PEACHY FRESH FRUIT SALAD WITH A FLOURISH OF ANGELICA AND MINT!
This was the first thing I was taught to make at secondary school in Domestic Science! We were all taught to make basic lemon syrup for the fruit salad, a great classic and a standard recipe that I have never forgotten! However, here I have deviated a little and have taken advantage of some excellent local peach syrup instead of the homemade lemon syrup I usually make; and I have garnished the salad with mint and angelica from my herb garden. I have suggested certain fruits to use, but the beauty of a fresh fruit salad is that you can always rustle one up with whatever you have locally and to hand. Serve with fresh pouring cream for a real treat!

Steps:
- Cut the apples into bite sized pieces and the bananas into slices - then squeeze a little lemon juice on them.
- Add the grapes, melon chunks, segmented orange and blackcurrants.
- Pour the peach juice over the fruit and leave to stand for at least an hour before serving.
- Garnish with fresh mint leaves or sprigs and anglelica leaves. Serve with single pouring cream or yoghurt.

ELEANOR'S FRESH FRUIT SALAD
Until I met my Mother-In-Law, I always thought fruit salad came from a tin...imagine eh! This is very easy to make and so good. This can be made with canned pineapple, but if available use fresh. It makes the world of difference. For extra colour, you can add halved Bing cherries. Don't forget to try it on vanilla ice cream :) NOTE: Cooking time is chilling time.

Steps:
- Peel and core pineapple. Cut into chunks and put in a large bowl. Clear glass if possible.
- Cut the top and bottom off the oranges so that they will sit firmly on the cutting board. With a sharp knife, and following the contour of the orange, cut away the peel and remove all pith. Holding the naked orange over your bowl, use the knife to cut into each segment. You want only the flesh. This gets messy, so make sure all the juice drops into the bowl with the pineapple.
- Peel the bananas and cut into thick slices.
- Gently stir. You want the banana pieces to get covered with the juices to prevent them from turning brown.
- Chill for a few hours before serving.
- This is best used within 3 days -- if it lasts that long.

FRESH FRUIT SALAD
Summertime Heaven! This is so simple, the hard part is cutting up all the fresh fruit. Everyone loves this and I am often ask to bring the fruit salad. I buy whatever fruit looks good and is in season. The fruit ingredients and amounts are to your taste. I make the day before to avoid rushing and add bananas right before serving. You won't believe how good this is, and so beautiful. I never measure the honey, I just pour a little over and stir it in.

FRESH FRUIT SALAD
This is my slight variation of an old Southern Living recipe. I made it for the family Christmas dinner one year and everyone wanted more. The original calls for honeydew melon balls, but I had no honeydew on hand, so added an extra apple. I also diced the apples, cut the grapes in half and cut the orange sections into halves to make everything easier for the children to eat. The original called for 1 sliced apple. The preparation time does not include chilling time.
