3/4 cup all-purpose flour
1/2 cup firmly packed light brown sugar
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter
2 tablespoons unsalted butter
5 Granny Smith apples, peeled and sliced
Pinch of kosher salt
2 tablespoons brown sugar
2 tablespoons cornstarch
1 tablespoon vanilla
Juice of 1/2 lemon
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crumb topping: In a medium bowl, mix the flour, brown sugar, granulated sugar, cinnamon, nutmeg and salt using a fork or pastry cutter. Cut the butter into small pieces and gradually add it to the flour mixture until evenly mixed. Set aside.
  • For the apple filling: In an 8-inch cast-iron skillet, heat the butter over medium heat. Add the apple slices and a pinch of salt and cook for 3 minutes. Stir in the brown sugar, cornstarch, vanilla and lemon juice.
  • Cover the apple filling in the skillet evenly with the crumb topping. Cover with foil and bake for 15 minutes. Remove the foil and bake until crisp and brown on top, an additional 20 to 30 minutes.
  • Serve with vanilla ice cream.

2 ½ cups apples - peeled, cored, and sliced
1 cup sifted all-purpose flour
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
  • Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
  • Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

1/4 cup all-purpose flour
2 teaspoons ground cinnamon
2 large eggs
1 cup heavy whipping cream
1 teaspoon vanilla extract
1 cup graham cracker crumbs

1/4 cup butter, melted
Optional: Vanilla or cinnamon ice cream

Steps:

  • In a large bowl, combine the apples, sugar, flour and cinnamon. Spoon into a greased 3-qt. slow cooker. Whisk the eggs, cream and vanilla; pour over apple mixture. Combine the cracker crumbs, pecans and butter; sprinkle over top., Cover and cook on low for 4-5 hours or until apples are tender. Serve warm, with ice cream if desired.

5 apples, peeled, cored, and sliced into 1/4 inch slices
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/4 cup sugar
3/4 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup cold butter, cut into 8 pieces
1/2 cup old fasioned oats
3/4 cup walnuts, chopped
vanilla ice cream or whipped cream, for serving

Steps:

  • For the filling: Preheat oven to 350 degrees and grease a 2 1/2 quart casserole dish. In a medium mxing bowl mix together apple slices, lemon juice, cinnamon, and sugar, let sit for at least 5 minutes.
  • For the topping: In a small mixing bowl stir together flour, brown sugar, and cinnamon. Cut in butter until mixture forms small clumps. Stir in oats and nuts.
  • To assemble: Pour apples in prepared pan and top with topping, lightly press the topping on top of the apples.
  • Bake until topping is brown and the filling is bubbly, about 40 to 45 minutes. Serve warm with ice cream or whipped cream.

Steps:

  • Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
  • Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
  • If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
  • Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

Can the dessert not be the meal in its own right? I say YES and here's a recipe to prove it. There's nothing more comforting than the smell of apples and spices baking. This is a generous crisp - for 2-3 people to eat well and contentedly pat their well-fed bellies. Be sure to serve warm - not hot - with a scoop of a very good vanilla ice cream. You will be well-fed. Need no other sustenance. The apples will have comforted you and you can happily be on your way...

2 large granny smith apples, peeled, cored and thinly sliced
1/4 cup golden raisin
2 tablespoons brown sugar
1 tablespoon lemon juice
1 teaspoon flour
1/2 teaspoon lemon zest
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup desiccated coconut
1/4 cup brown sugar, packed

1 dash salt
2 tablespoons butter, and a little extra to butter the baking dish (es)
1/3 cup pecans, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C) and place rack in the center of the oven. Generously butter 2 individual gratin dishes or, if you want to make this as one crisp, a pie dish.
  • For Topping: Place all the ingredients, except pecans, in a food processor and process until the mixture is crumbly (looks like coarse meal) and there are no large pieces of butter visible. (This can also be done by rubbing with your fingertips.) Stir in the pecans. Set aside (I popped it in the fridge to keep the butter cold) while you prepare the filling.
  • For Filling: Gently combine the apples with the raisins, brown sugar, lemon juice, zest, flour, vanilla extract and spices. Transfer to your prepared baking dish(es) Scatter the topping evenly over the apples.
  • Bake for approximately 35-45 minutes (depending on how tender you like your apples) or until the topping is golden brown and the apples are fragrant and bubbling. Remove from oven and place on a wire rack to cool for about 30 minutes before serving.
  • Serve with a premium-grade vanilla ice cream.
