1 sheet refrigerated pie crust
FILLING:
6 medium peaches, peeled and sliced
6 medium black plums, sliced
1/2 cup all-purpose flour
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
2 tablespoons butter, softened
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°. Unroll crust onto a lightly floured surface; roll into a 12-in. circle. Transfer to a 9-in. deep-dish pie plate; trim and flute edge. Refrigerate while preparing filling., Toss peaches and plums with flour, sugar and spices; transfer to crust. Using a fork, mix topping ingredients until crumbly; sprinkle over fruit., Bake on a lower oven rack until golden brown and bubbly, 40-50 minutes. Cool on a wire rack.

1 pound short crust pastry, recipe follows
1 egg yolk
2 tablespoons water
6 purple plums, pitted and thinly sliced
1/3 cup brown sugar
1/2 teaspoon ground cardamom
1 cup all-purpose flour
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 cup unsalted butter, cold
3 cups all-purpose flour
1/4 teaspoon salt
4 ounces unsalted butter, cold
8 ounces shortening, cold
1/2 cup ice cold water

Steps:

  • Preheat the oven to 425 degrees F.
  • For the pastry: Roll the short crust pastry 1/4-inch thick and cut into 6 (6-inch) rounds.
  • Refrigerate the pastry rounds for at least 30 minutes. Cut 5 evenly spaced 1-inch slits around the edge of each pastry round (perpendicular to the edge).
  • Whisk together the egg yolk and water to make an egg wash. Brush the edge of the pastry with egg wash.
  • For the filling: Toss the plums with the brown sugar and cardamom. Pile an equal amount of plum mixture in the center of each pastry round. Fold the pastry around the plums, overlapping the pastry at the slits, and press firmly to seal. Place the galettes on a parchment paper lined baking sheet. Brush the outside of the pastry with egg wash.
  • For the streusel topping: Combine the flour, sugar and cinnamon together. Using your fingers, cut the butter into the flour mixture until it resembles cornmeal. Sprinkle the streusel on top of each galette.
  • Bake for 20 minutes. Reduce the oven temperature to 350 degrees F and bake for 20 minutes longer. Serve warm.
  • Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
  • With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.
  • Preparation Time: 10 minutes
  • Inactive Time: 30 minute

This recipes has lots of juicy fruit bedded on a beautiful yeast made bread, then topped with lots of nutty spiced crumbs that have a hint of candied ginger. Do use fresh peaches, plums whatever fruit you desire. I have an Abundance of fresh figs so that was my choice.

1/4 cup butter, softened
1/2 cup milk, room temperature
1 egg, slightly beaten room temerature
2 1/3 cups bread flour
4 tablespoons sugar
1 1/2 teaspoons bread machine yeast
3/4 cup flour
1/2 cup pecans
1 teaspoon cinnamon
1/3 cup brown sugar
1/2 teaspoon salt
1 tablespoon candied ginger, minced
6 tablespoons butter, cold and cut into pieces
10 fresh figs (whole figs sliced into 2 slices, 2-3 large plums and peaches sliced thick 8-10 slices pre fruit)

Steps:

  • Place the dough ingredients into bread machine according to your bread machine specifications. Set to dough cycle.
  • Butter a 10 inch springform pan.
  • Preheat oven to 375 degrees.
  • Lightly punch down dough on floured board. Roll out to fit the bottom of pan.
  • In a food processor place the topping ingredients except butter and pulse till nuts are chopped add the butter and pulse till it resembles coarse bread crumbs.
  • Arrange fruit on dough artfully.
  • Sprinkle the topping over fruit.
  • Cover with plastic wrap and place in a warm draft free place for 30 minutes.
  • Bake for 45 minutes.

6 peaches, peeled, pitted, sliced
2 red plums, halved, pitted, sliced
1 1/2-pint basket blackberries or 1 1/2 cups frozen, unthawed
2/3 cup plus 1 tablespoon sugar
3 tablespoons quick-cooking tapioca
3/4 cup plus 2 tablespoons all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon grated lemon peel
5 tablespoons chilled unsalted butter
6 tablespoons chilled whipping cream
3 tablespoons golden brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of ground cloves
Sweetened whipped cream

Steps:

  • Preheat oven to 400°F. Combine fruit, 2/3 cup sugar and tapioca in 8x8x2-inch glass baking dish and toss to blend. Bake until tender and bubbling thickly, about 50 minutes. Cool 10 minutes.
  • Meanwhile, mix 3/4 cup flour, baking powder, salt and 1 tablespoon sugar in medium bowl. Add lemon peel and 3 tablespoons butter; using fingertips, rub in until mixture resembles coarse meal. Add cream; stir until moist clumps form. Gather into ball. Using floured hands, pat out dough on floured surface to 6-inch square. Cut into 6 equal rectangles.
  • Mix brown sugar, spices and 2 tablespoons butter; using fingertips, rub in until topping mixture begins to clump together.
  • Place biscuits atop hot cobbler. Top with brown sugar mixture. Bake until biscuits are golden, about 25 minutes. Cool 30 minutes. Serve with cream.

The secret to this fruit crumble is to bake the sweet, cinnamon-scented topping separately, to dry it out. Then when you pile those crumbs over a mound of juicy summer fruit, they won't absorb as much liquid, and stay crisp and cookielike. You can make the crumbs a day ahead. But the crumble is best baked on the day you serve it, preferably while still a little warm and brimming with syrupy fruit. Make sure to taste your fruit before adding the sugar. Sweeter fruit like strawberries, cherries and blueberries need less sugar than tart plums and nectarines. A spoonful of whipped cream or ice cream makes this even better.

1 1/2 cups/190 grams all-purpose flour
1/2 cup/50 grams rolled oats
1/3 cup/75 grams light or dark brown sugar
1/3 cup/65 grams granulated sugar
1/4 teaspoon kosher salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom, ginger or allspice, or use lemon zest
1/2 cup/115 grams unsalted butter (1 stick), melted and cooled
2 to 5 tablespoon light brown sugar (or granulated sugar), depending on the sweetness of the fruit
2 tablespoons cornstarch
8 cups mixed berries (fresh or frozen), or cubed peaches, plums, nectarines, apricots, or pitted sweet cherries (or a combination)
Ice cream or whipped cream, for serving

Steps:

  • Heat oven to 350 degrees.
  • Make the topping: In a large bowl, whisk together flour, oats, sugars, salt and spices. Stir in butter. Using your hands, squish mixture until coarse crumbs form. Some should be about 1/2-inch in size, some smaller.
  • Spread topping in one layer onto a rimmed baking sheet. (You don't have to grease it first.) Bake until crumbs are solid when you gently poke them, and are fragrant, about 15 minutes. They won't change appearance very much. Transfer baking sheet to a wire rack to cool while you make the filling. (Crumbs can be baked up to 2 days ahead and stored in an airtight container at room temperature.)
  • Prepare the filling: In a large bowl, whisk together sugar and cornstarch until well combined. Add fruit and gently toss to coat with the sugar mixture. Pour filling into an ungreased 2-quart gratin dish or 10-inch cake pan, mounding the fruit in the center.
  • Spoon crumbs over filling and place the crumble dish on a rimmed baking sheet to catch any overflowing juices. (You can use the same baking sheet you cooked the crumbs on.) Bake until filling bubbles energetically around the edges, about 55 to 65 minutes. Let cool slightly. Serve warm or at room temperature with ice cream or whipped cream, if you like. Crumble can be made up to 8 hours ahead and kept at room temperature, or warmed up briefly in a 350-degree oven.
