1/4 pound (1 stick) unsalted butter, at room temperature
1 1/2 cups sugar, divided
2 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
3 large, ripe peaches, peeled, pitted, and sliced
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square baking pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined. In a small bowl, combine the remaining 1/2 cup sugar and the cinnamon.
  • Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top, and sprinkle with the remaining sugar mixture and the pecans.
  • Bake the cake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.

BALTIMORE PEACH CAKE

I've never been to Baltimore, so I can't comment on the current state of affairs, but what I can tell you is that this easy to make, yeast-based cake really is amazing. They say this recipe was brought to Baltimore by German immigrants, who apparently used to top it with caramelized onions. I don't know about onions, but any ripe, sweet fruit should work in this. Serve with ice cream if desired.

⅓ cup white sugar
1 package active dry yeast
1 ¼ cups warm milk (no hotter than 100 degrees F (38 degrees C))
¼ cup melted butter
1 large egg, beaten
1 ½ teaspoons kosher salt
3 cups all-purpose flour, or more as needed
3 tablespoons butter, divided
3 ½ ripe peaches
⅓ cup apricot preserves
2 tablespoons Demerara sugar

Steps:

  • Combine sugar and yeast in a bowl. Pour in milk, butter, and egg. Whisk together until sugar is dissolved. Stir in flour, a portion at a time, until mostly moistened, adding more if dough is too wet. Add salt and stir until a soft, slightly sticky dough comes together.
  • Cover dough with a damp towel and let rise in a warm spot until doubled in volume, about 1 1/2 hours.
  • Grease a 9x13-inch baking dish with 1/2 tablespoon butter. Split peaches in half along the seam and slice halves into quarters, then eighths.
  • Transfer dough into the buttered baking dish. Use a spatula to spread dough out to the corners of the dish. Cover with plastic wrap and let rise once more until roughly doubled in volume, 30 to 45 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Arrange peach slices onto the dough, pressing them in lightly. Drizzle remaining butter on top. Sprinkle Demerara sugar over peaches.
  • Bake in the preheated oven until a toothpick inserted into the cake, not through a peach, comes out clean, 40 to 45 minutes.
  • Heat apricot preserves up with a splash of water and brush glaze over the top of the cake. Let cool to room temperature before slicing.

One 15-ounce can sliced peaches in 100-percent juice, drained, patted dry with paper towels and coarsely chopped into 1/2-inch pieces

Steps:

  • For the cake: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 8-by-8-inch glass baking dish.
  • Whisk the flour, baking soda, salt, baking powder and cinnamon in a medium bowl until blended. Beat the sugar, oil, eggs and vanilla in a separate large bowl to blend. Gradually beat in the powdered sugar until light and creamy, adding extra water, 1 teaspoon at a time, if needed. Spread the frosting over the top of the cooled loaf. Allow the frosting to set for 25 minutes. Cut the loaf into slices and serve.

1 package yellow cake mix (regular size)
2 large egg yolks
2 cups sour cream
1 can (29 ounces) sliced peaches, drained

Steps:

  • In a large bowl, cut butter into cake mix until the mixture resembles coarse crumbs. Pat into a greased 13x9-in. baking pan. , In another bowl, beat egg yolks; add sour cream until smooth. Set aside 6-8 peach slices for garnish. Cut remaining peaches into 1-in. pieces; stir into the sour cream mixture. 1 can(s) crushed pineapple, do not drain 16 oz can
1 package(s) cool whip, 8 0z

Steps:

  • With a fork, do not use spoon, mix together the cake mix, pie filling, and eggs. Mix well. Add sour cream and mix well again. Pour into a 13x9 baking pan. Bake at 350 degrees for 30m minutes.
  • Cool cake completely.
  • Frosting
  • Mix together cream cheese, pudding mix, crushed pineapple with juice, mix well. Fold into the cool whip.
  • Spread on cool cake. Refrigerate until ready to serve.
  • NOTE: This is a very good cake and keeps well, but must be refrigerated.

4 apples, sliced (or use 6 peaches)
1 cup butter, softened
1 cup sugar (or use Splenda Blend)
4 eggs
2 cups flour, sifted
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup brown sugar (or use Splenda)
1/3 cup flour
1 tablespoon cinnamon
1/4 cup pecans, chopped (or use almonds or walnuts)
5 -7 tablespoons butter (only to moist the mixture)

Steps:

  • Wash, peel, core and slice apples (or peaches) into 16 thick slices.
  • Preheat oven to 375 degrees.
  • Spray some cooking oil in a 12 x 17 inch cookie sheet.
  • Cream sugar and butter; add eggs mixing well. Combine dry ingredients with creamy mixture mixing together and spread batter on cookie sheet.
  • Place sliced fruit close together forming 4 rows.
  • Combine streusel ingredients until crumbly and place on top of fresh fruit.
  • Bake 30 to 40 minutes until streusel is lighty brown and the cake is well cooked in the center.
  • NOTE: you can make this cake with berries or any other fruit you like, in substitution of apples and peaches, and also add only 1/2 cup sugar instead of 1 cup if you don't like it more sweet with the two sugars.
