This peach bar recipe is a bit like a peach crisp, but much easier to share at a summer potluck or picnic. And like a peach crisp, these bars get even better when you add a scoop of ice cream on top.

Number Of Ingredients 14

2.25 cup all-purpose flour
0.25 cup plus 2 tablespoons packed brown sugar
0.25 cup plus 2 tablespoons powdered sugar
0.25 teaspoon salt
1 cup plus 2 tablespoons cold butter, cut into pieces
1 cup granulated sugar
1 tablespoon plus 1 teaspoon cornstarch
6 large peaches, peeled and chopped (about 6 cups)
2 tablespoon lemon juice
1 cup all-purpose flour
0.667 cup packed brown sugar
0.667 cup cold butter, cut into pieces
0.667 cup chopped toasted hazelnuts
0.5 cup shredded coconut

Steps:

  • For crust: Preheat oven to 350°F. Line a 13x9-inch baking pan with foil, extending foil over edges; coat with nonstick cooking spray. In a bowl stir together flour, brown sugar, powdered sugar, and salt. Cut in butter until mixture resembles coarse crumbs; press into bottom of prepared pan. Bake 15 minutes.
  • For filling: In a medium saucepan combine granulated sugar and cornstarch. Stir in peaches and lemon juice. Cook over medium until thickened and bubbly, stirring occasionally. Spoon over partially baked crust.
  • For topping: Stir together flour and brown sugar. Cut in butter until mixture resembles coarse crumbs. Stir in nuts and coconut.
  • Crumble topping over filling. Bake 20 to 25 minutes or until golden brown and filling is bubbly. Let cool in pan 10 minutes. Using foil, lift from pan. Cut into squares. Makes 20 bars.

Finely ground pecans add nutty richness to the dough that doubles as the bottom crust and top crumble layer of these yummy bars. Cooking down fresh peaches for the filling concentrates their sweet floral flavor and adds more intensity than a jar of prepared jam.

2 sticks butter, cut-up and softened, plus more for the pan
4 peaches, peeled, pitted and chopped
1/4 cup water
1/4 cup golden syrup (such as Lyle's)
2 cups all-purpose flour
1 cup finely ground pecans
1 cup confectioners' sugar
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350˚ F. Line a 9-by-13-inch baking pan with foil and butter the foil.
  • Cook the peaches with the water and golden syrup in a saucepan until thick and jammy, mashing if needed, about 12 minutes.
  • Combine the flour, pecans, confectioners' sugar, baking powder and salt in a bowl. Work in the cut-up butter until moist clumps form.
  • Press two-thirds of the dough into the pan pan. Spread the peach mixture on top and sprinkle with the remaining dough. Bake at 350˚ F until browned, 40 to 45 minutes. Let cool completely in the pan, then lift out of the pan using the foil. Cut into bars.

This crazy simple recipe for peach squares is one of our favorite summer treats, and can be made with berries, plums, or whatever other fruit you like!

1 cup sugar
1 stick salted butter ((melted; 1 stick = 4 oz., or 110g, or 1/2 cup))
2 eggs ((at room temperature))
1 teaspoon vanilla extract
1 1/2 cups all purpose flour ((sifted))
3 medium peaches ((about 2 cups, peeled, pitted and cut into chunks))
1 cup walnut pieces
Powdered sugar ((for dusting, optional))

Steps:

  • Preheat oven to 350 degrees F/175 degrees C. Grease and flour a 9x13 inch pan.
  • In a large mixing bowl, add the sugar, melted butter, eggs, and vanilla. Whisk until well-combined.
  • Alternately fold in the sifted flour, peaches, and walnuts until well-combined. Pour into the prepared pan, and smooth out the batter so it's evenly distributed.
  • Bake 35-40 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  • Cool, slice, and serve. (Refrigerate for 30 minutes for easier slicing.) Dust with powdered sugar if desired.

1 ½ cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
1 pinch salt
10 tablespoons cold unsalted butter, cut into cubes
1 large egg yolk
1 tablespoon cold water
2 cups fresh peach slices, or more to taste
½ cup white sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat an 8x8-inch baking pan with cooking spray.
  • Whisk flour, sugar, baking powder, and salt together in a bowl. Next, cut in the cold butter using 2 forks or a pastry cutter then slowly mix in the egg yolk and cold water. Don't worry if the dough seems really crumbly; it should be!
  • Press 1/2 of the crumble mixture into the prepared pan to make the crust. Save the rest for the top of the bars.
  • Stir together peach slices, sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg until combined. Evenly add peach filling to the top of the crust.
  • Sprinkle the remaining crumble over the peach filling.
  • Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Cool bars to room temperature, then cut and serve.

250g pack unsalted butter
300g golden caster sugar
1 tsp vanilla extract
3 large eggs
200g self-raising flour
50g ground almonds
2 just-ripe peaches , stoned, halved, then each half cut into 3
100g raspberries
handful flaked almonds
1 tbsp icing sugar , to finish

Steps:

  • Butter and line a traybake or small roasting tin, about 20 x 30cm. Heat oven to 180C/160C fan/gas 4. Gently melt the butter in a large saucepan, cool for 5 mins, add the sugar, vanilla and eggs, then beat until smooth with a wooden spoon. Stir in the flour, almonds and ¼ tsp salt.
  • Tip the mix into the tin, then lay the peach slices evenly on top - that way each square of cake will have a bite of fruit. Scatter the raspberries and almonds over, then bake for 1 hr-1 hr 10 mins, covering with foil after 40 mins. Test with a skewer: the middle should have just a tiny hint of squidginess, which will firm up once the cake cools. Cool in the tin for 20 mins, then lift out onto a cooling rack. Once cold, dredge with icing sugar, then cut into squares.

4 eggs
2 cups granulated sugar
2 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk
1/4 cup butter, melted
1 teaspoon vanilla
3 cups powdered sugar
1/2 cup butter, softened
3 tablespoons milk
1 teaspoon vanilla
6 cups lightly salted peanuts, chopped

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray; line with cooking parchment paper, leaving a few inches of overhang on each side.
  • In large bowl, beat eggs with electric mixer on medium-high speed 1 minute. Slowly beat in granulated sugar, then beat 4 minutes longer. Eggs should be pale in color and fall in thick ribbons back into bowl.
  • In another bowl, mix flour, baking powder and salt. Add to egg mixture all at once; beat on low speed just until incorporated. In small bowl, beat together 1 cup milk, the melted butter and 1 teaspoon vanilla. Add to mixture in 2 additions. Pour batter in pan.
  • Bake 35 to 40 minutes or until cake is golden and center springs back when lightly pressed. Cool in pan 15 minutes, then use overhanging parchment to carefully lift cake out of pan, and transfer to rack to cool completely, about 1 hour.
  • Meanwhile, beat powdered sugar, softened butter, 3 tablespoons milk and 1 teaspoon vanilla to make smooth frosting. Spread chopped peanuts on small pan or plate.
  • Use serrated knife to cut cake into 24 squares (6 rows by 4 rows). Frost top and sides of each square with frosting, then roll in chopped peanuts, using hands if necessary to press peanuts into frosting.
  • Refrigerate 30 minutes to firm up. Serve cold, or remove from refrigerator 20 minutes before serving.
