Number Of Ingredients 5

2 oz Bourbon or Rye (I like Knob Creek Rye or Buffalo Trace Bourbon)
.5 oz Giffard Creme de Peche
.25 oz Demerara Simple Syrup (Regular simple syrup works fine as well)
2 dashes Angostura Bitters
2 dashes Orinoco Bitters (OPTIONAL)

Steps:

  • Combine all ingredients into mixing glass with handful of ice
  • Stir until well chilled (approx 40 stirs)
  • Strain into rocks glass into big cube
  • Garnish with orange peel or dehydrated peach if you want to get really pretentious.

1/2 cup (1 stick) unsalted butter
4 cups sliced peaches with juices
1 cup sugar
1 cup all-purpose flour
2 teaspoons baking powder
Pinch of salt
1 cup 2-percent or whole milk
1 teaspoon pure vanilla extract
Whipped cream or ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Place the butter in a large casserole dish or cast-iron skillet and place in the oven to melt, 5 to 7 minutes. If the peaches are not juicy and sweet, sprinkle them with some of the sugar and set aside.
  • Whisk together the flour, baking powder and salt in a medium bowl. Add the remaining sugar, the milk and vanilla extract; whisk until evenly blended.
  • Remove the dish from the oven and add the melted butter to the batter. Then, immediately pour the batter all at once back into the dish. Add the peaches and any juices into the center of the batter. Gently shake the dish to evenly distribute the peaches.
  • Return to the oven and bake until the top is golden brown and a cake tester poked into the batter comes out clean, about 30 minutes. Serve hot, warm or at room temperature with freshly whipped cream or ice cream.

This recipe has been in my family for 3 generations, and its absolutely delicious and sinful. It is a basic fruit cobbler, so the peaches can be substituted for blackberries, cherries, or anything else. (I forgot to include the 1/2 cup milk in my original post, thanks to the reviewers who spotted the mistake!)

1 cup self rising flour
1 cup sugar, plus
3/4 cup sugar
3 tablespoons melted butter, plus
1/2 cup milk
2 tablespoons unmelted butter
1 1/2 cups canned peaches (up to 2 1/2 cups is okay)

Steps:

  • Blend four, 1 cup sugar, 3 tbsp melted butter, and milk until smooth.
  • Pour into greased 1 1/2 quart baking dish.
  • Pour fruit on top of batter.
  • Sprinkle remaining sugar on top.
  • Dot with remaining butter.
  • Bake on 375 for 45 min or until golden brown on top.
  • NOTE: If using fresh fruit, boil fruit with 1/4 cup water and 1 tbsp sugar until water is reduced to a syrup.

6 cups sugar

Steps:

  • Slice, peel, ripe hard peaches (about 10 large).
  • Combine fruit and sugar; let stand about 12 to 18 hours (overnight is better) in a cool place.
  • Sterilize canning jars.
  • Bring fruit and sugar mixture slowly to bowling, stirring frequently. Boil gently until fruit become CLEAR and syrup thick, about 40 minutes.
  • As mixture thickens, stir frequently to prevent sticking.
  • Skim (if necessary).
  • Pour hot preserves into jars, leaving 1/4-inch head space.
  • Wipe jar rims and adjust lids.
  • Process 5 minutes in a boiling water bath.
  • Makes about 7 half-pints jars.

1 tsp tupelo honey
Splash bitters
Optional garnishes: peach slice, basil

Steps:

  • If making peach simple syrup, you can make this and set aside to cool ahead of time. It will need about 30 minutes to cool off after cooking.
  • If saving on time, pour bourbon into glass, squeeze in fresh peach juice, and stir in 1 tsp honey. Add a splash of bitters and stir.
  • Add optional garnishes like a slice of peach or a sprig of basil

1 (15 ounce) package pastry dough, for a 9 inch double crust pie
1 egg, beaten
5 cups sliced peeled peaches
2 tablespoons lemon juice
1/2 cup all-purpose flour
1 cup white sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons butter

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Line the bottom and sides of a 9 inch pie plate with one of the pie crusts. Brush with some of the beaten egg to keep the dough from becoming soggy later.
  • Place the sliced peaches in a large bowl, and sprinkle with lemon juice. Mix gently. In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt. Pour over the peaches, and mix gently. Pour into the pie crust, and dot with butter. Cover with the other pie crust, and fold the edges under. Flute the edges to seal or press the edges with the tines of a fork dipped in egg. Brush the remaining egg over the top crust. Cut several slits in the top crust to vent steam.
  • Bake for 10 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C) and bake for an additional 30 to 35 minutes, until the crust is brown and the juice begins to bubble through the vents. If the edges brown to fast, cover them with strips of aluminum foil about halfway through baking. Cool before serving. This tastes better warm than hot.

5 teaspoons cornstarch
5 cups sliced peaches (, canned, drained or fresh, peeled and pitted)
1/2 teaspoon cinnamon
4 cups fresh blueberries or 4 cups frozen blueberries
2 cups flour
1/4 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup chilled butter
1 cup milk

Steps:

  • Preheat oven to 350.
  • Combine first 7 ingredients in a large mixer bowl.
  • Blend at low speed til moistened.

Steps:

  • Place half of peaches into container of an electric blender; process until coarsely chopped.
  • Pour into a flat-bottomed kettle.
  • Repeat procedure with remaining peaches.

  • Cook over medium low heat, stirring frequently 30 minutes or until mixture thickens.
  • Quickly ladle butter into hot sterilized jars, leaving 1/4 inch headspace.

1 large egg yolk
1 cup all-purpose flour
1/4 cup cold unsalted butter, cut in small pieces, Plus

1/8 teaspoon salt
1 cup sugar
1/4 cup flour
3 lbs ripe peaches (about 9 medium or 7 large)
1 tablespoon lemon juice
1/2 cup pecans, coarsely chopped
1/4 cup packed light brown sugar
1/4 cup flour
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract

Steps:

  • To make crust in food processor: Stir water and yolk in a 1-cup measure or small bowl to blend.
  • Pulse flour and butter until coarse crumbs form. With motor running, add yolk mixture. Process just until dough leaves sides of bowl. Remove blade, then dough.
  • By hand: Mix water and yolk as above. Put flour in a medium bowl. Cut in butter with a pastry blender until mixture resembles coarse crumbs.
  • Add yolk mixture; stir with a fork until crumbs clump together to form a dough.
  • Gather dough into a ball, flatten into a disk, wrap and refrigerate 30 minutes, or until firm enough to roll out.
  • Filling:.
  • Mix sugar and flour in a large bowl. Add peaches and sprinkle with lemon juice; toss until evenly coated with sugar mixture.
  • Streusel:.
  • Put ingredients in a small bowl. Work with fingers or a fork to form coarse crumbs.
  • Heat oven to 375 degrees. Have ready a 9-inch pie plate and foil-lined baking sheet.
  • On a lightly floured surface with a lightly floured rolling pin, roll the dough into a 12-inch circle. Fit into pie plate.
  • Roll overhang of crust up over edges to form an even rim. Flute or crimp edge.
  • Spoon in filling, then sprinkle with streusel.
  • Place pie on lined baking sheet (to catch any drips).
  • Bake 45-50 minutes until pastry is golden-brown and peaches are tender when pierced. Remove to wire rack. Cool at least 1 hour before serving.
  • Tip: To peel peaches easily, immerse them in boiling water 20-30 seconds, then immediately plunge them into ice water to stop cooking. Peel off skin with your fingers or a small knife.
