ROASTED POBLANO BURGER WITH PEPPER JACK CHEESE

2 lbs Ground Beef
Kosher salt
Freshly ground black pepper
2 large poblano peppers
2 Tbsp. olive oil
8 slices pepper jack cheese
½ cup chipotle mayonnaise
8 2 oz whole-grain hamburger buns
8 slices curly leaf lettuce

Steps:

  • Preheat oven to 375°F. Place poblano pepper on a baking sheet. Rub each pepper with 1 Tbsp olive oil. Season with salt and pepper. Roast in the oven until the skin of the pepper is blackened, about 15-20 minutes. Remove from the oven, place in a bowl, cover with plastic wrap and steam for 15 minutes. Remove from the bowl, peel, remove the stems and seeds and coarsely chop.
  • Preheat gas or charcoal grill to 400°F. Shape into eight ¾-inch thick patties. Season each side with salt and pepper. Make a small indention in the center of the burger with your thumb. The fire should be quite hot; you should barely be able to hold your hand 3 or 4 inches over the grates. After the coals are gray, spray grates with cooking spray or brush with oil to help keep burgers from sticking.
  • Place burgers on grill and cook about 4 minutes per side for rare, another minute per side for each increasing stage of doneness. Top each burger with a slice of cheese the last 2 minutes of cooking time.
  • Evenly spread 1 Tbsp. chipotle mayonnaise on top and bottom of each bun. Place burgers in buns and top with chopped poblano pepper and lettuce.

1/2 cup peeled garlic cloves
1/2 teaspoon vegetable oil
1 cup sour cream
1/4 cup mayonnaise
1 tablespoon vinegar
Kosher salt and freshly ground black pepper
2 poblano peppers
1/2 large white onion, quartered
1 teaspoon vegetable oil
Kosher salt
1 1/2 pounds 85/15 ground beef
1 1/2 tablespoons Worcestershire sauce
1 1/2 teaspoons ground black pepper
1 1/2 teaspoons smoked ancho chile powder
1/2 cup diced Spanish chorizo
1 1/2 cups fresh corn (cut off the cob)
1 tablespoon sherry wine vinegar
Griddled Queso Fresco and Rolls:
3/4 teaspoon vegetable oil
8 ounces queso fresco, cut into 8 slices (each about 1 inch thick)
8 French rolls, cut in half

Steps:

  • Preheat the oven to 350 degrees F.
  • For the roasted garlic sauce: Put a sheet of aluminum foil in a roasting pan and add the garlic. Toss with the oil, fold up the foil around the garlic and roast until soft, about 45 minutes.
  • For the beef patties: Toss the poblano peppers and onions with the vegetable oil and a pinch of kosher salt in a roasting pan. Cook for 30 to 35 minutes. Peel and seed the roasted peppers, then chop the peppers and onions into small dice.
  • When the garlic is done roasting, transfer to a blender, add the sour cream, mayonnaise and vinegar and blend until smooth. Season with salt and pepper. Set the sauce aside until serving.
  • Put the ground beef, Worcestershire, black pepper, ancho chile and 1 tablespoon kosher salt in a medium bowl. Fold in the diced peppers and onions. Divide the mixture into 3-ounce portions and form these portions into 8 patties.
  • Heat a griddle to medium or medium high; cook the patties to medium, about 5 minutes on each side.
  • For the corn and chorizo relish: Saute the chorizo in a skillet until lightly browned. Add the corn and cook for 5 minutes. Add the vinegar, then cook for another minute. Set aside.
  • For the griddled queso fresco and rolls: Heat a griddle to medium low. Grease the griddle with 1/2 teaspoon of the oil, then cook the cheese until golden brown, about 2 minutes on each side.
  • Grease the griddle with the remaining 1/4 teaspoon vegetable oil, then place the rolls on the griddle cut-side down until golden brown, about 2 minutes.
  • Place a burger on each roll, then spoon some of the corn and chorizo relish on top. Place a piece of griddled cheese over the relish, and top with some of the roasted garlic sauce.

2 poblano peppers
1 tablespoon vegetable oil
1/2 white onion, thinly sliced
2 cloves garlic, chopped
1/4 cup Mexican crema
4 ounces Oaxaca cheese, cubed
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter, melted
1 teaspoon chipotle chile powder
One 11-ounce package pretzel slider buns
1 pound ground beef, divided into 9 patties (1.5 to 2 ounces each)
2 plum tomatoes, sliced
1 cup cilantro leaves

Steps:

  • Roast the poblanos over an open flame or under the broiler, turning as necessary, until charred all over, about 8 minutes. Place in a medium bowl and cover with a plate to steam and loosen the skin, about 5 minutes. When cooled, peel off the blackened outer skin, remove the seeds and stems and discard. Slice the poblanos into thin strips. Set aside.
  • Set an oven rack as close as possible to the broiler. Heat the broiler to high.
  • Heat the vegetable oil in a medium skillet over medium heat until shimmering. Add the onion and cook, stirring often, until softened and translucent, about 5 minutes. Add the garlic and cook until slightly softened and fragrant, about 30 seconds. Stir in the poblanos and cook until everything is very soft, about 5 minutes. Stir in the crema and Oaxaca cheese and cook until the cheese is just melted. Reduce the heat to low, season with 1 teaspoon salt and keep warm.
  • Combine the melted butter, chipotle powder and 1 teaspoon salt in a small bowl. Split the slider buns, put on a baking sheet cut-side up and brush evenly with the butter mixture. Broil until golden around the edges, about 2 minutes. Transfer to a serving platter.
  • Place the beef patties on the baking sheet and season generously with salt and pepper. Broil to desired doneness, about 4 minutes for medium.
  • Put a patty on each bottom bun. Spoon some of the poblano sauce over each and top with a tomato slice and cilantro leaves. Close the sliders with the top buns.

TURKEY AND BLISTERED GREEN CHILE BURGER

4 cloves garlic
1 stick unsalted butter
1 large poblano pepper
Extra-virgin olive oil
1 medium red onion, julienned
1/2 large red pepper, seeds and membrane removed, julienned
1/2 large yellow pepper, seeds and membrane removed, julienned
1/4 teaspoon paprika
Kosher salt and freshly cracked black pepper
1 pound lean ground turkey (breast and thigh)
2 teaspoons Dijon mustard, plus more for serving
2 teaspoons Worcestershire sauce
1/2 teaspoon ground cumin
Pinch white pepper
Kosher salt
Olive oil
4 slices Monterey Jack cheese
4 brioche burger buns

Steps:

  • Preheat the oven to 350 degrees F. Preheat the grill to medium-high heat.
  • For the garlic butter: Place the garlic in a small saute pan and set over medium heat. Add the butter and warm through. Cook the garlic until fragrant, 4 to 5 minutes. Then place the garlic butter in the fridge to firm up again.
  • For the blistered chile: Toss the poblano with olive oil to coat. Place the pepper under the broiler or char on the grill over a direct flame until the skin blisters. When done, remove the seeds, stem and roughly chop. Reserve.
  • For the onions and peppers: Set a large saute pan over high heat. Add a drizzle of olive oil and saute the onions and bell peppers until wilted, 5 to 6 minutes. Season with the paprika and some salt and pepper.
  • For the turkey burgers: In a large mixing bowl, combine the turkey, mustard, Worcestershire, cumin, white pepper and the reserved blistered chile. Sprinkle with kosher salt. Mix gently until well combined. Form into four 4-ounce burger patties. Wipe the grill down with oil-blotted towels, and then place the burgers on the hot grill and cook for 3 to 4 minutes. Flip the burgers, top with a slice of cheese and cook until cooked through and cheese has melted, 3 to 4 minutes. Set aside and allow to rest.
  • Smear the buns with the garlic butter. Grill the buns until golden and crispy, 20 to 30 seconds on each side.
  • To build the burgers, place 1 grilled turkey burger on the bottom half of the bun. Then top with a good heaping of sauteed onions and peppers. Finish with the top half of the bun and skewer to hold all of it together. Serve with extra mustard on the side.

This is one seriously delicious cheeseburger inspired by the flavors of the Southwest, personal favorites of mine. A luscious, gooey queso sauce made with Monterey Jack cheese takes the place of sliced cheese and makes a secure bed for roasted and diced poblano chiles. Blue corn tortilla chips give the burger an unexpectedly perfect touch of salty crunch. The queso sauce would also be wonderful as a dip for chips or fries.

1 large poblano chile
2 1/2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
4 hamburger buns, split; toasted, if desired (see below)
12 blue or yellow corn tortilla chips
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 1/2 cups whole milk
8 ounces Monterey Jack cheese, coarsely grated (about 2 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the chile on a rimmed baking sheet, rub with 1 tablespoon of the oil, and season with salt and pepper. Roast in the oven until the skin of the chile is blackened, about 15 minutes. Remove the chile from the oven, place in a bowl, cover with plastic wrap, and let the chile steam for 15 minutes. Peel, stem, and seed the chile and then coarsely chop it.
  • To make the queso sauce, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk, increase the heat to high, and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the cheese until melted; season with salt and pepper. Keep warm.
  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb.   • Place the burgers on the bun bottoms and top each with a few tablespoons of queso sauce, chips, and some of the poblano. Cover with the bun tops and serve immediately.

  • I think the taste and the texture of buns are best when lightly toasted. To toast a bun on a grill, grill pan, or griddle, split the bun open, place it cut side down on the grill, and grill until light golden brown, about 10 seconds. Alternatively, you can place the split bun halves cut side up on a baking sheet and cook them under a preheated broiler until light golden brown, about 30 seconds. Keep a close eye on them and don't let them get too brown or else that texture will take on a life of its own and defeat the purpose of starting with a soft bun.

I didn't know what to make for dinner the other night so I took a look in my fridge and pantry and put this yummy burger together for dinner and make some home made steak fries to go along with it. My Husband tells me that its a new hit in the house and to take this straight to JAP! :) so here you go :) I always get so nervous when making something new, I then have to figure out the measurements in my head to give to you all since I don't use recipes, I make my recipes up !! Enjoy!

2 pound(s) beef (i used 80/20)
- hamburger buns
1 cup(s) grated monterrey jack cheese
1/2 small onion diced
3 medium poblano peppers
pinch(es) salt and pepper
2 tablespoon(s) adobe powder
1 large egg
2 tablespoon(s) worcestershire sauce
1 clove(s) garlic
- lard or butter for frying on stove top, or take to the grill
4-6 slice(s) monterey jack cheese
1 small red onion sliced (optional)
- mayo (optional)

Steps:

  • pre heat grill to 450* or add lard or butter to a med-large frying pan. (Medium heat)
  • Peppers: Fry peppers in a medium pan with lid with oil or lard, until skins are blackened and peppers have doubled in size, remove from heat and let sit, Cool on paper towels. Once cooled, remove skins with the backside of a knife. Slice into strips(topping) and Diced to add to burger.
  • Mix together, beef,onion (diced), grated cheese S&P,Adobe,egg garlic,Worcestershire, and One - two peppers (keep the seeds if you like heat, otherwise discard) Add to grill or frying pan.
  • Divide the meat mixture into 4-6 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb.
  • cook to desired degree of doneness, I personally would NOT eat Ground beef other than Cooked thoroughly.
  • Add slices of cheese and more poblano peppers. Set aside on a plate and grill buns (Optional)
