SPICED PLUM & BLACKBERRY CRUMBLE



Spiced plum & blackberry crumble image

Showcase fruit in a piping hot, oat-topped crumble delicately flavoured with cinnamon and star anise

140g plain flour
140g butter , cut into small dice
85g soft brown sugar
50g porridge oat
custard , to serve
1kg ripe plum (about 14), halved and stoned
1 tbsp soft brown sugar
1 tbsp plain flour
2 star anise
1 tsp ground cinnamon
1 tsp vanilla extract
juice ½ lemon
300g blackberry

Steps:

  • First, make the crumble topping. Put the flour and butter in a food processor and pulse to the texture of wet sand. Tip into a bowl and add the sugar and oats. Sprinkle the mixture with 2 tbsp cold water, then use a fork to mix everything together, creating a crumbly texture with a few large clumps. Chill until needed.
  • Heat oven to 200C/180C fan/gas 6. Tip all the fruit ingredients, except the blackberries, into a large ovenproof dish. Add 50ml water, cover with foil and bake for 1 hr. Remove the foil and discard star anise. Add the blackberries to the dish, sprinkle over the crumble mixture and return to the oven for a further 25-30 mins until the top is golden. Serve hot with custard.

1 sheet refrigerated pie crust
FILLING:
6 medium peaches, peeled and sliced
6 medium black plums, sliced
1/2 cup all-purpose flour
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
2 tablespoons butter, softened
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°. Unroll crust onto a lightly floured surface; roll into a 12-in. circle. Transfer to a 9-in. deep-dish pie plate; trim and flute edge. Refrigerate while preparing filling., Toss peaches and plums with flour, sugar and spices; transfer to crust. Using a fork, mix topping ingredients until crumbly; sprinkle over fruit., Bake on a lower oven rack until golden brown and bubbly, 40-50 minutes. Cool on a wire rack.

6 peaches, peeled, pitted, sliced
2 red plums, halved, pitted, sliced
1 1/2-pint basket blackberries or 1 1/2 cups frozen, unthawed
2/3 cup plus 1 tablespoon sugar
3 tablespoons quick-cooking tapioca
3/4 cup plus 2 tablespoons all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon grated lemon peel
5 tablespoons chilled unsalted butter
6 tablespoons chilled whipping cream
3 tablespoons golden brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of ground cloves
Sweetened whipped cream

Steps:

  • Preheat oven to 400°F. Combine fruit, 2/3 cup sugar and tapioca in 8x8x2-inch glass baking dish and toss to blend. Bake until tender and bubbling thickly, about 50 minutes. Cool 10 minutes.
  • Meanwhile, mix 3/4 cup flour, baking powder, salt and 1 tablespoon sugar in medium bowl. Add lemon peel and 3 tablespoons butter; using fingertips, rub in until mixture resembles coarse meal. Add cream; stir until moist clumps form. Gather into ball. Using floured hands, pat out dough on floured surface to 6-inch square. Cut into 6 equal rectangles.
  • Mix brown sugar, spices and 2 tablespoons butter; using fingertips, rub in until topping mixture begins to clump together.
  • Place biscuits atop hot cobbler. Top with brown sugar mixture. Bake until biscuits are golden, about 25 minutes. Cool 30 minutes. Serve with cream.

3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • Heat oven to 375°. Place blackberries in large bowl. Sprinkle with cornstarch; toss until blackberries are coated. Carefully stir in peaches.
  • Place fruit in ungreased square baking dish, 8x8x2 inches. Mix remaining ingredients until crumbly; sprinkle over fruit.
  • Bake about 30 minutes or until topping is golden brown and fruit is tender.

8 tablespoons (1 stick) unsalted butter, chilled
1/3 cup sugar
1/4 teaspoon kosher salt
1 pound peaches, peeled, pitted, and quartered
1 pound plums, peeled, pitted, and quartered or sliced
2 cups (1 pint) blackberries
1/2 cup packed dark brown sugar
1 tablespoon unsalted butter, melted
Juice of 1 lemon
1/4 cup all-purpose flour
1 teaspoon freshly grated lemon zest
Pinch of kosher salt

Steps:

  • Make the crumble topping: In the work bowl of a food processor fitted with a metal blade, combine the flour, butter, sugar, and salt. Pulse until the mixture is the texture of bread crumbs; set aside.
  • Preheat the oven to 350°F.
  • Make the filling: Combine the peaches, plums, and blackberries in a mixing bowl.
  • Combine the brown sugar, butter, lemon juice, flour, lemon zest, and salt in another bowl. Gently mix the brown sugar mixture into the fruit mixture.
  • Pour the fruit into a 2-quart baking dish. Sprinkle it evenly with the crumble topping.
