 8-9 minutes, remove and allow to cool to room temperature.
  • While crust is cooling, make the filling: Using stand mixture, beat cream cheese, sour cream, peanut butter, vanilla and powdered sugar.
  • Fold in Cool Whip Free and mini-chocolate chips by hand; careful not to over mix or the cool whip will lose its fluff.
  • Refrigerate for 30-60 minutes, the longer the better!
  • Remove from fridge immediately before serving.
