I have a common pancake recipe that I modify from time to time. This one tastes fantastic with warm maple or strawberry syrup. I freeze leftover pancakes and reheat in the toaster, spreading them with strawberry or raspberry jam. Yum!

1 ½ cups all-purpose flour
2 tablespoons baking powder
1 tablespoon white sugar
½ teaspoon salt
1 ¼ cups milk
1 ripe banana, mashed
⅓ cup smooth peanut butter
1 egg
1 tablespoon canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat a griddle to medium heat.
  • Whisk flour, baking powder, sugar, and salt together in a mixing bowl. Combine milk, banana, peanut butter, egg, canola oil, and vanilla extract in a separate bowl; pour into the flour mixture and whisk together until thoroughly mixed.
  • Ladle batter in 1/4 cup portions onto hot griddle. Cook until tiny air bubbles form on top, 2 to 5 minutes; flip and continue cooking until the bottoms are browned, 2 to 3 minutes. Repeat with remaining batter. Keep finished pancakes warm.

Makes enough for Mom and a few small kids.

1 ¼ teaspoons baking powder
1 teaspoon brown sugar

  • Combine flour, baking powder, brown sugar, and salt in a large bowl. Mix in the peanut butter until the texture resembles cornmeal. Add milk and vanilla; stir just until blended. Stir in the banana pieces.

These protein-rich pancakes require only a few ingredients and come together in no time. Using a super-ripe banana provides the most flavor and a natural sweetness. This style of pancake is typically made with two whole eggs per banana, but it can come across tasting strongly of egg. We found that using one whole egg and one egg white imparts the least amount of egg flavor but still gives all the structure needed to flip the pancakes. Feel free to swap the unflavored whey protein for your favorite protein powder.

1 large very ripe banana, mashed (about 1/2 cup)
2 tablespoons unflavored whey protein powder
1/2 teaspoon pure vanilla extract
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
1 large egg plus 1 egg white
Coconut oil, for brushing
Maple syrup, for serving

Steps:

  • Whisk the mashed banana, whey protein powder, vanilla, baking powder and salt in a medium bowl until combined. Whisk the egg and egg white in a separate small bowl. Whisk the eggs into the banana mixture until combined.
  • Heat a large nonstick skillet over medium heat and lightly brush with coconut oil. Pour 2 tablespoons of the batter into the skillet for each pancake and cook until just set around the edges and the bottom is lightly browned, 45 seconds to 1 minute. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden on the other side, 45 seconds to 1 minute more. Transfer to a plate. Repeat with the remaining batter, brushing with more coconut oil in between batches. Serve with syrup.

Steps:

  • Mash banana well in medium bowl.
  • Add eggs, peanut butter and baking soda and mix very well.
  • Pour by tablespoonful onto hot, non-greased skillet.
  • Allow to cook until bubbles appear on top.
  • Flip carefully.
  • Because of the sugar in the banana and the peanut butter, these pancakes turn very brown when cooked.

I make this often for my family, and there are NEVER any leftovers. It's a great way to use up over-ripe bananas and sneak a fruit and a good protein source past the kids!

2 cups nonfat milk
4 eggs or 8 egg whites
4 cups Bisquick baking mix
4 bananas, very ripe, mashed
1/2 cup peanut butter (I use creamy)

Steps:

  • Preheat oiled griddle to 350 degrees.
  • In a large mixing bowl, combine milk and eggs; mix well.
  • Add mashed bananas and peanut butter.
  • Gently stir in Bisquik mix. Batter should be thin but not runny.
  • Pour out scant 1/3 cup of batter onto griddle. (I cook 8 pancakes at a time on my electric griddle.)
  • Once edges are dry and cooking side is golden brown, turn pancake and cook on that side until golden brown.
  • Serve immediately.
  • NOTES: These freeze very well. Thaw in microwave and serve immediately.
