Using only a few simple ingredients, these peanut butter balls come together in a snap. Follow the recipe closely and review the chocolate dipping success tips and video tutorial above, as well as the recipe notes below before beginning.

1/2 cup (1 stick; 115g) unsalted butter, softened to room temperature
1 cup (250g) creamy peanut butter (not natural style)
1/2 teaspoon pure vanilla extract
1/8 teaspoon salt
3 cups (360g) confectioners' sugar
three 4-ounce semi-sweet chocolate bars (339g), coarsely chopped*
1 teaspoon vegetable oil
optional: sprinkles

Steps:

  • Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium-high speed in a large bowl until creamy and smooth, about 2 minutes. Add the peanut butter and beat until combined, about 1 minute. Add the vanilla extract, salt, and confectioners' sugar and beat on low for 2 minutes until everything is combined. The mixture is supposed to be a little soft, yet very crumbly. (Don't worry, the warmth of your hands will bring it together.)
  • Roll peanut butter dough into 1-inch balls (about 1 scant Tablespoon of dough each) and place on the baking sheet. Keep working and rolling the dough in your hands until the peanut butter balls come together. You should have about 32-35 balls total.
  • Cover and chill the shaped peanut butter balls in the refrigerator for at least 1 hour and up to 1 day. During the last few minutes of the chilling time, begin melting the chocolate and oil together. You can melt it in a double boiler or the microwave. If using the microwave: place the chocolate and oil in a medium heat-proof bowl. I recommend using a liquid measuring cup because its depth makes dipping really easy. Melt in 20 second increments in the microwave, stirring after each increment until completely melted and smooth. Let the warm chocolate sit for 5 minutes to slightly cool before dipping.
  • Remove peanut butter balls from the refrigerator. Working with 1 at a time, submerge into the chocolate, then carefully lift out using a fork or the spiral candy dipping tool. Tap the fork/tool gently on the side of the bowl/measuring cup to rid excess chocolate. If you used a fork, use a toothpick or a 2nd fork to help you slide the ball off of the fork and onto the baking sheet. If you used the dipping tool, just invert the ball onto the baking sheet. (See video tutorial above for how I do this.) If you have leftover chocolate, reheat it and drizzle on top of the truffles. Top with sprinkles, if desired.
  • Refrigerate peanut butter balls for 30 minutes or until chocolate has completely set before serving.
  • Store in an airtight container at room temperature for 2 days or in the refrigerator for up to 2 weeks.

1 teaspoon plus 1/4 cup butter, divided
1/4 cup honey
2 cups creamy peanut butter
1-1/4 cups confectioners' sugar
1 teaspoon vanilla extract
1-1/2 cups finely chopped honey-roasted peanuts or miniature semisweet chocolate chips

Steps:

  • Line an 8-in. square pan with foil; grease foil with 1 teaspoon butter., In a small saucepan, combine honey and remaining butter over medium heat; cook and stir until blended. Stir in peanut butter until smooth. Remove from heat; whisk in confectioners' sugar and vanilla. Spread into prepared pan. Refrigerate, covered, 2 hours or until firm., Place peanuts in a shallow bowl. Using foil, lift candy out of pan. Remove foil; cut candy into 64 squares. Shape squares into balls; roll in peanuts. Store between layers of waxed paper in an airtight container in the refrigerator.

2 1/2 cups softened confectioners' sugar
1 cup smooth peanut butter
5 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
Possible truffle accompaniments:
Crushed chocolate wafer cookies
A variety of crushed nuts, such as peanuts or pistachios
Miniature chocolate chips
Colored sprinkles
Confectioners' sugar
Crushed candy-coated peanut butter candies
Desiccated coconut

Steps:

  • Beat the confectioners' sugar, peanut butter, melted butter, vanilla extract and salt with an electric mixer until well combined. Roll rounded teaspoons of the mixture into round balls and place on a parchment-lined baking sheet.
  • Roll the peanut butter balls in any or all of the possible truffle accompaniments. Chill until firm, about 20 minutes. These truffles are best served very chilled.

These are my family's favourite holiday treat. Where we live the kids call them "Moose Droppings", but don't let that keep you from trying them...they are decadent! Cook time is the time it takes to dip them in the chocolate.

1/4 cup butter
2 cups powdered sugar
1 teaspoon vanilla
2 -3 cups dipping chocolate, wafers melted in a double boiler (available at most bulk food stores)

Steps:

  • Mix the first four ingredients together well.
  • Shape into 1 inch balls.
  • Dip balls into melted chocolate and place on waxed paper lined cookie sheet to set.
  • *I find the balls easier to dip when they are frozen or at least cold.
  • I make the balls one day, pop them in the freezer and take them out a few at a time to dip-- this keeps them from being too soft to dip.
  • *If you can't find dipping wafers, substitute semi-sweet chocolate chips melted with 1/3 grated parowax (yes, parowax is edible!).

12 ounces best-quality semi-sweet chocolate chips
1/2 cup heavy cream
2 tablespoons butter, cut into bits
3/4 cup chunky peanut butter
2 teaspoons vanilla

Steps:

  • In a large saucepan combine the chocolate, cream, butter and peanut butter and heat over moderate heat, stirring, until chocolate is completely melted.
  • Remove from heat and stir in vanilla and a pinch of salt.
  • Transfer to a bowl and chill for 4 hours, or until firm.
  • Form mixture by heaping teaspoons into balls and roll lightly in peanuts.
  • Chill on a baking sheet lined with wax paper for 1 hour, or until firm.
  • Keep in an airtight container, chilled, for up to 2 weeks.

1 cup whipping cream
1 lb sweet baking chocolate, very finely chopped (see note)
2 ounces sweet baking chocolate, very finely chopped
6 tablespoons natural-style peanut butter (do not use hydrogenated)
3/4 cup roasted salted peanuts
4 ounces bittersweet chocolate, in block form
Dutch-processed cocoa powder

Steps:

  • Place cream in wide, 2-quart saucepan over medium heat until it just comes to a simmer.
  • Remove from heat and immediately sprinkle milk chocolate into cream.
  • Cover and let sit 5 minutes; the heat should melt the chocolate.
  • Stir very gently until smooth.
  • Stir in peanut butter until well blended.
  • Pour mixture into shallow bowl and cool to room temperature.
  • Cover with plastic wrap and allow to sit, preferable overnight, until firm enough to roll. (Or refrigerate until firm, about 4 hours).
  • Chop peanuts finely.
  • Grate bittersweet chocolate on largest holes of box grater.
  • Toss peanuts and chocolate together in medium, bowl.
  • Coat your hands with cocoa powder and roll ganache into 3/4 to 1 inch balls.
  • Toss truffles in chocolate-peanut coating (you may have to press the coating onto the truffles).
  • Place in fluted paper cups, if desired, and serve at room temperature.
  • NOTE: Chocolate is called milk couverture chocolate or use confectionary coating.

1 1/2 cups sifted powdered sugar
1/2 cup creamy peanut butter
3 tablespoons butter or 3 tablespoons margarine, softened
1 lb dipping chocolate or 1 lb confectioner's coating

Steps:

  • Stir together powdered sugar, peanut butter and butter until well mixed.
  • Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet covered with waxed paper.
  • Let balls stand for 20 minutes until dry.
  • Melt the dipping chocolate or confectioners' coating.
  • Drop balls one at a time in melted chocolate.
  • Using a fork, remove from the chocolate, letting excess chocolate drip off.
  • Place back on the waxed paper.
  • Let stand until dry.
  • Store tightly covered in a cool dry place.

2 cups creamy peanut butter
½ cup butter
4 cups confectioners' sugar
3 cups crisp rice cereal
2 cups semisweet chocolate chips

Steps:

  • Melt peanut butter and butter in saucepan, over low heat. In large bowl, mix crispy rice cereal and confectioners' sugar well. Pour melted peanut butter and butter over cereal and sugar and blend together thoroughly.
  • Form into 1 inch or smaller balls, spread on cookie sheets, chill till firm in refrigerator (over night is okay).
  • Melt chocolate in double boiler and keep melted while working with balls. A teaspoon is best to use in dipping the balls in chocolate. Dip good and place on cookie sheet. As you dip them place them back on cookie sheet and keep chilled till firm.
