COCONUT CRUNCH DELIGHT

Steps:
- In a large bowl, combine the first five ingredients; press lightly into a greased 13-in. x 9-in. baking dish. Bake at 350° for 25-30 minutes or until golden brown, stirring every 10 minutes to form coarse crumbs. Cool. , Divide crumb mixture in half; press half into the same baking pan. In a large bowl, whisk the milk, extract and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. , Fold in whipped topping; spoon over the crust. Top with remaining crumb mixture. Cover and refrigerate overnight. Garnish with fresh strawberries if desired.

PEACH-COCONUT PANNA COTTA
Pureed peaches add a lovely pale orange color and fresh flavor to these softly set panna cottas. The coconut flavor, from coconut water, is very mild and could be easily swapped with another lightly sweetened juice.

Steps:
- Sprinkle the gelatin over the milk; let bloom 5 minutes.
- Puree the peaches with the coconut water and lime juice in a blender until smooth. Strain through a fine-mesh sieve into a medium saucepan and cook over medium heat until slightly thickened, about 8 minutes. Add the milk-gelatin mixture, heavy cream and sugar and cook, stirring, until smooth. Let cool slightly.
- Divide among 6 to 8 ramekins. Refrigerate until set, at least 6 hours or overnight. Top with finely chopped peaches.

- Add milk and pudding mix; mix well.
- Fold in 1-1/2 cups of whipped topping.
- Place half of the cake cubes in a 4-quart glass bowl.
- Layer with half of the berries, coconut, and pudding mix.
- Cover with remaining cake cubes.
- Layer with the remaining berries, coconut, and pudding mixture.
- Spread remaining whipped topping over top.
- Garnish with additional berries and lightly brownish coconut if desired.

- Preheat oven to 325 degrees F.
- Spread peaches and juice in the bottom of a 13X9 inch baking dish that has been sprayed with oil.
- Sprinkle dry cake mix over peaches, evenly.
- Do not pack into the peaches.
- Pour melted butter over the cake mix.
- Mix the coconut and pecans together and spread evenly on top of butter cake mix.
- Bake 55-60 minutes.

SYLIVA'S PEACH DELIGHT
This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool. Is better if made a day ahead.

- Layer 1.
- Mix together first three ingredients and spread in 9'"x 12" baking dish. Bake at 375 for 15-20 minutes or until lightly browned. Cool completely.
- Layer 2.
- Mix together cream cheese , confectioners sugar and whipped topping well and spread on crust and refrigerate.
- Layer 3.
- Place peaches evenly over 2nd layer.
- Layer 4.
- Mix sugar, corn starch, and jello well. Stir in water and cook over medium heat until thick and clear. Cool completely. Pour over peaches and refrigerate.

CHERRY DELIGHT
This is my mom's recipe. It is a family requested recipe that she usually makes for Christmas. She's even added green food coloring to the cool whip to give it the festive look.

- Melt butter, pour into a 9 x 13 dish add graham cracker crumbs.
- Press in bottom of 9 x 13 forming a crust.
- Bake 350 degrees for 8 10 minutes.
- Let cool.
- Beat cream cheese and powdered sugar with a mixer until smooth and creamy.
- Pour on top of cooled cracker crust smooth out.
- Pour cans of cherries on top of the cream cheese mixture then top the cherries with cool whip.

Steps:
- Layer 1. Mix flour, butter, and 1/2 chopped pecans.Mix by hand or large spoon. Put into a long Prrex dish. Pat down with hands. Bake crust on 325 for 10-15 minutes or until crust is light brown on top. Let crust cool for 30 minutes.
- Layer 2. Mix soften cream cheese, about half of the Cool Whip, and sugar together and layer on crust and sprinkle with coconut.
- Layer 3. Prepare large box of instant vanilla pudding mix as directed on box. Spread on layer 2.
- Layer 4. Spread rest of the Cool Whip on top of layer 3. Sprinkle with the rest of the coconut and pecans. Refrigerate 4 hours or overnight.

PEACH DELIGHT CAKE
This is another of those recipes my mom and I found when cleaning out one of her kitchen closets. It was cut from a Betty Crocker cake mix box. If you like peaches you'll love this cake!

Steps:
- Preheat oven to 350 degrees. Grease and flour 2 8-inch or 9-inch round cake pans.
- Drain the peaches, reserving the syrup. Add enough water to the syrup to make 1 1/4 cups. In a large bowl, beat cake mix, syrup, oil and eggs until well combined.
- Pour batter into prepared pans. Bake at 350 degrees, 27 to 32 minutes for 8-inch pans or 23 to 28 minutes for 9-inch pans. Cool 10 minutes in pan, then remove to wire rack and cool completely.
- Cut peaches into bite-sized pieces. Mix yogurt and whipped topping, then fold in peaches. Place 1 layer of cake on serving plate; top with 1/2 of the whipped topping mix. Cover with the second cake layer and frost top with remaining whipped topping mix. Refrigerate about 2 hours before serving.
