PATTY'S TOFU BURGERS

This is a special recipe for me. My first veggie burger from scratch! It is low cal, great tasting and easy. I make a bowl of this mix and leave it in the fridge so my husband can pat out a burger and quickly cook it on his lunch break. Enjoy:)

2 eggs
2 (16 ounce) packages firm tofu
2 stalks celery, minced
1 small onion, minced
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon red curry paste
1 tablespoon minced garlic
2 cups rolled oats
1 tablespoon vegetable oil

Steps:

  • Beat the eggs in a mixing bowl until smooth. Mix in the tofu, celery, onion, chili powder, cumin, curry paste, garlic, and oats with your hands until the tofu has broken into fine pieces, and the mixture is evenly blended. Form into 8 patties.
  • Heat the vegetable oil in a large, nonstick skillet over medium heat. Cook the patties until crispy and golden brown on each side, about 5 minutes per side.

TOFU BURGERS



Tofu Burgers image

This recipe uses tofu that has been frozen for 72 hours and then quickly defrosted. Onion, celery and cheese make these burgers delicious. This is a family favorite at the Silverwolfs' den. Serve in place of meat as a main entree or place on a bun along with your favorite toppings: lettuce, onion, tomato, mayo, etc. These burgers can also be baked in an oven preheated at 350 degrees for 30 minutes rather than frying.

1 (12 ounce) package firm tofu
2 teaspoons vegetable oil
1 small onion, chopped
1 celery, chopped
1 egg, beaten
¼ cup shredded Cheddar cheese
salt and pepper to taste
½ cup vegetable oil for frying

Steps:

  • Place tofu in freezer 72 hours ahead of time. To thaw, fill a large saucepan with water and bring to a simmer. Leave tofu in package and place in water for about 20 minutes.
  • While tofu is thawing, heat 2 teaspoons vegetable oil in a small skillet. Saute onion and celery until soft and lightly browned. Place in a medium bowl and set aside.
  • When tofu is thawed, squeeze out excess water. Chop tofu finely and place in bowl with onion and celery. Mix in egg, cheese, salt and pepper until thoroughly combined.
  • Heat a large skillet over medium-high heat and pour in 1/2 cup vegetable oil (oil should be 1/4 inch deep). Drop tofu mixture into pan in 6 equal portions. Flatten with a spatula to form patties. Fry for 5 to 7 minutes on each side, until golden.

A vegetarian recipe found in a borrowed library book "the ultimate book of vegan baking". Posting here to make later. Variations suggested were trying the following combinations; walnuts with rosemary or sage, cashews with cilantro or parsley, hazelnuts with parsley, thyme or sage. Serves 4. Serve with steamed veges or a sald with a tangy salsa or ketchup . Use gluten-free soy, Braggs Liquid Aminos or tamari sauce if following a gluten-free diet

1/2 cup brown rice (measured uncooked)
1 tablespoon vegetable oil
1 onion, finely chopped
1 garlic clove, crushed
200 g peanuts (1 3/4 cups)
250 g firm tofu, washed drained and crumbled (9oz)
1/4 cup cilantro, chopped (coriander)
1/4 cup parsley, chopped
2 tablespoons soy sauce or 2 tablespoons gluten-free soy sauce
2 tablespoons olive oil, for shallow frying

Steps:

  • Cook the rice according to the instructions on the packet, until tender. Drain the rice.
  • Heat the vegetable oil in a large, heavy frypan and cook off the onion and garlic over a low heat, stir occassionally, for about 5 minutes. The onion should be softened and golden.
  • Meanwhile, spread out the peanuts on a baking sheet and toast under a preheated grill (broiler) for a few minutes, until browned. Alternately, you can toast the peanuts using a dry pan on the stove top- keep them moving while heating.
  • Place the toasted peanuts, onion, garlic, rice, crumbled tofu, coriander and parsley (can use just 1/2 cup or either cilantro or parsley if wished) in a food processor. Add a little salt and pepper to seson if desired. Process until the mixture forms a thick paste. If it is too thick, add a little water.
  • Divide the mixture into eight equal portions and form each mound into a cutlet, flat square or burger shape.
  • Heat the olive oil on a large, heavy frypan.
  • Add the cutlets and cook for about 5-10 minutes on each side, until they turn golden brown and are heated through. THis step can be done in two batches if needed.
  • Drain the cutlets on kitchen paper. Can be kept warm in the oven if cooking in two or more batches.
  • Serve and enjoy.

A vegetarian "burger" made of chickpeas and marinated tofu! I love them, they taste great with a little mozzarella.

19 ounces chickpeas
16 ounces tofu, chopped and marinated overnight in soy sauce and grated ginger
2 green onions, chopped
1/2 cup dried parsley
1 egg
1/3 cup breadcrumbs
1 tablespoon cumin
1 tablespoon black pepper
1/2 tablespoon salt
olive oil

Steps:

  • Put all the ingredients into a bowl.
  • Using a large fork or spoon, mash the ingredients together. (Alternatively, a blender can be used.).
  • When it's mashed enough so you can mold the mix into patties without it falling apart, do so! I made patties about the size of my palm, but they can be any size you want.
  • Heat up a frying pan with some olive oil in it. You might need to add more or less depending on the size of the pan, and how many patties you've made.
  • Carefully place the patties into the pan. Heat them for about 3 minutes, or until they're brown on the bottom. Flip them over, and go for 3 minutes again.
  • When they're done, take them off carefully with a spatula! Serve them up with some mozzarella cheese on whole-wheat bread. I think they taste best after microwaved for 30 seconds.

I really think I nailed this finally after years of mediocre veggie burgers, My youngest son (although I wouldn't say he had refined taste buds) declared these as good as meat burgers and that's what he usually eats. Fairly firm, good texture, great taste. Freezing the tofu is the key. Please do let me know what you think if you try them

1 (420 g) package tofu, frozen for at least 3 days, thawed, squeezed dry and crumbled
1/2 cup onion, finely chopped
1/2 cup oats, finely ground or 1/2 cup oat bran
1/2 cup almonds or 1/2 cup walnuts, finely chopped
1/4 cup wheat germ
1/4 cup nutritional yeast
1 1/2 cups cooked beans (whatever kind you have, I used kidney beans)
1 tablespoon McCormick's Montreal Brand steak seasoning
1 tablespoon soy sauce
2 eggs
2 tablespoons oil
1/2 cup barbecue sauce

Steps:

  • Combine in food processor til well combined but not mushy.
  • Form into 8 patties.
  • Fry 5 mins per side until brown and crispy.
  • or bake 20-25 min @ 375.
  • I served mine with arugula, tomato, red onion and goat cheese. What an awesome combination.

  • Place the apple cider vinegar and 120 ml / ½ cup of water (use less water if you want the pickles to be sharper) in a small pan and bring to the boil. Place the finely sliced onions in a jar and pour hot pickling liquid over them. Store the leftovers in the fridge.
  • Cut the pressed tofu up into 4 or 8 (if you wanna have two pieces per burger) equal size pieces. The size will be different depending on the tofu you use, but you'll end up with 0.5 cm / 0.2" thick slices.
  • Heat up a griddle pan on a low heat. Brush it with a bit of oil (that's especially important if the pan isn't a non-stick one). Alternatively, you can also use the oven at 200° C / 390° F.
  • Place the tofu on the heated-up pan and leave it alone for about 5-10 minutes (depending on the heat and conductivity of your pan) on each side. If using the oven, bake it in the preheated oven for 10 minutes on each side.
